- Combine smoked sausage, potatoes, onion, bell pepper and water in a large pot.
- Cover and simmer over medium heat 15 to 25 minutes, stirring occasionally, until potatoes are soft.

- Put potatoes in the bottom of the slow cooker. Sprinkle with salt and pepper. Add remaining ingredients. Cover and cook on low for 8 to 10 hours.

Steps:
- 1. Cook bacon slowly with just a dab of crushed red pepper. When about half done, drain bacon & pour off some of the grease.
- 2. Put bacon back into the pan with diced sweet potatoes & salt & pepper to taste. (Can also use Morton's Natures Seasoning! This is what I use to season almost every thing I cook!)
- 3. Add a bit of water & cook, covered until almost done. Add onions & cook until soft. ENJOY!
