I always look forward to apple season so I can make this delicious, moist cake. The addition of dried cranberries makes it perfect for fall holidays. The salted caramel glaze is the crowning touch!

3 cups all-purpose flour
2 cups white sugar
1 ½ cups vegetable oil
3 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
2 ½ cups diced apples
1 cup chopped pecans
¾ cup dried cranberries
1 cup light brown sugar
½ cup butter
¼ cup milk
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a tube pan.
  • Place flour, white sugar, oil, eggs, vanilla extract, baking soda, and salt in a mixing bowl. Beat using an electric mixer until smooth. Stir in apple, pecans, and cranberries until well blended. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Remove from the oven and set aside.
  • Combine brown sugar, butter, and milk in a small saucepan. Bring mixture to a rolling boil over high heat; continue to boil, stirring occasionally, for 5 minutes. Remove from heat. Stir in vanilla extract and salt.
  • Pour glaze over the hot cake. Let cake sit in the pan to cool and for glaze to set, about 2 hours.
  • Remove cake from the pan. Place onto a plate, top-up; the glaze may puddle around the bottom edge of the cake. Serve when completely cool.

1/2 cup evaporated cane juice or sugar
4 tablespoons fat-free cream cheese
4 tablespoons canola oil
4 large egg whites
1/2 cup nonfat plain yogurt
2 teaspoons vanilla extract
1 1/4 cups (6 packets) instant oatmeal
3/4 cups whole wheat flour
3 teaspoons baking powder
1 cup apples diced into small cubes
1/2 dried cranberries or raisins
Glaze:
1 cup powdered sugar
1 to 2 tablespoons nonfat milk
1/2 teaspoon vanilla extract
1/2 teaspoon maple extract or 1/2 tablespoon maple syrup

Steps:

  • 1. preheat oven to 350 degrees. Spray cookie sheet with nonstick vegetable spray or line with parchment paper. 2. Cream cane juice or sugar, cream cheese and oil until smooth. 3. Beat in egg whites and mix in yogurt and vanilla. 4. In another bowl, mix together oatmeal, flour and baking powder. Add diced apples and cranberries to dry mixture. 5. Gently fold dry and wet ingredients together (if mix is too dry, add 1 to 2 tablespoons nonfat milk) 6. Place spoonfuls of dough onto prepared sheet, leaving room between scones. 7. Bake 20 to 25 minutes (only until bottoms of scones turn slightly golden. 8. To make glaze, cream all ingredients together untilsmooth. 9. Spread glaze over warm scones.

1 1/2 cups apple cider
1 1/2 cups water
3 1/2 tablespoons kosher salt
1 tablespoon sugar
1 tablespoon cracked black pepper
1/2 tablespoon dried thyme
1/2 teaspoon dried minced garlic
6 dried allspice berries
1/2 bay leaf
6 bone-in pork chops or boneless loin chops (1 inch thick)
Glaze
1/2 cup pure maple syrup
1/2 cup cranberry sauce
1/2 cup applesauce
2 tablespoons spicy brown mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/16 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the brine ingredients and stir well. Place the chops in a resealable plastic bag and pour in the brine. Refrigerate for 12 to 24 hours, turning once.
  • Combine the glaze ingredients in a medium saucepan and mix well. Heat the glaze over medium heat, just until warm. Remove from the heat and reserve 1/2 cup of glaze for serving.
  • Build a charcoal and/or wood fire for direct grilling. Grill the chops directly over the hot coals (approximately 450°F) for 8 minutes on each side, or until the internal temperature is 150°F. During the last 3 minutes of cooking, baste both sides of the chops with the glaze. Drizzle the reserved glaze over the chops or pass separately at the table.

3/4 cup packed light brown sugar
1/4 cup coriander seeds, cracked
3 star anise pods
1 teaspoon white peppercorns
1 3-inch unpeeled piece ginger, thinly sliced
3 cloves garlic, smashed
1 12-pound turkey, butterflied (ask your butcher to do this)
2 teaspoons ground coriander
3 cups apple cider
1 2-inch piece ginger, thinly sliced
1 cup fresh or frozen cranberries
1 to 3 dried red chile peppers
1/2 cup molasses
1/2 cup apple cider vinegar
Kosher salt
2 to 4 tablespoons cold unsalted butter, diced

Steps:

