CRANBERRY CREAM CHEESE BARS

Cranberry, cream cheese and chocolate chips create this easy bar.

Crust
1/2 cup Land O Lakes® Butter softened
1/2 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup uncooked quick-cooking oats
1 teaspoon freshly grated orange zest
1 cup mini semi-sweet chocolate chips
3/4 cup sweetened dried cranberries, chopped
Filling
4 ounces cream cheese, softened
1/2 cup sugar
1/3 cup Land O Lakes® Heavy Whipping Cream
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray 8-inch square baking pan with no-stick cooking spray; set aside.
  • Combine butter and brown sugar in bowl; beat at medium speed until creamy. Add flour, oats and orange zest; beat at low speed until mixture resembles coarse crumbs. Stir in chocolate chips and cranberries. Reserve 1 cup crumb mixture.
  • Firmly press remaining crumb mixture into bottom of prepared pan. Bake 10 minutes.
  • Combine cream cheese and sugar in bowl. Beat at medium speed until smooth. Add whipping cream and vanilla, beat until smooth.
  • Pour cream cheese mixture evenly over hot, partially baked crust. Sprinkle reserved crumb mixture gently over filling. Continue baking 27-30 minutes or until edges are light golden brown. Cool completely; cut into bars. Store refrigerated.

1/4 cup cranberry sauce
1/2 orange, zested and juiced
1/2 orange, zested and juiced
1/2 cup chopped pecans
Toasted bagels, for serving

  • Process the cream cheese, cranberry sauce, orange zest and juice until smooth, then pulse in your pecans. Spread on a bagel!

I got this from a neighbor while living in Germany and modified it a little. She was an American too. This was always a hit at every get-together we had! Fresh cranberries with jalapenos, sugar, green onions, and cilantro makes for great salsa. Add the cream cheese and you have a great dip! Serve with Ritz® crackers or Wheat Thins®.

1 (12 ounce) package fresh cranberries
1 ¼ cups white sugar
¼ cup chopped green onion
¼ cup chopped fresh cilantro
1 small jalapeno pepper, seeded and minced
2 tablespoons lemon juice
¼ teaspoon ground cumin
1 pinch salt
2 (8 ounce) packages cream cheese

Steps:

  • Chop cranberries in a food processor or by hand. Transfer to a bowl.
  • Add sugar, green onion, cilantro, jalapeno pepper, lemon juice, cumin, and salt to cranberries; mix well. Cover and store in the refrigerator until cranberries have lost some of their bitter taste, about 4 hours.
  • Place cream cheese bricks on a plate and pour cranberry mixture over top. Serve immediately.

2 c unbleached all-purpose flour
1/2 tsp baking soda
1/8 tsp ground himalayan sea salt
1 c (2 sticks) butter, softened
2 c rolled oats
1/2 c brown sugar, such as demerara
1/2 c chopped walnuts
1/4 c good quality maple syrup
1 pkg (8 oz.) light cream cheese, softened
1 can(s) (10 oz.) sweetened condensed milk
1/4 c freshly squeezed lemon juice
1 1/2 c cranberry sauce
1 1/2 Tbsp cornstarch

Steps:

  • 1. Preheat oven to 350ºF and grease a 13 x 9-inch baking dish; set aside.
  • 2. In a large bowl, blend together flour, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar, oats and walnuts (don't over mix). Pour maple syrup and gently stir to mix. Press half the crumb mixture over the bottom of the prepared dish to form bottom crust; set aside.
  • 3. In the bowl of a stand mixer, combine cream cheese, milk and lemon juice; process until smooth. Pour cream cheese mixture over crust. In a medium bowl, stir together *Citrus Cranberry Sauce and cornstarch. Spread cranberry mixture over cream cheese. Sprinkle the remaining oat mixture and lightly pat with palm of the hand to even out.
  • 4. Transfer into the preheated oven and bake for 35 to 40 minutes or until the center is set. Cool completely on a wire rack. Cover and transfer to the refrigerator for at least 3 to 4 hours before serving.

1/2 cup red raspberry preserves

3 large eggs
1/2 cup 2% milk
2 teaspoons pumpkin pie spice

  • Preheat oven to 350°. For topping, in a bowl, combine 3/4 cup cake mix, butter and water; stir in pecans. 4 oz (half of 8-oz package) cream cheese, softened
1/4 cup butter, margarine or spread, softened
1 tablespoon water
1 egg
1 cup sweetened dried cranberries

Steps:

  • Mix cream cheese and butter in bowl untl smooth. Open cookie mix; remove cinnamon sugar packet; set aside. Add water, egg and cookie mix to cream cheese mixture until soft dough forms. Stir in cranberries. Cover; refrigerate 30 minutes.
  • Drop dough by rounded teaspoonfuls into bowl with cinnamon sugar packet; roll to coat. Place 2 inches apart on ungreased cookie sheets.
