1 lb boneless beef sirloin (1-inch thick)
1 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, crushed
1 tablespoon oil
2 (14 1/2 ounce) cans beef broth
1 (16 ounce) jar chunky salsa or 1 (16 ounce) jar picante salsa
1 (1 lb) package frozen green beans
1 (1 lb) package frozen potato
1 large onion, chopped
2 red bell peppers, cored and chopped
1 (15 1/2 ounce) can great northern beans, drained and rinsed
1 cup torn fresh spinach

Steps:

  • Cut the beef in to 1/4 inch thick strips; cut each strip into 1 inch pieces.
  • In a medium bowl, combine beef, basil, salt, pepper, garlic, and oil; toss to coat.
  • Heat large saucepan over medium-high heat until hot.
  • Add the beef mixture; cook and stir for 4-5 minutes or until browned.
  • Stir in the broth, salsa, vegetables, onion, and red pepper. (DONOT STIR IN THE CAN OF BEANS OR THE SPINACH YET).
  • Bring to a boil over medium-high heat.
  • Reduce heat to low, simmer 25 minutes or until onions and red peppers are tender.
  • Stir in the beans and cook 4-5 minutes or until heated thoroughly.
  • Stir in the spinach.

1 green pepper, chopped
1 (10 ounce) can enchilada sauce
1 can abc vegetable soup
1 (15 ounce) can ranch style beans
1 can whole kernel corn

Steps:

  • Combine ground beef, onion, and green pepper in large saucepan.
  • Cook till onion and pepper are tender.
  • Drain off fat.
  • Add enchilada sauce, soup, beans, and corn to ground beef and onion mixture.
  • Stir to combine.
  • Simmer for 15 minutes.

1 pound ground beef
1/2 cup yellow onion, diced
4 cloves of garlic or 3 teaspoons garlic paste
4 teaspoons tomato paste (if using vegetable broth)
1 (15.25 ounce) can of corn, with liquid
1 (14.5 ounce) can of green beans, with liquid
1 (10 ounce) can Ro*Tel tomatoes with green chilies, with liquid
2/3 cup rice, uncooked
1 (14.5 ounce) can beef broth
1 (14.75 ounce) can of cream-style corn
1 (16 ounce) can of kidney beans, drained & rinsed

Steps:

  • In a large pot, add ground beef and onion. Cook until ground beef is cooked through and onions are translucent. Add garlic and tomato paste (if using vegetable broth) and cook for 1 - 2 minutes or until garlic is fragrant and mixture is well combined. Add corn, green beans, Ro*Tel, rice, vegetable broth (or stewed tomatoes), cream style corn & kidney beans. Mix well and bring to a boil. Reduce heat to low, cover and let simmer for 30 minutes or until rice is cooked through. Serve immediately.

4 cups pinto beans, cooked

Steps:

  • Combine all ingredients except beans in slow cooker.

1 jar(s) chunky style salsa or picante
1 pkg frozen green beans,potatoes,onion and red peppers (1 lb bag)

GARNISH,IF DESIRED
fresh basil,parsley or cilantro

Steps:

1 1/2 lbs lean ground beef
4 garlic cloves, chopped
1 onion, chopped
2 tablespoons chili powder
1 teaspoon ground cumin

1/4 teaspoon fresh ground black pepper
2 baking potatoes, peeled and diced
2 (15 ounce) cans pinto beans, drained and rinsed
1 (14 ounce) can diced tomatoes, drained
1 (14 ounce) can diced tomatoes with green chili peppers, undrained
4 cups beef stock
1 (14 ounce) can whole kernel corn, drained
cornbread crouton

Steps:

  • In a large pot, saute bacon over medium heat until starting to brown.
  • Add ground beef and saute, breaking up with the back of a wooden spoon, until no longer pink, about 5 minutes.
  • Add garlic, onion, chili powder, cumin, salt and pepper; saute until onion starts to soften, about 3 minutes.
  • Add potatoes, beans, both cans of tomatoes and stock; bring to a boil.
  • Decrease heat and simmer until potatoes are just tender, about 20 minutes.
  • Add corn and simmer for 10 minutes.

