Just made this for lunch, and I'm really pleased with how it turned out. No need for cous cous to be bland anymore! Serves 1--perfect for a solo lunch or snack! Fast and easy.

1/3 cup couscous, uncooked
1/2 cup chicken broth
1 teaspoon olive oil (to cut calories, I prefer to use the fat-free spray "butter", gives the taste without the fat and ca) or 1 teaspoon butter (to cut calories, I prefer to use the fat-free spray "butter", gives the taste without the fat and ca)
1/2 teaspoon cajun seasoning
salt, to taste

Steps:

  • Combine chicken broth, olive oil, cajun seasoning, and salt in a small saucepan. Bring to just a boil.
  • Remove saucepan from heat and add cous cous. Cover and let stand for 5 minutes.
  • Fluff with a fork and enjoy!

Spicy, summery pasta salad made with cucumber, lemon, mint, basil, and jalapeno. This is my interpretation of a spicy tabbouleh dish from 'Pasta & Co.'

3 cups water
2 cups couscous
½ cup crumbled feta cheese
1 fresh jalapeno pepper, chopped
½ cucumber, diced
1 clove garlic, minced
½ cup chopped green onion
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh parsley
2 teaspoons ground cumin
2 teaspoons cayenne pepper
1 lemon, juiced

Steps:

  • Bring the water to a boil in a saucepan. Remove from the heat and stir in the couscous. Cover and let stand until the couscous absorbs the water entirely, about 10 minutes; fluff with a fork.
  • While the couscous soaks, stir the feta cheese, jalapeno pepper, cucumber, garlic, green onion, mint, basil, cilantro, parsley, cumin, cayenne pepper, and lemon juice in a large bowl. Add the prepared couscous and mix well.