  • Prepare the turkey a day or two before roasting: Bring 3 quarts water, the salt, brown sugar, coriander seeds, star anise, peppercorns, ginger and garlic to a boil in a large saucepan over medium-high heat, stirring to dissolve the salt and sugar. Remove from the heat and add 4 cups cold water; cool to room temperature. Place the turkey in a large container, pour the brine over it, cover and refrigerate at least 6 hours or overnight. Remove the turkey, dry it well and pat all over with the ground coriander. Let dry in the refrigerator at least 4 hours or overnight.
  • Make the glaze: Bring the cider, ginger, cranberries, chiles, molasses and vinegar to a boil in a saucepan over medium-high heat. Reduce to a simmer and cook until thick, whisking occasionally, about 30 minutes. Strain the glaze and season with salt.
  • Preheat the oven to 375º. Place the turkey breast-side up on a rack in a roasting pan and roast 1 hour 10 minutes, or until a thermometer inserted into the thigh registers 155º to 160º. Continue roasting, brushing with the glaze every 10 minutes, until brown and crisp, about 30 more minutes. Transfer to a cutting board and let rest 15 minutes before carving. Alternatively, grill the turkey: Preheat a grill to medium on one side. Place the turkey breast-side up on the cooler side of the grill (position a drip pan under the grate), cover and cook until 165º, about 1 hour 20 minutes. Brush with the glaze and grill, uncovered, 10 more minutes.
  • Heat the remaining glaze with any pan drippings in a saucepan over medium heat and whisk in the butter. Carve the turkey and serve with the extra glaze.

2 cups all-purpose flour
½ cup white sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
6 tablespoons cold unsalted butter, cubed
⅓ cup sweetened dried cranberries, chopped
⅓ cup miniature semisweet chocolate chips
½ cup buttermilk
1 large egg
1 tablespoon buttermilk
1 tablespoon white sugar
2 tablespoons apple jelly

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Whisk flour, 1/2 cup sugar, baking powder, baking soda, and salt together in a large bowl. Cut in butter with a pastry cutter or 2 knives until the mixture resembles coarse crumbs. Stir in cranberries and chocolate chips just until coated with flour.
  • Stir 1/2 cup buttermilk and egg together in a small bowl. Add to the flour mixture and stir just until flour is absorbed; don't overmix.
  • Turn dough out onto a lightly floured board. Dust your hands with flour and knead about 8 times. Pat into an 8-inch diameter circle. Brush with remaining buttermilk and sprinkle with remaining sugar. Cut into 8 wedges and transfer to the prepared baking sheet, spacing scones about 2 inches apart.
  • Bake in the preheated oven until light brown on top, 20 to 22 minutes.
  • While the scones are baking, heat apple jelly in the microwave in 30-second increments until warm.
  • Remove scones from the oven and immediately brush tops with warmed apple jelly. Cool on the baking sheet for 5 minutes, then transfer to a rack for further cooling.

Brine * 1 1/2 c Apple Cider * 1 1/2 c Water * 3 1/2 T Sea Salt or Kosher Salt * 1 T Sugar * 1 T fresh cracked Black Pepper * 1 T fresh Thyme, minced * 2 cloves Garlic, crushed * 1/2 Bay Leaf * 6 Bone-In Pork Chops or Boneless Loin Chops - (1" thick)

Steps:

  • In a large bowl, combine all of the brine ingredients and stir until the sugar and salt are dissolved. Add in chops, settling them in so they are all covered, then cover bowl with plastic wrap, or combine brine and chops in a resealable plastic bag. Place in fridge for 12-24 hours tossing chops once or twice.
  • In a medium sauce pan, combine all glaze ingredients and gently heat until medium warm. Remove from heat, and set aside 1/2 c of the glaze for final serving.
  • Heat your grill for direct heat. Remove chops from brine, and grill about for about 8 minutes on each side, liberally basting glaze on both sides during the last 3 minutes of cooking. Add the reserved glaze on the finished chops or serve in a bowl for people to use individually.

  • For the apple-cranberry glaze - In a small saucepan, heat the vinegar and sugar over medium heat until the mixture boils and the sugar dissolves. Add the apple preserves or jam, whisk in the dried cranberries and bring it to a boil. Remove from heat. Season with salt and pepper to taste.
  • For the chicken - Preheat the grill to medium-high. Sprinkle the chicken with salt and pepper and drizzle with olive oil. I found this recipe in a library cookbook several years ago when I made a big Thanksgiving feast for my family. I hate cranberry sauce but I love this. It was a big hit with my family too. And now they request that I make the Turkey. I've also used this on chicken and ham. Both came out delicious.

1/4 c apple jelly
1/4 c light corn syrup

Steps:

  • 1. Mix all ingredients in a 1 quart saucepan.
  • 2. Cook over medium heat about 5 minutes stirring occasionally until melted and smooth.
  • 3. Brush or spoon over meat making sure to get all parts. Repeat several times during cooking.
  • 4. Bonus Tip: To make yur meat moist and delicious... 1. Stab deep holes in the meat in various places including the legs and wings. 2. With a syringe or spoon fill the holes with Cranberry Apple Juice. This only needs to be done once.