1 pkg bear creek minestrone soup mix
1 can(s) tomatoes and chiles, rotel
1 can(s) tomatoes diced
1 can(s) green chiles
2 can(s) pinto beans or ranch style w/jalapenos
1 can(s) corn
2 lb ground beef or turkey
1 medium onion chopped
salt, pepper and garlic to taste

Steps:

  • 1. Brown meat in skillet or dutch oven with onions, salt, pepper, and garlic.
  • 2. Prepare Minestrone Soup Mix according to directions. Add Soup and rest of ingredients to meat in Dutch oven.
  • 3. Simmer for 1 hour. ( be careful not to cook too long or pasta will fall apart.)
  • 4. Note: I like to cook this in a large crock pot. If using a crock pot, heat Minestrone soup mix to boiling and add to crock pot. Simmer 3-4 hours on low.

2 medium Roma tomatoes, cut into 1/4-inch chunks
1 small red onion, cut into 1/4-inch pieces
4 tablespoons olive oil, divided
1 small jalapeno pepper, chopped
2 cloves garlic, chopped
3 cups water
1 (16 ounce) package frozen corn, thawed, divided
1 medium avocado, chopped
¾ cup reduced-sodium black beans, rinsed and drained
¾ cup black-eyed peas, rinsed and drained
1 ½ teaspoons dried oregano
1 ½ teaspoons ground cumin
1 ½ teaspoons garlic powder
1 ½ teaspoons chili powder
1 ½ teaspoons salt
½ teaspoon cayenne pepper
½ teaspoon black pepper
¼ cup red wine vinegar
¼ cup chopped fresh cilantro, or to taste
1 medium lime, juiced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Toss bell pepper, tomatoes, onion, and 2 tablespoons olive oil in a mixing bowl until vegetables are coated. Spread mixture onto the prepared baking sheet.
  • Roast in the preheated oven, stirring gently every 5 minutes, until vegetables are lightly browned, 20 to 30 minutes.
  • While vegetables are roasting, heat remaining 2 tablespoons oil in a medium pot over medium-high heat. Add jalapeno and garlic and saute for 2 minutes. Add water and 1 cup corn; bring to a simmer. Reduce heat and simmer for 10 minutes.
  • Add avocado to the pot and puree soup with an immersion blender.
  • Stir in the remaining corn, black beans, black-eyed peas, roasted vegetables, oregano, cumin, chili powder, salt, cayenne, and black pepper. Cook until heated through, about 5 minutes.
  • Remove soup from the heat. Stir in vinegar, cilantro, and lime juice. Ladle into bowls and serve.

1 (8 ounce) can tomato sauce

1 (16 ounce) jar salsa con queso (we used pepperjack)
1 (14 1/2 ounce) can baked beans
1 (14 1/2 ounce) can corn, drained
2 teaspoons taco seasoning
sour cream (optional)
shredded cheddar cheese (optional) or muenster cheese (optional)

Steps:

  • Dump everything but the optional ingredients into a large stockpot or crockpot.
  • Cook over medium heat, stirring occasionally, for about 30 minutes. If cooking in crockpot, cook on high four hours or low for eight hours.
  • Once bubbly hot, serve. Garnish with dollops of sour cream and shredded cheese, if you prefer.
  • FOR FREEZING OR oamc: Pour soup into large gallon size freezer bag(s)or other freezer containers. Remove as much air as possible, seal and freeze flat. Reheat slowly in crockpot or stovetop, adding 1/4 water at the beginning.

