Chicken-Fried Turkey Breast with Cranberry Mustard Dipping Sauce image

12 ounces frozen and thawed or fresh cranberries
1/2 to 3/4 cup granulated sugar, depending on preference
6 tablespoons Dijon mustard
Kosher salt
3/4 cup fine breadcrumbs
1/4 cup grated Parmesan
1/4 cup coarse ground yellow cornmeal
One 2-pound boneless, skinless turkey breast, cut into 8 cutlets
Coarsely ground black pepper
1 cup sour cream
3 tablespoons unrefined coconut oil, plus more if needed

Steps:

  • Add the cranberries and sugar to a medium saucepan set over medium heat and cook until the cranberries break down and the mixture reduces by two-thirds, 12 to 15 minutes. Stir in the mustard and remove from the heat. Using an immersion blender or blender, pulse until the mixture achieves a smooth consistency. Season with salt if needed.
  • Combine the breadcrumbs, cheese and cornmeal in a shallow dish. Sprinkle each cutlet with salt and pepper on both sides. Coat each cutlet with sour cream and press into the breadcrumb mixture. Place on a baking sheet fitted with a wire rack.
  • Heat the coconut oil in a cast-iron skillet set over medium heat. In batches, pan-fry the turkey cutlets until the first side is golden brown, about 3 to 4 minutes. Flip and cook until cooked through and golden brown, another 3 minutes. Add more oil as needed and repeat for the remaining batches. Serve with the cranberry mustard dipping sauce.

4 (6-ounce) bone-in pork loin chops
4 teaspoons Dijon mustard
1/4 cup Cranberry Mustard Sauce, recipe follows
Nonstick cooking spray
Salt and freshly ground black pepper
1 (12-ounce) package fresh or frozen cranberries, about 4 cups
1 cup water
1 cup sugar
1/2 cup chopped pecans
4 teaspoons Dijon mustard

Steps:

  • Arrange the pork chops in a single layer in a shallow dish. In a small bowl, add the mustard and cranberry sauce and stir to combine. Brush the mustard mixture evenly over both sides of the chops. Cover and refrigerate for 1 to 12 hours, turning occasionally.
  • Coat a large frying pan over medium heat with nonstick cooking spray. When the pan is hot add the chops. Partially cover and cook for 10 minutes. Uncover, turn the chops over and cook uncovered on the second side until the meat is cooked through but still juicy, 5 to 10 minutes longer. Season with salt and pepper, to taste, and transfer to a serving platter.

  • Wash and pick over the cranberries. In a medium saucepan over medium heat, add the water and the sugar. Bring to a boil, stirring until the sugar dissolves. Let cool completely at room temperature, then cover and refrigerate until ready to use. The sauce will thicken as it cools.

This is a copycat recipe for Hickory Farms Cranberry Mustard, which is difficult to find outside of the Christmas season. It is great on Summer Sausage, or spread on a carved turkey sandwich, or used as a glaze on a baked ham. Use it as a barbecue sauce for chicken, or a topping for broiled salmon. It even makes a great dip for chicken fingers! You can also can it in small jars to give as a gift. It's simple and delicious! I listed the brand names of the ingredients I used, but you can use your favorites.

6 tablespoons course mustard (Grey Poupon Harvest Stone Ground)

  • Add all three ingredients to a small saucepan. Stir constantly and simmer until sugar is dissolved, about 3-4 minutes. Be careful to keep stirring to avoid the sugar burning or caramelizing.

grapeseed oil, for frying

1 tablespoon brown sugar
fresh parsley, for garnish

Steps:

  • Combine sauce ingredients in a small mixing bowl, stirring until blended. Set aside.
  • Pound the chicken pieces to a uniform 1/2" thickness.

1 cup dry mustard (about 3 ounces)
2 tablespoons yellow mustard seeds
1 cup raspberry vinegar
1 cup fresh cranberries
3/4 cup sugar
2 large eggs
2 tablespoons fresh lemon juice
2 tablespoons honey
3/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Mix dry mustard and mustard seeds in medium bowl. Whisk in raspberry vinegar. Cover; let mixture stand overnight at room temperature.
  • Blend cranberries in processor until finely chopped. Whisk sugar and eggs in medium-size metal bowl to blend. Whisk in mustard mixture, cranberries, lemon juice, honey, salt, and pepper. Set bowl over saucepan of simmering water and cook until thick and thermometer registers 180°F, scraping down sides of bowl and whisking occasionally, about 45 minutes. Cool cranberry-mustard mixture to room temperature. Cover and chill at least 1 day. (Can be made 3 days ahead. Keep refrigerated.) Bring mustard to room temperature before serving.

