CRANBERRY NUT COOKIES / BROWNED BUTTER FROSTING

I made the cookies for my Cranberry loving Mom, for Valentines Day...thought with the beautiful colors, they'd be appropriate...needless to say, she was very pleased... Remember, Cranberries aren't just for Thanksgiving...I stock up on them, and freeze them, so I can enjoy them all year round... Enjoy! My photos

Number Of Ingredients 18

1/2 c butter, softened
1 c sugar
3/4 c packed, brown sugar
1 egg
1/3 - 1/2 c milk
1/2 tsp orange extract
1 Tbsp orange juice
3 c flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2 1/2 c chopped, frozen or fresh cranberries
1 c chopped, walnuts or pecans
FROSTING
1/3 c butter
2 c confectioners' sugar
1 1/2 tsp vanilla
2 - 4 Tbsp hot water

Steps:

  • 1. Preheat to 350 degree F. In a bowl, cream butter and sugars. Add milk, egg and orange juice; mix well.
  • 2. Add milk, extract, egg and orange juice; mix well. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture and mix well. ( Batter will be stiff.)
  • 3. Stir in cranberries and nuts. ( I mixed with fingers )
  • 4. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. ( my cranberries were froze, so I didn't cut mine up real well, and they still turned out well.) I actually used my fingers to place dough from bowl to pan. I just estimated 1 tablespoon, some were a bit bigger. There's no better tools than your fingers..lol!
  • 5. Bake for 12-15 minutes or until golden brown.
  • 6. Cool on wire racks.
  • 7. Frosting: Heat the butter in a saucepan over low heat until golden brown, about 5 minutes.
  • 8. Cool for 2 minutes; transfer to a small bowl. Add sugar and vanilla. Beat in water, 1 tablespoon at a time, until frosting reaches desired consistency.
  • 9. Frost cooled cookies. Enjoy!

2/3 cup macadamia nuts
1 tablespoon butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1 egg
1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/2 cup dried cranberries, chopped

Steps:

  • In food processor, process nuts and butter until smooth.
  • In large bowl, combine macadamia nuts, butter and sugars.
  • Beat in vanilla and egg.
  • Combine dry ingredients. Stir into sugar mixture. Mix in cranberries. Chill 10 minutes.
  • Roll dough into 1-inch balls. Dip into sugar and place on baking sheet covered with parchment paper.
  • Press each cookie with a fork. Dip fork in water and press cookie again to form crisscross pattern. Bake at 375º for 10 minutes.

1/2 cup butter, softened
1 cup sugar
3/4 cup packed brown sugar
1 large egg, room temperature
2 tablespoons orange juice
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 cup 2% milk
2-1/2 cups coarsely chopped fresh cranberries
1 cup white baking chips
1 cup chopped pecans or walnuts
GLAZE:
1/3 cup butter, cubed
2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
3 to 4 tablespoons water

Steps:

  • Preheat oven to 375°. In a large bowl, cream together butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and orange juice. In another bowl, whisk flour, baking powder, salt and baking soda; add to creamed mixture alternately with milk. Stir in cranberries, baking chips and pecans., Drop dough by level tablespoonfuls 1 in. apart onto greased baking sheets. Bake 10-12 minutes or until light brown. Remove from pans to wire racks to cool completely., For glaze, in a small heavy saucepan, melt butter over medium heat. Heat 5-7 minutes or until golden brown, stirring constantly. Remove from heat. Stir in confectioners' sugar, vanilla and enough water to reach a drizzling consistency. Drizzle over cookies. Let stand until set.

Number Of Ingredients 12

1 1/2 cups shortening (we use Benecol or another cholesterol-lowering option)
1 1/2 cups macadmia nut butter
2 cups packed brown sugar
3 eggs
2 tsp vanilla extract
3 cups oats
2 cups whole wheat flour
2 tsp baking soda
1 teaspoon cinnamon
1 tsp salt
1 cup dried cranberries
1 cup cashew pieces

Steps:

  • 1 Preheat oven to 350. 2 In a mixing bowl, cream the shortening with the macadamia butter. Add the brown sugar, eggs, and vanilla; mix well. 3 Combine oats, flour, baking soda, cinnamon, and salt; add to the creamed mixture and mix well. 4 Mix the cranberries and cashew pieces into the batter. 5 Drop by the rounded teaspoonfuls onto ungreased baking sheet. Flatten with fork. Bake for 10-12 minutes or until done.

7 oz butter (room temp.)
1 cup icing sugar
1 egg yolk
1 1/2 cup flour
1/2 tsp baking powder
1 tbsp powdered milk
dried cranberries & crushed walnuts to taste

Steps:

  • 1. Mix butter and icing sugar in a bowl 2. Add egg yolk 3. Add flour, powdered milk and baking powdered 4. Add cranberries and crushed walnuts 5. Roll the dough into a tube. The diameter of the tube should be cookie-sized. 6. Saran-wrap the dough and let sit in the freezer until hardened. 7. Slice dough into 1/4 inch sections 8. Bake cookies at 350F for approx. 20min or until a light brown colour.
