CRANBERRY BROWNIES

6 oz. dark chocolate (coarsely chopped)
½ cup (4 oz.) unsalted butter
¾ cup (5¼ oz.) granulated sugar
¼ cup (2 oz.) light brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 tablespoon cocoa powder
⅔ cup (2¾ oz.) all-purpose flour
¼ cup dried cranberries
1 cup chocolate covered cranberries (or substitute with chocolate chips)
1 cup fresh or frozen cranberries

Steps:

  • Preheat oven to 350ºF. Line with parchment and lightly grease an 8×8" baking pan.
  • In a medium bowl, whisk the flour, salt, and cocoa powder together.
  • Put the chocolate and butter in a large glass bowl and microwave for 30 seconds. Stir, and repeat until the chocolate and butter are completely melted and smooth. Add the sugars. Whisk until completely combined. The mixture should be room temperature.
  • Add 2 eggs to the chocolate mixture and whisk until combined. Add the vanilla and stir. Do not overbeat the batter at this stage or your brownies will be cakey.
  • Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. Fold in the dried cranberries, chocolate covered cranberries and fresh cranberries.
  • Bake in preheated oven for about 30 minutes or until a toothpick comes out with moist crumbs attached.
  • Cool brownies completely before cutting into 16 equal squares with a very sharp knife.
  • Brownies will keep in an airtight container at room temperature or in the refrigerator for up to 1 week, or in the freezer for up to 3 months.

3 c fresh cranberries ~ can also use frozen right out of the freezer
3/4 c sugar
2 medium eggs
1 c sugar
1 stick margarine (softened) or butter
1 c all-purpose flour
pinch salt
1/2 c walnuts

Steps:

  • 1. Put three cups cranberries in a round pie plate greased, and sprinkle with 3/4 cup sugar.
  • 2. Beat two eggs in a bowl and add one cup of sugar, one stick margarine melted, one cup of flour, pinch of salt and walnuts (if desired) and pour over cranberries.
  • 3. Bake at 300 degrees for 70 minutes or 325 degrees for 60 minutes.
  • 4. Add whipped topping when cool.

1 bag (12 oz) miniature semisweet chocolate chips (2 cups)
2/3 cup butter or margarine
1 1/2 cups granulated sugar
1 1/2 cups Gold Medal™ all-purpose flour
1/2 cup coarsely chopped nuts
1 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon salt
4 eggs
2 cups whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla
2/3 cup reserved miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with waxed paper or foil; grease with shortening. Reserve 1 cup of the chocolate chips for frosting and garnish.
  • In 3-quart saucepan, melt butter and remaining 1 cup chocolate chips over medium heat, stirring occasionally; remove from heat. Stir in granulated sugar, flour, nuts, baking powder, vanilla, salt and eggs. Spread evenly in pan.
  • Bake 18 to 23 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; turn upside down onto cooling rack. Carefully remove waxed paper. Cool brownie completely, about 1 hour.
  • In medium bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on high speed until stiff. Stir in 2/3 cup chocolate chips.
  • Cut brownie crosswise into 4 equal pieces, 10x3 3/4 inches. Trim off stiff edges of brownie if necessary. Place 1 piece on serving plate; spread about 3/4 cup frosting over top. Repeat twice. Top with remaining brownie piece. Frost sides and top with remaining frosting. Garnish with reserved 1/3 cup chocolate chips. Cover; refrigerate at least 2 hours until chilled but no longer than 48 hours. Store covered in refrigerator.

1 c flour
1/4 tsp salt
1/2 c walnuts

Steps:

  • 1. Preheat oven to 325 degrees
  • 2. Grease a round pie plate
  • 3. Pour cranberries into pie plate
  • 4. Sprinkle with 3/4 cup sugar
  • 5. Beat eggs in a bowl and add remaining one cup of sugar, melted butter, flour, salt and walnuts

Steps:

  • In a bowl, combine the cracker crumbs, pecans, 1/4 cup sugar and butter. Press onto the bottom and 1 in. up the sides of a 9-in. springform pan. , Bake at 375° for 8-10 minutes or until lightly browned. In a bowl, combine the cranberries, orange juice concentrate, vanilla, salt and remaining sugar. , In a bowl, beat cream until soft peaks form. Fold into the cranberry mixture. Pour into the crust. Freeze until firm. , For topping, combine sugar and cornstarch in a saucepan. Stir in cranberries and water until blended. Bring to a boil. Water, oil and eggs called for on brownie mix box (for cakelike brownies)

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil so foil extends about 2 inches over sides of pan. Spray foil with cooking spray.
  • Make brownies as directed on box for cakelike brownies in a 13x9-inch pan. Cool completely, about 1 1/2 hours. Remove from pan by lifting foil; peel foil away. Trim sides if desired. Cut brownie crosswise into thirds; place one piece on serving plate.

