SOUTHERN CRAB STEW

This stuff is wonderful, ya'll! I found a crab stew recipe in a local church cookbook and spiced it up and made it my own. It seems like a long process with a lot of ingredients, but really it's not. I hope ya'll enjoy it, we sure do.

1/2 cup butter
1 medium onion, chopped
1 medium bell pepper, chopped
2 stalks celery, chopped (optional)
1 quart milk
6 -8 medium potatoes, peeled and boiled
3 (10 1/2 ounce) cans cream of celery soup
1 (10 1/2 ounce) can cream of potato soup
2 lbs fresh crabmeat, may use canned crabmeat approximately 10 - 6oz cans
4 tablespoons Old Bay Seasoning
3 tablespoons Worcestershire sauce
salt and pepper

Steps:

  • In a large pot combine butter, onions, bell pepper, celery and Old Bay cook until veggies are soft.
  • Next, add in your soups, milk, crabmeat.
  • Simmer until heated through, stirring constantly.
  • Add cooked potatoes, Worcestershire sauce and salt and pepper.
  • Continue to keep it warm on low heat stirring occasionally.
  • We like to add a little hot sauce to ours as well.

CRABMEAT AND CORN SOUP

This soup is like a chowder and is delicious. I am a soup lover and have developed or modified over 150 soup recipes to make them taste much better.

Number Of Ingredients 11

1/4 cup butter
1/4 cup all-purpose flour
2 cups whole milk, homogenized
2 cups half-and-half cream
2 cups corn, fresh,frozen or canned kernel
1 cup finely chopped green onions or 1 cup finely chopped scallion
1 lb fresh crabmeat
1/2 teaspoon white pepper
1/2 teaspoon seasoning salt
1 tablespoon soy sauce, regular
1/4 cup chopped fresh parsley

Steps:

  • In a heavy bottom cooking pot, melt butter on medium heat.
  • Add flour and stir gently until blended; DO NOT LET THE MIXTURE DARKEN.
  • Add milk gradually stirring continously until it starts to simmer.
  • Add half and half, stir gently until well blended.
  • Add corn and green onions, and cook for 3 to 4 minutes or until corn is just tender, stirring occasionally.
  • Add crabmeat, pepper, salt and soy sauce and simmer until very hot and small bubles start to form around the edge of the pot; stir frequently; BUT DO NOT BOIL.
  • Adjust seasonings to taste.
  • Garnish with sprinkles of chopped fresh parsley and serve immediately.
  • If using fresh corn, use 4 large cobs.
  • Cut kernels off cobs, scrape cobs for any milk and add to soup.
  • Canned crabmeat or imitation crabmeat may be used instead of fresh crabmeat.
  • Use 7 1/2 ounces of canned crabmeat (drained) and 8 ounces of imitation crabmeat cut into smaller pieces.

Cornmeal-Crusted Soft-Shell Crabs image

When you buy soft-shell crabs, have them cleaned at the fish market. Here, they are served on a bed of arugula with a Lemon-Red Pepper Confit.

Number Of Ingredients 8

1 cup yellow cornmeal
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 large egg whites
8 soft-shell crabs, (about 2 1/2 pounds)
6 tablespoons olive oil
1 bunch arugula, (about 6 ounces), washed and tough stems removed
Lemon-Red Pepper Confit

Steps:

  • Combine cornmeal, salt, and pepper in a shallow bowl or plate.
  • Whisk egg whites in a small bowl until just frothy. Dip crabs into egg whites to coat. Dredge them in the seasoned cornmeal, shake off excess, and set aside.
  • Heat 1 1/2 tablespoons olive oil in a large nonstick skillet over medium-high heat; arrange 4 crabs on their bellies in the pan. Cook until golden and crisp, about 5 minutes. Transfer crabs to a plate and add 1 1/2 tablespoons olive oil to pan. Return crabs to pan, on their backs, and cook until crisp, about 5 minutes more. Remove crabs from skillet and keep warm on a baking sheet in a 300 degrees oven. Repeat with the remaining olive oil and crabs.
  • Divide arugula among four plates. Arrange 2 crabs over each plate of arugula, spoon confit over or around crabs, and serve.
