MEDITERRANEAN CRACKED WHEAT SALAD



Mediterranean Cracked Wheat Salad image

This is a recipe I found while looking for a good Tabbouleh recipe. I'm always altering it by adding sun dried tomatoes, using different olives etc and it always comes out fantastic. The original recipe calls for water but I prefer vegetable or chicken stock. (Cooking time includes time to heat broth and roast pepper).

2 cups cracked wheat (bulgur)
1 1/2 cups chicken stock, heated (or vegetable stock)
1/4 cup olive oil
3 tablespoons lemon juice or 3 tablespoons lime juice
2 bunches scallions, sliced
1 garlic clove, minced
1 cup feta cheese, crumbled
1 English cucumber, diced
1 (6 ounce) can pitted ripe olives, sliced
1/4 cup of fresh mint, chopped
1/3 cup cilantro, chopped (parsley also works well)
2 bell peppers, roasted &sliced (red)
salt and pepper

Steps:

  • Rinse cracked wheat (bulgur) and put in a large bowl. Add hot broth, cover and let it stand until all liquid is absorbed (20-25 minutes).
  • Let cool and fluff with fork occasionally.
  • Add scallions, mint, cilantro, cucumber, olives and roasted pepper; mix well.
  • Mix together garlic, olive oil, lemon (or lime) juice salt and pepper and add to salad.
  • Stir in feta cheese, cover and refrigerate until ready to serve.

1 pound bulgur
1 large red onion, sliced into 1/4-inch slices
3 tablespoons olive oil, divided
3 plum tomatoes, diced
1 cup finely chopped flatleaf parsley
2 tablespoons finely chopped mint
1/4 cup fresh lemon juice
Salt and freshly ground pepper

Steps:

  • Place the bulgur in a large bowl and cover with boiling water, let stand 15 minutes and drain. Brush the onion slices on both sides with the olive oil and season with salt and pepper to taste. Grill on both sides until almost cooked through, remove and coarsely chop. Place the bulgur in a large bowl, add the remaining ingredients and mix to combine. Season with salt and pepper to taste. Serve at room temperature.

4 ounces cracked wheat
Juice of 4 lemons
1 1/2 tablespoons olive oil
2 tomatoes, peeled cored, seeded, and diced
1 red bell pepper, roasted, peeled, seeded, and diced
1 green bell pepper, roasted, peeled, seeded, and diced
1 small cucumber, peeled, seeded, and diced
1 rib celery, diced
1 bunch fresh flat-leaf parsley, chopped
1 bunch fresh mint, chopped
Salt and freshly ground black pepper

Steps:

  • In a large bowl, combine the cracked wheat, lemon juice, and oil. Mix well. Add the tomatoes, red peppers, green peppers, cucumbers, celery, scallions, parsley, and mint. Season with the salt and black pepper. Toss well to combine.
  • Cover and refrigerate for at least 8 hours, or until the wheat has softened.

An easy Lemon-Mint and Tabbouleh Salad. If you have trouble finding plain bulgur (cracked wheat), use one cup of bulgur (but not the seasoning packets) from two boxes of wheat salad mix, found in the rice and pasta section of the supermarket.

  • Whisk oil, lemon juice, and garlic in small bowl to blend; set aside. Place bulgur in large bowl. Mix in 1 cup boiling water. Let stand until bulgur is tender and water is absorbed, about 15 minutes. Mix in tomatoes, parsley, green onions, and mint. Add oil mixture; toss to blend. Season with salt and pepper. Let stand at least 30 minutes to blend flavors. (Can be made 1 day ahead. Cover; chill.)

I serve this creamy wheat and pineapple salad at Thanksgiving and Christmas dinner. It's a family favorite!

1 ½ cups whole wheat berries
1 (8 ounce) package cream cheese, softened
1 (15.25 ounce) can crushed pineapple in juice, drained
2 tablespoons lemon juice
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) tub frozen whipped topping, thawed

Steps:

  • Soak wheat berries in a bowl of water for at least 5 hours or overnight. Drain and place in a slow cooker with enough water to cover by one inch. Cover, and cook on Low setting for 5 to 6 hours, until tender. Add more water if needed. When tender, drain, and rinse under cold water to chill.
  • In a large bowl, stir together the cream cheese, pineapple and lemon juice. Stir in the dry pudding mix until smooth. Stir in the wheat berries until evenly coated. Fold in whipped topping just before serving. Refrigerate any leftovers.

3/4 cup chopped fresh parsley
2 tablespoons plus 2 teaspoons fresh lemon juice
