HEALTHY FARRO SALAD WITH AUTUMN GREENS AND ROASTED GRAPES



Healthy Farro Salad with Autumn Greens and Roasted Grapes image

Hardy mixed greens are tossed with nutty farro, sweet roasted grapes and red onions, and a bright red-wine vinaigrette for a glorious grain salad.

Number Of Ingredients 8

8 ounces farro (about 1 1/2 cups)
Kosher salt and freshly ground pepper
6 cups seedless red grapes (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
2 small red onions, sliced into 1/4-inch rounds
3 tablespoons red wine vinegar, plus more for seasoning
4 cups mixed small greens such as baby kale, baby Swiss chard, red mustard, and red mizuna
8 ounces fresh goat cheese, crumbled (optional)

Steps:

  • Preheat oven to 425 degrees with a rack in the upper and lower thirds.
  • In a medium saucepan, combine farro and 1 1/2 teaspoons salt; cover with water by 2 inches. Bring to a boil and cook until tender, about 25 minutes. Drain, and transfer to a bowl.
  • Meanwhile, combine grapes, 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper on a baking sheet. Place red onion slices on a separate baking sheet and drizzle with 1 tablespoon olive oil. Flip slices and drizzle with another tablespoon olive oil. Season with salt and pepper. Transfer baking sheet with onions on the bottom rack of oven and baking sheet with grapes to top rack. Roast, flipping onions every 15 minutes, until onions are golden brown and grapes have burst, about 45 minutes.
  • Transfer roasted grapes and onions to bowl with farro. Toss with remaining 2 tablespoons olive oil, red wine vinegar, 1 tablespoon salt, and 1/2 teaspoon pepper. Toss well to combine and let cool, about 20 minutes.
  • Immediately before serving, gently toss in greens. Season to taste with additional salt, pepper, and red wine vinegar. Transfer to a platter, top with goat cheese, if desired, and serve.

Sweet and Spicy Couscous Salad with Grapes image

2 cups chicken stock
1 1/2 cups instant couscous
1 cup seedless California grapes
1/2 cup pine nuts or slivered almonds
1/2 cup dried apricots, sliced
1/2 cup green onions, sliced
1/4 cup fresh parsley, chopped
1/8 cup fresh mint, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/2 cup olive oil
1/2 cup lemon juice

Steps:

  • Bring stock to a boil in a medium saucepan and stir in couscous. Remove pan from heat and cover. Let couscous stand until cool, then fluff with a fork into a large bowl. Stir in grapes, pine nuts, apricots, green onions, parsley and mint. Add remaining Ingredients and let flavors marry for 30 minutes before serving.

1 c couscous
1 1/2 c hot water
1/2 c chopped toasted walnuts or any type of nuts you perfer
1/2 c crumbled feta cheese
1/2 c seedless red or green grapes cut in half
1/4 c chopped parsley or calandro
6 Tbsp olive oil
4 Tbsp fresh lemon juice
1/4 tsp kosher salt
1/4 tsp black or white pepper
COUSCOUS SALAD WITH GRAPES & FETA CHEESE

Steps:

  • 1. Boil the water in a pot when finish boiling, set aside.
  • 2. In a large bowl, combine 1 cup couscous with hot water, stirring once to evenly distributed couscous cover & let it sit for 10 minutes or more. I sometime use Far East Plain Couscous mix following cooking directions on the box.
  • 3. Fluff couscous with a fork and add walnuts, Feta cheese, red/green grapes, chopped parsley, olive oil, lemon juice, salt & pepper mix altogether, serve hot. You can chill and served over a nice salad.
  • 4. If you or family members don't like grapes, use grape/ cherry tomatoes. Adjust salt & pepper to your liking.

This kale salad with cranberries is called "circus salad" in our house because it is so colorful and fun! This is a super wholesome salad with all-natural ingredients and no added oils or sugar. Try using quinoa instead of couscous, add warm asparagus on top, or stir in roasted, diced sweet potatoes and onions for even more color and nutrients. This keeps well for days - I usually make a big batch and have it for lunch through the week.

2 leaves kale
1 teaspoon olive oil, or as needed
½ pint cherry tomatoes, diced
kosher salt to taste
⅛ pound crumbled feta cheese
⅓ cup dried cranberries
½ cup cooked couscous
¼ cup roasted pumpkin seeds
¼ cup sunflower seeds
½ lemon, juiced

Steps:

  • Remove kale leaves from stems; finely chop leaves and massage with oil in a large bowl until dark green and fragrant, about 30 seconds. Add cherry tomatoes and sprinkle with kosher salt. Add feta cheese, cranberries, couscous, pumpkin seeds, and sunflower seeds.
  • Squeeze lemon juice over ingredients and toss until blended.
