DRIED BLUEBERRY, CRANBERRY OR APRICOT BANANA NUT BREAD



Dried Blueberry, Cranberry or Apricot Banana Nut Bread image

This recipe was found in Better Homes and Gardens Cook Book. I've used it for years, adjusting it to my specific tastes. I use either dried blueberries, or cranberries. I have only once used dried apricots, diced. It's fabulous either way, any way.

2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 large eggs
5 medium bananas, mashed
1 cup sugar
1/2 cup butter, melted
1/2 cup walnuts or 1/2 cup pecans, chopped
1/2 cup dried blueberries, dreid cranberries or 1/2 cup dried apricot, cut into fours

Steps:

  • preheat oven to 350degrees.
  • grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
  • combine flour, baking powder, baking soda, cinnamon and nutmeg.
  • in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
  • fold in nuts of your choice.
  • spoon batter into prepared pans.
  • bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
  • cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

This one came from an old school cook book. Really good bread. Great for bake sales and gifts. You can add Cool Whip for a dessert, or slice it for a really interesting sandwich.

Number Of Ingredients 11

4 cups flour
2 teaspoons baking soda
2 teaspoons salt
3 cups sugar
2 eggs
2/3 cup orange juice
4 tablespoons vinegar
1/2 cup oil
1 1/2 cups mashed bananas
2 1/2 cups cranberries
2 cups nuts (your choice)

Steps:

  • In a bowl, sift the first 4 ingredients; set aside.
  • Mix the next 4 ingredients together in another bowl.
  • Fold flour mixture with orange juice mixture, then stir in bananas, cranberries and nuts.
  • Pour into 2 lightly greased loaf pans.
  • Bake at 350° for 45 minutes to 1 hour, or until a toothpick inserted comes out clean.
  • *Note: I haven't made this bread in quite awhile and for some reason my recipe doesn't have the bake time written down, so I'm going by the bake time on a banana bread and a cranberry bread.
  • I suggest checking at 30 minutes to be on the safe side.

1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1 cup banana (about 3 small, mashed ripe)
1 teaspoon lemon juice
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk
1 1/2 cups cranberries (fresh or frozen, coarsely chopped)
1/2 cup nuts (pecans are good)

Steps:

  • Line a 9 x 5-inch loaf pan with parchment paper or grease; set aside.
  • In a large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, heating well after each. Beat in bananas, vanilla and lemon juice.
  • In a separate bowl, whisk together flour, baking powder, baking soda and salt. Sitr into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Fold in cranberries and nuts. Scrape into prepared pan, smoothing top.
  • Bake in centre of 350°F oven until cake tester inserted in centre comes out clean, about 1 ¼ hours. Let cool in pan on rack for 5 minutes, Remove from pan and peel off paper; let cool completely. Wrap in plastic wrap; store at room temperature for 24 hours before slicing. (It will be crumbly if you try to cut it before this.).

1/3 cup shortening
2/3 cup sugar
2 eggs
1 3/4 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup coarsely chopped walnuts
1 cup mashed ripe bananas
1 cup well drained fresh cooked cranberry sauce

Steps:

  • Cook cranberries to directions on package; cool. Mash bananas. Cream shortening with sugar; add eggs (one at a time, beating after each addition). Sift dry ingredients together; add nuts; add flour mixture alternately with mashed bananas to creamed mixture, beating well after each addition. Carefully fold in cranberries. Don't stir too much as they will go into the mixture and make it turn red. Pour into greased 8 1/2 x 4 1/2 x 2 1/2" loaf pan. Bake in moderate oven 350 F 60 to 65 min. or until done. Cool before slicing. This can be frozen.
