I love Craisins! As I was eating some out of the bag earlier today, I noticed they have a recipe on the bag that sounds REALLY good! So I wanted to post it here before I ate all the Craisins and threw away the bag! :) I may even throw in some bacon bits... mmmm!

Number Of Ingredients 8

8 ounces fresh spinach
1/4 small red onion, thinly sliced
1/2 cup dried sweetened cranberries (Craisins)
2 tablespoons toasted sliced almonds (optional)
1/2 cup feta (optional) or 1/2 cup goat cheese, crumbled (optional)
1/2 cup balsamic vinaigrette dressing
2 tablespoons orange juice
1 teaspoon orange zest (optional)

Steps:

  • Wash and clean spinach. Tear into bit sized pieces and place in serving bowl.
  • Add half of cheese and 1/4 onion. Toss to combine.
  • Combine dressing ingredients (vinaigrette, oj, and orange zest) in a small mixing bowl.
  • Pour over salad and toss to coat.
  • Sprinkle with remaining cheese. Top with Craisins and almonds. Serve immediately.

1 tablespoon butter
¾ cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
2 teaspoons minced onion
¼ teaspoon paprika
¼ cup white wine vinegar
¼ cup cider vinegar
½ cup vegetable oil

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.
  • In a large bowl, combine the spinach with the toasted almonds and cranberries.

1/4 c. slivered almonds
1 lb spinach
1 c. craisins
4 oz feta cheese
Dressing;
2 tbs toasted sesame seeds
1 tbs poppy seeds
1/2 c. sugar
2 tsp minced red onion
1/4 tsp paprika
1/4 c. white wine vinegar
1/4 c. cider vinegar
1/2 c. oil

Steps:

  • In saucepan over medium heat melt butter. Add the almonds and cook until lightly toasted about 5 minutes. Remove from heat and let cool. In a large bowl combine the spinach with the almonds, craisins and feta. In another bowl, whisk together the dressing ingredients. Serve dressing with salad on the side.

1 cup chopped red onion
2 tablespoons olive oil
3 ounces fresh spinach, stems removed and leaves torn in bite-size pieces
⅓ cup sweetened dried cranberries (such as Craisins®)
⅓ cup chopped pecans

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet.
  • Slice butternut squash cross-wise into 1-inch slices; peel and clean each slice, removing and discarding seeds and stringy pulp from the center. Cut cleaned slices into 1-inch cubes.
  • Toss squash cubes, onion, and olive oil together in a bowl until coated; transfer to the prepared baking sheet.
  • Roast in the preheated oven until squash is tender and starting to brown, 25 to 30 minutes.
