- Pour the cranberry and grape juices into a heavy pot. Add the pectin and stir until dissolved. Bring the juice mixture to a full rolling boil over high heat. - Bring 1 cup water, 3/4 cup each white cranberry juice and white grape juice, 1/2 cup pear juice, 1/4 cup sugar, 1 teaspoon lemon juice and 1/4 teaspoon apple pie spice to a boil, then simmer, reducing to 3/4 cup, about 1 hour. Let cool. Stir about 3 tablespoons syrup into a glass and add about 8 ounces of seltzer, stirring until combined.