1/2 cup applesauce

Steps:

1 ½ cups graham cracker crumbs
½ cup chopped pecans
¼ cup white sugar
6 tablespoons butter, melted
2 cups fresh cranberries, ground
1 cup white sugar
2 pasteurized egg whites
1 tablespoon frozen orange juice concentrate, thawed
1 teaspoon vanilla extract
⅛ teaspoon salt
1 cup whipping cream
½ cup white sugar
1 tablespoon cornstarch
¾ cup fresh cranberries
⅔ cup water
1 orange, sliced, or as needed

Steps:

  • Combine graham cracker crumbs, pecans, sugar, and butter in a mixing bowl for crust. Press into the bottom and up the sides of an 8-inch springform pan. Chill.
  • Meanwhile, combine cranberries and sugar for filling in a large mixing bowl. Let stand for 5 minutes. Add egg whites, orange juice, vanilla extract, and salt. Beat using an electric mixer on low speed until frothy. Beat on high until stiff peaks form (when the tips stand straight), 6 to 8 minutes.
  • Whip cream in a small mixing bowl until soft peaks (or until the tips curl over); fold into cranberry mixture. Turn into crust and freeze until firm, 8 hours to overnight.
  • Stir sugar and cornstarch for glaze together in a saucepan. Stir in cranberries and water. Cook and stir over medium-low heat until bubbly, about 5 minutes. Continue to cook, stirring occasionally, just until cranberry skins pop, about 5 minutes. Let cool to room temperature, about 30 minutes; do not chill.

½ cup light corn syrup
1 cup semisweet chocolate chips
½ cup white sugar
3 eggs
1 teaspoon vanilla extract

1 cup chopped walnuts
½ cup semisweet chocolate chips
2 tablespoons butter
1 tablespoon light corn syrup
1 teaspoon vanilla extract
2 cups sliced fresh strawberries

Steps:

  • Butter and flour a 9 inch round cake pan.
  • In a pan over low heat, melt 1/2 cup butter and 1/2 cup light corn syrup.
  • Stir in 1 cup chocolate chips until melted.
  • Remove from heat and add sugar and eggs, and stir until blended.
  • Stir in 1 teaspoon vanilla , flour, and nuts.
  • Pour into pan. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until center springs back when touched.
  • Cool in pan 10 minutes. Then place on a cooling rack.
  • To Make Glaze: Combine chocolate chips, 2 tablespoons butter or margarine and corn syrup in pan. Stir over low heat till chocolate chips are melted. Remove from heat. Stir in vanilla.
  • Frost tops and sides of torte. Chill until set. Garnish with sliced strawberries.

2/3 cup butter, cubed
4 large eggs, room temperature
1-1/2 cups sugar

FROSTING:
2 cups heavy whipping cream
1/4 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips
Additional miniature semisweet chocolate chips, optional

Steps:

  • Preheat oven to 350°. Line a 15x10x1-in. baking pan with parchment., In a microwave, melt chocolate chips and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in chocolate mixture. In another bowl, mix flour, baking powder and salt; gradually add to chocolate mixture, mixing well. Fold in walnuts., Transfer to prepared pan. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes (do not overbake). Cool 10 minutes. Invert onto a flat surface dusted with confectioners' sugar. Gently peel off paper. Cool completely., In a bowl, beat cream, confectioners' sugar and vanilla until stiff peaks form. Fold in chocolate chips. Trim cake edges; cut crosswise into fourths. Place 1 layer on a serving plate; top with 3/4 cup frosting. Repeat twice. Top with remaining layer. Frost top, sides and ends of cake. If desired, sprinkle with additional chocolate chips. Store in the refrigerator.
