I start making these in November and don't stop till Spring! They are a great addition to a Christmas brunch or egg casserole and the aroma while they bake is heavenly!

Number Of Ingredients 10

1 cup unsweetened applesauce
⅓ cup vegetable oil
1 eggs, beaten
2 cups all-purpose flour
½ cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup fresh or frozen cranberries, chopped
½ cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
  • In a small bowl, mix together applesauce, oil and egg. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin cups, 2/3 full.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

1 1/4 cups whole wheat flour
1 1/4 cups oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup unsweetened applesauce
1/2 cup low-fat buttermilk
1/2 cup brown sugar
2 tablespoons canola oil
1 large egg
3/4 cup dried cranberries
1/2 cup cranberry sauce

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries.
  • Stir until just moist.
  • Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup.
  • Bake for 16-18 minutes.

1 cup unsweetened applesauce
⅓ cup canola oil
¼ cup orange juice
1 large egg, slightly beaten
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
½ cup regular oats, uncooked
½ cup dark brown sugar
¼ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 ¼ cups chopped fresh cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine applesauce, oil, orange juice, egg, and vanilla extract in a large bowl; mix well.
  • Combine whole wheat flour, all-purpose flour, oats, brown sugar, white sugar, cinnamon, baking soda, and salt in another bowl. Add dry mix to wet mix, stirring just until moistened. Gently fold in cranberries; do not overmix. Divide batter evenly between the prepared muffin cups.

Wow, that name is a mouthful How about "crananasauce muffins"? These turned out moist and delicious. I do not need to eat GF, but I make it for friends. Non the less, I loved these too. They could be made dairy free with a coconut oil substitute for the butter.

4 tablespoon(s) butter, melted
1/3 cup(s) sugar
1/2 cup(s) applesauce, unsweetened
1 - banana, overripe and slightly mashed
1 - egg
1 tablespoon(s) cinnamon or pumpkin pie seasoning
1 teaspoon(s) vanilla
3/4 cup(s) gluten free baking mix
1/8 teaspoon(s) xanthum gum
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt
1/3 cup(s) dried cranberries
- cinnamon sugar for topping

Steps:

  • Preheat the oven to 375. In a mixing bowl put the melted butter, sugar, egg, vanilla, smashed banana and applesauce. Whisk this together.
  • In another bowl whisk the GF baking mix, cinnamon, baking powder, salt and xanthum gum.
  • Mix the wet ingredients with the dry. Stir gently until mixed. It too runny, add a little more baking mix. Then add the Cranberries. I just added a big handful. Gently stir in.
  • Spoon into prepared muffin pans. Sprinkle tops with the cinnamon sugar. Bake for about 12 minutes or until toothpick comes out with crumbs, not batter. Let cool slightly before moving. Do not cover until totally cool. GF items do not seem, in my experience, to like steam.

1 teaspoon ground cinnamon

1/3 cup vegetable oil

1 cup fresh or frozen cranberries, chopped into smaller pieces
1/2 cup pecans chopped

Steps:

  • Preheat oven to 350F and lightly grease the muffin tin. In a large bowl mix together the flour, sugar, baking soda, salt and cinnamon. In a separate bowl mix the eggs, applesauce and oil. Add the applesauce mixture to the dry ingredients and mix together gently (do not over mix). Gently fold in the cranberries and scoop mixture into muffin cups until 2/3 full. Bake for approximately 30 minutes. Cool for 5 minutes before removing from pan.
