A Taste of Home recipe. This is why I LOVE this magazine. But I think I will omit the chutney. NOTE: The times do NOT include refrigeration time.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (1/2 ounce) packet vegetable soup mix
1/2 cup mayonnaise
1/2 cup sour cream
1 (8 ounce) package imitation crabmeat, chopped
1 (8 ounce) package cream cheese, softened
1/4 cup mango chutney or 1/4 cup chutney, of your choice
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
12 (8 inch) flour tortillas

Steps:

  • In a bowl, combine the spinach, soup mix, mayonnaise and sour cream; cover and refrigerate for 1 hour.
  • In another bowl, combine the crab, cream cheese, chutney, garlic powder and onion powder; cover and refrigerate for 1 hour. Spread the spinach mixture on six tortillas.
  • Spread the crab mixture on remaining tortillas.
  • Place one crab tortilla over each spinach tortilla.
  • Roll up tightly, jelly-roll style, and wrap in plastic wrap.
  • Refrigerate for at least 30 minutes. Cut each roll into seven slices.
  • Refrigerate any leftovers.

:) Unfortunately, no great story behind this one. Most of the time I throw stuff together because I can be a bit lazy when it means going to the grocer. Fresh crab is better, but this is what I had to work with.

1/2 pkg imitation crabmeat
3 1/4 tsp red pepper flakes, to taste
1/4 tsp garlic powder or you can use fresh garlic chopped very fine
1/4 c mayonnaise, may need to use more, but optional
1/2 c green olives, chopped
1/2 c black olives, chopped
1 Tbsp shay's pickle relish
3 green onions, chopped fine or use regular onions
1 small tomato, chopped
1 pkg cream cheese
salt & pepper to taste
1 pkg spinach tortillas

Steps:

  • 1. Combine first 8 ingredients and set aside. Spread cream cheese on tortilla then spoon crab mixture in center and roll up, making sure you keep it tight as possible without tearing. Slice off both ends of the tortilla, and then cut in 1-1/2 inch sections and place on a plate to serve.
  • 2. Just a note: You cannot buy "Shay's Pickle Relish". My niece cans her own and I raid her pantry when I am out. Any sweet relish or dill would work fine.
