EASY WHOLE WHEAT PIZZA DOUGH



Easy Whole Wheat Pizza Dough image

Whip up this 100% whole wheat pizza dough recipe in your food processor. It hardly needs kneading or rising time. You can make this pizza in less than the amount of time it would take for pizza delivery. Dinner is ready! Yields two medium (11" diameter) pizzas.

1 cup water, heated to 110 degrees (very warm, almost too hot for comfort)
1 tablespoon extra virgin olive oil
1 tablespoon honey or sugar
1 envelope (2 1/4 teaspoons) rapid-rise or instant yeast
2 3/4 cups (345 grams) white whole wheat flour or regular whole wheat flour
1/4 cup grated Parmesan cheese
1 teaspoon fine salt
1 cup pizza sauce or one 32-ounce can whole tomatoes, drained and crushed by hand
2 to 3 cups shredded low-moisture part-skim mozzarella cheese
Additional toppings, as desired

Steps:

  • Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven.
  • Whisk water, oil, honey and yeast in a liquid measuring cup or small bowl. Allow yeast to proof for 5 minutes. It should puff up some by then.
  • Pulse flour, Parmesan, and salt in food processor until combined. While running the food processor, slowly pour in the water mixture and process until a shaggy ball forms, about 1 minute.
  • Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together. Halve the dough.
  • On a floured surface, use a rolling pin to roll dough into two rounds about 11 inches in diameter. For best results, roll the dough out about as thin as reasonably possible. Aim for even thickness rather than a perfectly round shape.
  • Carefully lift and transfer one of the rounds onto a baking sheet lined with parchment paper. Brush the outer 1-inch of the dough with a light coating of olive oil. Add half of the pizza sauce or crushed tomatoes (crush the tomatoes over the sink to get out as much liquid as possible). Sprinkle with half of the cheese and any other toppings you'd like to add.
  • Bake on the top rack until the crust and cheese are lightly golden, about 10 minutes for cheese pizza and 12 minutes for pizza with additional toppings. Repeat with the remaining dough, then slice and serve. Leftover pizza will keep well in the refrigerator for about 4 days.

1 package dry yeast
1 1/4 cups lukewarm water
1 1/2 cups whole wheat flour
2 cups all-purpose flour
1 tablespoon olive oil
1 tablespoon honey
1/2 teaspoon salt
Grated mozzarella cheese
Grated Parmesan cheese
Ricotta cheese
Sliced tomatoes
Sliced onions
Sliced mushrooms (chanterelles)
Roasted red bell peppers, peeled, seeded, sliced
Calamata olives, pitted and sliced
Japanese eggplant, sliced thin
Leeks, washed well, outer leaves trimmed, sliced into "rings"
Broccoli florets
Spinach leaves

Steps:

  • Proof yeast in a measuring cup with lukewarm water.
  • In a food processor add whole wheat and all purpose flours, proofed yeast, oil mixed with honey and salt. Pulse processor to combine all ingredients. Then process until the dough forms a ball on the blade. Remove dough to a large oiled bowl. Cover with plastic wrap or a kitchen towel and let rise in a warm place for 45 minutes or until dough has doubled in bulk.
  • Punch down dough and transfer to a floured board and knead briefly. Divide dough into 4 equal portions and roll each piece into a ball. Place the balls of dough, covered, in the refrigerator for at least 2 hours or overnight. Bring the dough to room temperature before proceeding.
  • On a floured board roll and stretch each piece of dough into a 7 to 8-inch circle. Place each circle on a wooden pizza peel or pizza pan and top as desired.
  • Preheat oven to 450 degrees F. and bake 7 to 8 minutes per pizza.

One product of my online interview with Wolfgang Puck was being given his pizza dough recipe to publish. I don't think this recipe is any kind of secret, and I'm sure it's been published many times, but I had never personally tried it, so I decided to do this recipe check out this iconic dough for myself.

1 (.25 ounce) package active dry yeast
1 teaspoon honey
1 cup Water, municipal
1 teaspoon kosher salt
5 tablespoons extra-virgin olive oil, divided
2 ¾ cups all-purpose flour, or more as needed
¼ cup cornmeal, or as needed

Steps:

  • Combine yeast, honey, and 1/4 cup warm water in a large bowl with a whisk. Let stand to dissolve, about 10 minutes.
  • Add salt, 1 tablespoon olive oil, remaining 3/4 cup warm water, and 1 cup flour to the mixture and stir until a batter forms. Add another 1 cup flour; stir to combine. Add 1/2 cup more flour and combine.
  • Turn dough out onto a surface dusted with 1/4 cup flour. Knead until a smooth, fairly firm, slightly sticky dough is achieved, adding more flour as needed.
  • Transfer dough to a lightly oiled bowl and cover with a damp towel. Let sit in a warm place until doubled in size, 30 to 40 minutes.
  • Turn dough out onto a lightly floured cutting board and pat down with your hand. Divide dough into 4 equal pieces. Stretch and fold each piece down and under, tucking as you go, to form pizza dough rounds.
  • Cover with a towel and let sit in a warm place until doubled in size, 20 to 30 minutes.
  • Preheat the oven to 450 degrees F (230 degrees C). Dust a baking sheet with cornmeal.
  • Transfer dough rounds to a lightly floured board and press each piece out to desired thickness, starting in the center, until 8 to 10 inches wide. Form a crust shape around the outer edges with your fingertips.
  • Transfer one round of pizza dough to the prepared baking sheet and brush with 1 tablespoon olive oil. Top with any sauce and toppings you like.
  • Bake in the lower rack of the preheated oven for 5 minutes. Move to the center of the oven and continue to bake until golden, about 10 minutes more. Repeat to bake remaining pizzas.

2 teaspoons yeast (105F to 115F) or 1 1/2 cup warm water (105F to 115F)
2 cups white bread flour
2 cups whole wheat flour
4 teaspoons sugar
2 teaspoons salt
2 tablespoons extra virgin olive oil

Steps:

  • Dissolve yeast in the water and set aside for 5 to 10 minutes. Do not get water above 115, it will kill the yeast and the dough will not rise. Also, I use filtered or bottled water because the chlorine in tap water can also kill the yeast.
  • Place dry ingredients in large mixing bowl, make a well in the middle and pour in the liquids, reserving a teaspoon of olive oil.
  • Use a wooden spoon to combine the ingredients. Once the intial mixing is done, you can oil your hands and begin kneading the dough.
  • Knead dough for about 5 minutes or until dough is smooth and no longer sticky.
  • Lightly oil a bowl and put dough in bowl, wrap cover of bowl with plastic wrap and let dough rise for 2 hours. It should double in size.
  • The dough can now be used but will be much tastier if you let it sit in the fridge over night wrapped in plastic.
  • After removing it from the fridge, let the dough come to room temperature. Knock it down to get the extra air out and either roll out or stretch by hand, whatever you prefer. Thick or thin according to your tastes.
  • Preheat pizza sone to 450-500 for 1 hour.
  • Top pizza as you like and bake 8-10 minutes or until bubbly and golden brown or according to your individual pizza recipe.

¼ cup wheat germ
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture. Stir well to combine. Cover and set in a warm place to rise for a few minutes.
  • Roll dough on a floured pizza pan and poke a few holes in it with a fork.
