  • In a large bowl, dissolve gelatin in water. Stir in pineapple and cranberry sauce. Refrigerate for 30 minutes. Stir in grapes and pecans. Pour into a 2-qt. serving bowl. Refrigerate until firm.

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

1 (6 ounce) package raspberry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped celery

1 teaspoon orange zest
1 (4 ounce) package cream cheese, softened
½ cup whipped topping

Steps:

  • Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.

1 cup boiling water
1/2 cup cold water

1 (15 ounce) can whole berry cranberry sauce
1/4 cup finely chopped walnuts
1 (8 ounce) package cream cheese
1/4 cup confectioners' sugar
2 tablespoons whipped cream
1/4 cup walnuts, chopped

Steps:

  • Spray a 4-cup gelatin mold or a 9-inch square pan with vegetable oil cooking spray.
  • In a medium glass mixing bowl, combine the raspberry gelatin and unflavored gelatin. Add 1 cup boiling water and stir with a metal spoon continuously for 2 minutes, until the gelatin is completely dissolved.
  • Stir in 1/2 cup cold water. Add the pineapple and juice, cranberry sauce, and walnuts. Stir with a metal spoon until all ingredients are completely incorporated.
  • Pour the mixture into the prepared mold, cover with plastic wrap and refrigerate until firm.

14 ice cubes
2 cups fresh or frozen cranberries
1 unpeeled seedless orange, cut into 1-inch pieces
Additional fresh cranberries, orange slices and mint sprigs, if desired
2/3 cup vanilla yogurt
1/3 cup reduced-fat sour cream

Steps:

  • Drain pineapple, reserving juice in 4-cup measuring cup; set pineapple aside. Add enough water to pineapple juice to measure 2 1/2 cups; pour into 1-quart saucepan. Heat to boiling.

  • Lightly brush 6 1/2-cup ring mold or 1 1/2-quart decorative bowl with vegetable oil.

1 (15 ounce) can crushed pineapple, drained (reserve juice)
1 cup water
1 (3 ounce) package orange Jell-O
1 (3 ounce) package cherry Jell-O
1 (16 ounce) can whole berry cranberry sauce
1 (6 ounce) can frozen orange juice concentrate
1 cup pecans, chopped

Steps:

  • Combine the reserved pineapple juice and 1 cup water in a small pan; bring to boil and remove from heat.
  • Pour into a large bowl and add jello mixes; stir until dissolved.
  • Add drained pineapple, cranberry sauce, orange juice concentrate, nuts and mix well.
  • Spray jello mold with cooking spray add jello mixture & chill.

2 packages (3 ounces each) peach or orange gelatin
4 cups water, divided
1 cup orange juice
2 cans (15 ounces each) sliced peaches, drained
1 package (6 ounces) cranberry or raspberry gelatin
1 cup cranberry juice
2 large oranges, peeled
2 cups fresh or frozen cranberries
1 cup sugar

Steps:

  • Place peach gelatin in a large bowl. Bring 2 cups of water to a boil; pour over gelatin. Stir until dissolved. Add orange juice and mix well. Chill until partially set. , Fold in peaches. Pour into a 3-qt. serving bowl. Chill until firm. Place cranberry gelatin in another bowl. Bring remaining water to a boil; pour over gelatin. Stir until dissolved. Add cranberry juice and mix well. , In a food processor, combine the oranges, cranberries and sugar; process until the fruit is coarsely chopped. Add to the cranberry gelatin. Carefully spoon over gelatin. Chill until set.

1 (8 ounce) can crushed pineapple with juice
2 (3 ounce) packages raspberry flavored Jell-O® mix
1 (8 ounce) package cream cheese, softened
2 tablespoons creamy salad dressing (such as Miracle Whip®)
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) can whole cranberry sauce
½ cup chopped walnuts
1 tart apple - peeled, cored and chopped

Steps:

  • Drain pineapple, reserving syrup. Add enough water to the juice to make 2 cups liquid. In a saucepan over medium heat, combine the liquid with the gelatin; stir until dissolved. Remove from heat, and chill until partially set.
  • Beat together the cream cheese and salad dressing; add to gelatin mixture and mix. Fold in whipped topping and mix well. Take out 1 1/2 cups of mixture, and reserve. To the remaining mixture add the pineapple, cranberries, nuts, and apples.
  • Pour gelatin and fruit mixture into a large dish or bowl, and top with reserved mixture. Refrigerate until chilled.
