1 cup mayonnaise
2 tablespoons Dijon mustard
4 1/2 tablespoons drained nonpareil capers
4 1/2 tablespoons chopped fresh chives
3 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon peel
nonstick vegetable oil cooking spray
1/2 cup mayonnaise
2 large eggs, lightly beaten
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
1 lb crabmeat, drained well and picked over
24 saltine crackers, finely ground

Steps:

  • For Lemon-Caper Sauce; Mix all ingredients together in a medium bowl to blend.
  • Chill until cold.
  • (Can be prepared up to 1 day ahead. Cover and keep refrigerated.).
  • For Crab Balls: Spray 2 baking sheets with nonstick spray.
  • Whisk mayonnaise, eggs, mustard and Worcestershire in large bowl to blend.
  • Gently mix in crabmeat and ground crackers.
  • Place on prepared baking sheets.
  • (Can be made 8 hours ahead. Cover, chill.).
  • Preheat broiler.
  • Broil crab balls until brown and cooked through, watching closely to avoid burning and turning once, about 5 minutes.
  • Serve with sauce.

This was a success at a wine and cheese party..everyone brought something...this was my contribution..with a good California Wine!! **update** I did change the recipe to read 4 tbls instead of 1/4 cup Old Bay Seasoning It was easier to dig out of the can with a measuring spoon then to dump it into a measuring cup. Sorry if it caused any confusion. 4 TBLS = 1/4 CUP

1 lb crabmeat
1 (8 ounce) package cream cheese
1/2 cup butter
1 bunch of minced green onion
4 tablespoons Old Bay Seasoning
1/2 teaspoon horseradish
1/4 cup chopped parsley (to garnish)
1 tablespoon Old Bay Seasoning (to garnish)
serve with cracker

Steps:

  • Remove all excess shell from crabmeat
  • In a mixing bowl, combine softened cream cheese, butter, green onions, old bay seasoning and horseradish. while mixing gradually add crabmeat. Divide mixture into two balls.
  • Refrigerate the balls for at least one hour.
  • On a piece of waxed paper, mix the parsley and old bay seasoning.
  • Remove crab balls from the refrigerator and roll them on the wax paper until they are completely coated.

1 teaspoon horseradish (optional)
1 -2 drop Worcestershire sauce
1 cup imitation crabmeat, shredded
1 tablespoon fresh lemon juice
1 (250 ml) jar chipotle chili sauce

Steps:

  • Mix cream cheese, horseradish, Worcestershire sauce, crab meat and lemon juice together and form into a ball.
  • Refrigerate for at least 2 hours (can make day ahead).
  • Top with shrimp sauce.
  • Serve with crackers.

4 ounces crabmeat, drained and cartilage removed, flaked
1 teaspoon lemon juice
1/4 teaspoon onion powder
1 dash hot pepper sauce
1/3 cup seafood cocktail sauce
chopped fresh chives, for garnish

Steps:

  • Put first 5 ingredients into small bowl.
  • Beat until well combined.
  • Shape into ball.
  • Cover and chill at least 2 hours.
  • Just before serving, place on serving plate.
  • Pour cocktail sauce over crab ball.
  • Garnish with chives.
  • Add more cocktail sauce as needed.

1 pound back fin crabmeat
1 egg, beaten
1 cup Ritz crackers, crushed
1 teaspoon yellow mustard
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
1 teaspoon Old Bay seasoning
1 tablepoon Worcestershire sauce

Steps:

  • Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab. In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth. Pour egg mixture over the crabmeat and crackers and gently mix careful not to break up large lumps of crabmeat. Mold into golfball sized balls and place on a cookie sheet. Bake at 350 degrees Fahrenheit for 30 minutes. Drizzle with melted butter and allow to cool, serving with saltine crackers.