1 1/2 lbs. ground beef
1 cup chopped onion
2 tbsp. vegetable oil
1 envelope taco seasoning mix
1 envelope ranch salad dressing mix.
1 can diced tomatoes
1 can tomatoes with green chilies (i use rotel)
1 cup tomato sauce
1 can pinto beans
1 can red kidney beans
1 can corn

Steps:

  • 1. Brown the beef and the onion in the oil in a frypan. Stir until the beef crumbles. Drain the fat. Stir in the taco seasoning and the ranch seasoning with the tomatoes and green chilies. Add the tomato sauce, the pinto beans and kidney beans. Stir. Add the corn, drained, and mix well. Cook over low heat for an hour. Serve this over rice or corn chips or even tortilla chips. (My family likes it over noodles). Garnish with sour cream if you like and some shredded cheese. This serves 8, but they'll be back for more!

2 cups tomato juice
1 can whole kernel corn (optional but drain if used)

Cowboy Pinto Bean Soup (Slow Cooker) Recipe - (4.2/5) image

5-8 slices of thick-cut bacon, cut into eighths
1 large onion, chopped
2 cloves garlic, minced
2 cups dry pinto beans, rinsed
8 cups water
3 Anaheim peppers (or a can of fire-roasted green chilies)
3 medium tomatoes, cut into chunks*
2 teaspoon salt
1 teaspoon chicken bouillon
salt and pepper to taste
to garnish: shredded cheese, sour cream, avocados, cilantro, limes, etc

Steps:

  • 1. In a large soup pot, cook bacon over medium heat until it is crisp. 2. Add onion and saute until it's soft, 5 minutes or so. 3. Add garlic and cook until fragrant, 1 minute or so. 4. Add rinsed beans and water. Bring to a boil over high heat, then reduce to a simmer (there should be some amount of movement). Cover and simmer just until the skins begin to split on the beans, a little over 2 hours. 5. Meanwhile roast the chiles. There are lots of ways to do this: you can broil them in the oven or char them over a gas stove. (Here's a resource) I grilled mine outside over medium heat. It took 12-15 minutes total, turning the chiles every 5 minutes or so. However you choose to do it, just make sure that the skins get nice and black. Afterward make sure you steam them for at least 20 minutes. You can do this by placing a bowl over a plate of hot chilies (with no escape for steam), closing them in a bag, or putting plastic over the bowl they are in. 6. Once steamed, the skins should be very easy to remove. Slit the pepper open once it is skinned and remove the stem and seeds. Chop the peppers into bite-sized pieces. 7. Once the beans have split, add the roasted chilies, chopped tomatoes, salt, and bouillon. 8. Continue cooking until the beans are very tender and fully cooked (they should not taste at all chalky), about 30 minutes. 9. Add more salt and pepper to taste. Happy souping! Slow Cooker Instructions: After adding the garlic in step 3 above, transfer to a crock pot. Add the water and beans. Cook on low for 8-10 hours. One hour before you want to eat, add the remaining ingredients. Notes *Original recipe calls for peeling the tomatoes but I was too lazy.

1 jalapeño - chopped with seeds
3 cloves garlic - chopped
1 red onion - chopped
28 oz. can pork and beans with molasses
28 oz. can tomato puree
3 - 4 cups chicken broth - (depending on how thick to would like this)
1 tablespoon soy sauce
1 tablespoon worcestershire sauce
1 tsp. paprika
1 tsp. cumin
1 tsp. salt
1 tsp. cayenne pepper
1 tablespoon brown sugar
1 cup left over steak (or any left over meat or chicken) - sliced thin
2 tablespoons olive oil
½ lb. you favorite noodles

Steps:

  • 1. Heat a cast iron pot with the olive oil. Add the jalapeño, garlic and red onion and sauté until the onion is soft and garlic fragrant. When this is accomplished add the tomato puree and the pork and beans; continue to gently simmer. Add the chicken broth, soy sauce, Worcestershire sauce and the seasonings. Continue to gently simmer for 25 - 30 minutes. Add the left over steak and once again continue to gently simmer. Prepare the noodles as directed. Place the noodles in a bowl and top with the soup. It is delicious to also serve with shredded cheddar cheese on top.
