This is a healthy, delicious, and easy side dish that takes about 10 minutes to make. I'm borrowing the name from Pasta Primavera which, like this recipe, takes advantage of fresh, seasonal, green produce.

Number Of Ingredients 12

2 cups dry couscous
½ cup chopped green onions
1 fresh jalapeno pepper, finely diced
2 tablespoons olive oil
½ teaspoon ground cumin
1 pinch cayenne pepper
1 pinch ground black pepper
2 cups vegetable stock
1 bunch asparagus, trimmed and cut into 1/4-inch pieces
1 cup shelled fresh or thawed frozen peas
2 tablespoons chopped fresh mint
salt and freshly ground black pepper to taste

Steps:

  • Combine couscous, green onion, jalapeno, olive oil, cumin, cayenne pepper, and black pepper in a large bowl; stir until olive oil is completely incorporated.
  • Bring vegetable stock, asparagus, and peas to a boil in a saucepan over high heat.
  • Pour stock, asparagus, and peas over couscous mixture; shake bowl to settle couscous into liquid. Cover and let stand for 10 minutes. Fluff with a fork, then stir in mint and season with salt and pepper to taste.

Number Of Ingredients 9

2-3 Tbsp olive oil
1 bell pepper( yellow green or orange) cored, seeded, chopped
1 zucchini, sliced
1/2 c sweet onion, thinly sliced
8 stalks asparagus, cut into 1 inch spears
1/4 tsp crushed red pepper flake (optional)
1 dash(es) salt and pepper
1 c couscous
1 1/4 c water or chicken broth

Steps:

  • 1. In a medium skillet, heat 1-2 tablespoon oil over moderate heat.
  • 2. Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
  • 3. In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.
  • 4. Add remaining oil and couscous.
  • 5. Cover, remove from heat and let stand 5 minutes.
  • 6. Toss together couscous, seasonings and vegetables and serve.
