CRANBERRY HORSERADISH SAUCE
This zippy sauce is pretty as well as tasty. It will go well with a Christmas turkey or prime rib dinner. It even goes well with a pork loin dinner. Do add this sauce to your holiday table!

Steps:
- In a food processor, coarsely chop the cranberries and transfer them to a bowl. Add the sugar, vinegar and horseradish and toss the mixture well.
- Chill the mixture, covered, for 30 minutes and stir in the walnuts. Serve the sauce as as accompaniment to turkey, pork or beef.

- Combine cranberries, onion, sugar and salt in processor. Chop coarsely, using on/off turns. Transfer mixture to medium bowl. Mix in sour cream and horseradish. Season to taste with salt and pepper. Refrigerate until chilled, about 1 hour. (Can be prepared 1 day ahead. Cover and keep refrigerated.)

- Bring cranberries, horseradish, sugar, and water to a simmer in a 3-quart heavy saucepan over moderate heat, stirring with a wooden spoon until sugar is dissolved. Simmer, uncovered, stirring and mashing berries frequently with spoon, until berries break down, 5 to 10 minutes.
- Serve sauce warm or at room temperature.

- Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries.
- Fold in 3/4 cup sour cream and 1 to 2 teaspoons horseradish. Chill before serving.