1 (10-ounce) bag fresh or frozen cranberries
Kosher salt, freshly ground pepper

Steps:

  • Heat oil in a large saucepan over medium. Cook shallot and ginger, stirring occasionally, until shallot is translucent, about 3 minutes. Stir in cinnamon and cook, stirring often, until fragrant, about 1 minute. Mix in orange, figs, sugar, vinegar, mustard, and 1/2 cup water and bring to a simmer, stirring until sugar is dissolved. Add cranberries and increase heat to medium-high. Bring to a boil and cook, stirring occasionally, until cranberries burst and liquid is reduced to a light syrup, 12-18 minutes. Let cool slightly; season with salt and pepper.

3 tablespoons fresh lemon juice
1/4 cup Dijon mustard

1 medium onion, finely chopped
1 cup sliced celery
2 cloves garlic, minced
1/4 cup butter
2 cups cooked brown rice
1/4 cup dried cranberries
1/4 cup chopped dried apricot
1 teaspoon orange zest
1/2 teaspoon dried thyme
salt and pepper
1/4 cup apple juice
2 (12 ounce) pork tenderloin
2 tablespoons butter
1 clove garlic, minced
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
1 1/4 cups chicken broth
1/4 cup half-and-half
1/4 cup dried cranberries

Steps:

  • In a medium sauce pan, melt butter over medium heat.
  • Saute onion, celery, and garlic for 4 minutes or until tender; remove from heat.
  • Add in rice, cranberries, apricots, orange peel, thyme, salt, and pepper to taste; mix well.
  • Stir in apple juice to moisten; set stuffing aside.
  • Make a centered cut down the length of each pork tenderloin, cutting to but not through the other side of the meat.
  • Make one cut on each side of the centered cut, also going to but not through the other side of the meat.
  • Place each tenderloin between 2 pieces of plastic wrap (Saran).
  • Pound lightly with a meat mallet to make an appoximate 10x8 inch rectangle, pounding from the center to the corners.
  • Sprinkle each tenderloin with salt and pepper.
  • Spoon half of the stuffing mix over each tenderloin, coming to within 1 inch of the edges.
  • Roll each tenderloin jelly-roll style beginning with the short side.
  • Tie each meat roll with cotton string in about 4-5 equally spaced places (This is to secure the meat roll and keep it from unrolling).
  • Place roll seam side down on a rack in a shallow roasting pan.
  • Roast, uncovered at 375 degrees for 50-60 minutes or until done.
  • Loosely cover with foil and let stand for 5 minutes before slicing.
  • Prepare Mustard Cranberry Sauce: In a small saucepan, melt butter or medium heat.
  • Saute garlic for 1 minute.
  • Stir in flour and mustard; mix well.
  • Cook and stir until thickened and bubbly; cook and stir 1 minute more.
  • Stir in half and half and dried cranberries; cook until heated through.
  • Cut tenderloins into 1/2 inch thick slices; drizzle with Mustard Cranberry Sauce.

1 1/3 cups sugar
1/2 cup red wine vinegar
3 tablespoons olive oil
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1/2 teaspoon yellow mustard seeds
1 cup thinly sliced red onion
1 1 1/2-inch piece fresh ginger, peeled, cut into matchstick-size strips
1 tablespoon minced seeded serrano chile
3/4 cup water
1 pound fresh cranberries or frozen, thawed
1/2 cup dried cranberries
1/4 cup matchstick-size strips orange peel (orange part only)
Pinch of salt

Steps:

  • Bring sugar and vinegar to boil in heavy small saucepan, stirring until sugar dissolves. Remove from heat and set aside.
  • Heat oil in large saucepan over medium heat. Add cumin, fennel, and mustard seeds; stir until mustard seeds pop, about 1 minute. Add onion; cook until beginning to brown, stirring constantly, about 6 minutes. Add ginger and chile; stir until chile softens, about 2 minutes. Add vinegar mixture, 3/4 cup water, all cranberries, orange peel, and salt. Simmer until juices thicken, stirring often, about 20 minutes. Cool, cover, and chill. DO AHEAD: Can be made 3 days ahead. Keep chilled.
