A very simple but delicious dish served at one of oldest Italian idenpendent restaurants in Madison, Wisconsin. Serve with bread and wine or beer.

2 cups imitation crabmeat, flake style
1/2 lb butter, melted
2 tablespoons garlic, minced
1 tablespoon oregano
1/4 teaspoon red pepper flakes (optional)
1/2 lb fettuccine pasta
2 tablespoons parmesan cheese, shredded

Steps:

  • Prepare fettuccine per instructions on package.
  • Melt butter and addgarlic, oregano, and red pepper flakes (optional), mix and blend well.
  • In a medium sauce pan add crab meat and butter mixture. Heat until see the butter starting to "bubble".
  • Remove from heat and toss with fettuccine.
  • Garnish with parmesan cheese and serve with bread salad and beverage.

I spent seven years living in Maryland, where I could always get fresh crabs. Now that I'm in New England, it's a little tougher, but this is such a delicious dish that it makes the hunt worth it. In a pinch, you can use canned crabmeat, but fresh is definitely much better.

9 ounces crabmeat
3 tablespoons olive oil
2 tablespoons fresh parsley, roughly chopped (2 tsp., if using dried)
2 garlic cloves, crushed
12 ounces plum tomatoes, peeled and chopped
1/4 cup dry white wine
12 ounces linguine, uncooked
salt and pepper, to taste

Steps:

  • Using a mortar and pestle, grind the crabmeat into a rough pulp.
  • Heat 2 tablespoons of the oil in a large saucepan. Add the parsey and garlic, along with some salt and pepper, and fry for a few minutes, until the garlic starts to brown.
  • Add the tomatoes, crabmeat, and wine, then cover and simmer for about 15 minutes, stirring occasionally.
  • Meanwhile, cook the linguine according to the directions on the package. Drain, but reserve a bit of the cooking water. Put the linguine back in the pan. Add the remaining oil and toss over medium heat until the pasta is well coated.
  • Add the tomato-crab mixture to the linguine and toss again. Add some of the reserved cooking water if the pasta looks like it needs it. Adjust seasoning and serve hot.

My husband loves crab alfredo, but we simply cannot afford to eat out all the time. This one tastes just as good as what we find at restaurants---and saves us money!

3/4 cup milk
1 1/4 cups heavy cream
1/2 cup butter
3 tablespoons light cream cheese
1 cup parmesan cheese, grated
1/4 cup romano cheese, grated
1 1/2 teaspoons garlic powder
2 tablespoons fresh parsley, chopped
1 teaspoon crushed basil
1/8 teaspoon red pepper flakes
8 large crab legs, cooked & meat removed or 10 ounces lump crabmeat, cartilage removed
1 cup sliced mushrooms
12 ounces whole grain fettuccine

Steps:

  • Melt butter in saucepan. Add cream cheese.
  • When softened, add cream and parmesan. Add garlic, and stir well.
  • Simmer 15-20 minutes.
  • Boil pasta according to package directions, drain, & set aside.
  • If boiling your own, boil crab legs, crack open & remove meat. Press meat lightly between paper towels to remove excess moisture.
  • Mix everything together & serve.
