PESTO RISOTTO WITH CANNELLINI BEANS, TOMATOES, AND POACHED EGGS

Whip up risotto using Arborio rice from the pantry. Parmesan, pesto, and white wine vinegar amp it up. And cannellini beans and poached eggs to make it a meal.

1 tablespoon olive oil
1 cup chopped white onion
2 cloves garlic, minced
1 cup Arborio rice
½ cup dry white wine
3 cups low-sodium vegetable broth, warmed
½ cup grated Parmesan cheese
⅓ cup prepared basil pesto
⅓ cup chopped fresh parsley, divided
2 tablespoons white wine vinegar, divided
1 (15 ounce) can cannellini beans, rinsed and drained
1 (10 ounce) basket cherry tomatoes, halved
¼ teaspoon salt
4 large eggs
freshly ground black pepper to taste

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion and garlic and cook, stirring occasionally, until onion is tender, about 3 minutes. Add rice and cook, stirring frequently, until lightly toasted, about 1 minute. Slowly pour in white wine. Cook, stirring frequently, until wine is absorbed.
  • Add 1/2 cup broth, stirring frequently, until broth is absorbed. Working in batches, continue adding 1/2 cup broth at a time, stirring until all broth is absorbed. When done, rice should be tender and creamy. (Step 2 should take 20 to 25 minutes total.)
  • Stir Parmesan cheese, pesto, 1/4 cup parsley, and 1 tablespoon vinegar into the risotto. Keep warm.
  • Combine beans, tomatoes, and salt in a small saucepan. Cook, covered, over medium heat, until warmed through, about 5 minutes.
  • Meanwhile, in a 10-inch skillet, bring 4 cups water and the remaining vinegar to a boil. Reduce heat and simmer (bubbles should begin to break the surface of the water). Break an egg into a custard cup. Hold the lip of the cup close to water and slip egg into water. Repeat with remaining eggs. Simmer, uncovered, 3 to 5 minutes or until whites are completely set and yolks begin to thicken but are not hard. Use a slotted spoon to remove from skillet.
  • Serve risotto topped with tomato-bean mixture, poached eggs, and remaining parsley. Sprinkle with pepper.

50g butter, plus 2 knobs more
1 small onion, finely chopped
250g courgette, 140g coarsely grated, the rest diced
175g risotto rice
zest and juice 1 lemon
1.2l vegetable (or chicken) stock, kept hot on a low heat
25g parmesan (or vegetarian alternative), grated
2 heaped tbsp mascarpone
splash of olive oil
1 heaped tbsp toasted pine nuts

Steps:

  • Melt the butter in a sturdy frying pan, add the onion and gently fry until softened. Stir in the grated courgettes and rice, increase the heat and sizzle while stirring for 1-2 mins.
  • Add the lemon juice and a ladle of hot stock, and bubble over a medium-high heat while stirring constantly. When the liquid has just about been absorbed, add another ladleful of stock. Keep cooking like this for 20-25 mins until the rice is just tender and is creamy. Stir in the Parmesan, mascarpone and some seasoning, cover with a lid or baking sheet, and set aside for 5 mins while you cook the remaining courgettes.
  • Heat the remaining butter and a splash of oil in a small frying pan. Add the diced courgettes, and fry over a high heat for 2-3 mins until golden and just softened. Divide the risotto between shallow bowls or plates, then scatter with the diced courgettes and any buttery juices, the pine nuts and a few pinches of lemon zest.

500g pack penne
5 courgettes , grated
2 tbsp olive oil , plus a little extra
2 garlic cloves , crushed
1 onion , finely chopped
500g pot crème fraîche
25g parmesan (or vegetarian alternative), finely grated
small bunch basil , reserve a few leaves for garnishing
85g chunk ciabatta
handful toasted pine nuts , plus a few extra for sprinkling

Steps:

  • Slightly undercook the pasta, then drain, reserving a ladleful of cooking water. Rinse the pasta with cold water to cool. Drain again, toss in a little oil to stop it sticking together and set aside while you get the rest of the bake ready.
  • Fry the courgettes in oil for about 10 mins to drive off most of the liquid; they should reduce down a lot. Add the garlic and onion to the pan, cook for 2 mins more, then season really well and add to the pasta. Stir in most of the crème fraîche and half the Parmesan with seasoning, then tip into an ovenproof dish. Dollop the rest of the crème fraîche over the top.
  • Heat oven to 180C/160C fan/gas 4. Whizz nearly all of the basil, remaining cheese, bread and pine nuts together to make pesto crumbs, then scatter all over the top. Finish with a few more pine nuts. Bake for 20 mins until the topping is crisp and bubbling at the edges. Serve with a few more basil leaves scattered over.

1 tbsp olive oil
100g cold butter , diced
1 small onion or 2 shallots, chopped
175g risotto rice
100ml white wine
600ml hot vegetable stock
50g parmesan or vegetarian alternative, finely grated
200g fresh peas , podded (about 1kg/2lb 4oz unpodded weight)
200g broad beans , podded (about 1kg/2lb 4oz unpodded weight)

Steps:

  • Heat oil and 25g of the butter in a large pan over a medium heat. Add the onion and cook until soft and translucent, about 4-5 mins. Stir in the rice and cook for a further 2 mins. Turn up the heat and add the wine, let it bubble to evaporate the alcohol.
  • Once the wine has reduced, begin adding the hot stock a ladle at a time over a medium heat, allowing each addition to be absorbed before adding the next and stirring continuously. The rice should always be moist, but not swimming in liquid. The process of adding and stirring should take about 16-20 mins, depending on what kind of risotto rice you use.
  • Bring a pan of salted water to the boil and blanch the peas and beans for 2-3 mins. Drain and set aside. Remove the risotto from the heat and stir in the remaining butter, Parmesan, peas and beans with some seasoning before serving.
