Steps:
- Gather the ingredients.
- Grease a 2 1/2- to 3-quart baking dish . Preheat oven to 375 F.
- Toss sliced apples with cranberries and lemon juice.
- In a bowl, combine the 3/4 cup granulated sugar, 1/2 cup brown sugar, 3 tablespoons all-purpose flour , 1 teaspoon cinnamon, and 1/2 teaspoon salt; add to the apple mixture and toss to coat. Mix in the apple juice and vanilla.
- Arrange the apple mixture in the prepared baking dish. Dot with the soft butter.
- To make the topping, in a mixing bowl, combine 3/4 cup flour, 1/2 cup sugar, 1 scant teaspoon baking powder, and 1/4 teaspoon salt.
- In a separate small bowl, whisk the egg with cream and melted butter; stir into the dry ingredients and beat until smooth.
- Using a tablespoon, drop spoonfuls of the batter evenly over the fruit mixture. The batter will spread as the cobbler bakes.
- Bake for 40 to 50 minutes, until fruit is tender and topping is nicely browned.
- Serve and enjoy!

APPLE-CRANBERRY CRUMBLE
Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

- 1. Wash the apples, halve, and remove the cores and stems.
- 2. Chop the apples (do not remove the skin) into large chunks, approximatley 1/2" to 3/4" in size.
- 3. Place apples, cinnamon, and water in medium size sauce pan and cook on medium low heat for approximately 20 minutes or until fork tender. Do NOT put a lid on the pan as it will make the apples mushy.
- 4. Remove apples from heat. Gently stir in canned whole berry cranberries.
- 5. Apples can be served immediately while hot or chilled and served up to two weeks later. (The dish can be reheated as desired.) Enjoy!!
EASY CRANBERRY AND APPLE CAKE
Steps:
- Preheat the oven to 325 degrees F.
- Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.
- Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges. Serve warm or at room temperature.
CRANBERRY APPLE BREAD
This bread is a holiday favorite in our family. It's very festive and is a wonderful breakfast bread for Thanksgiving and Christmas morning. - Layer the apples in a 9x13 pan.
- Mash the cranberry sauce and layer on top of the apples.
