SCALLOPED POTATOES AND COUNTRY HAM

3 tablespoons unsalted butter
1 medium onion, diced
3 tablespoons all-purpose flour
2 cloves garlic, minced
Kosher salt and coarsely ground black pepper
1/2 to 1 teaspoon cayenne pepper
1 teaspoon mustard powder
2 cups goat's milk or regular milk
1/2 pound country ham, thinly sliced
1 1/2 pounds red potatoes, sliced 1/4-inch-thick on a mandoline (about 5 cups)
1 1/2 cups grated Gruyere
Sliced green onions, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch flameproof baking dish with cooking spray.
  • In a skillet over medium heat, melt the butter. Add the onions and saute until translucent, 3 to 4 minutes. Add the flour and stir until combined. Cook 1 to 2 minutes to remove the raw flour taste. Add the garlic, 1 teaspoon salt, 1 teaspoon pepper, the cayenne and mustard powder. Whisk in the milk. Allow to cook and thicken slightly, about 3 minutes. Remove from the heat.
  • Line the baking dish with a crisscrossed layer of country ham, then a layer of slightly overlapping potatoes, then about 2/3 cup sauce. Repeat the layering until all the ingredients are used. You should have a total of 3 sets of layers, ending with the sauce on top. Top with the Gruyere and cover with foil. Bake until the potatoes are tender, about 1 hour.
  • Remove the foil and spoon off any fat that has pooled in the baking dish, if needed. Switch the oven to broil and broil until light golden brown, 3 to 5 minutes. Garnish with green onions before serving.

2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4-inch sliced baked ham
2 cups grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
  • In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
  • Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

1 1/2 pounds small new potatoes (as close to the same size as possible)
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
3 ounces thinly sliced country ham, diced (see Cook's Note)
1 medium onion, diced
1 red bell pepper, diced
1 teaspoon lemon or orange zest

Steps:

  • Place the potatoes in a large saucepan and add cold water to cover by 1 inch. Salt the water generously and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the potatoes are fork-tender, 7 to 10 minutes, depending on size. Drain and set aside.
  • Meanwhile, heat 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium heat. Add the ham and saute, stirring occasionally, until crispy, about 4 minutes; transfer to a bowl. Add the onions and red peppers to the skillet and saute, stirring occasionally, until tender, 5 to 7 minutes; transfer to another bowl.
  • While the vegetables are cooking, smash the boiled potatoes down by hand. Add the remaining tablespoon oil and the butter to the skillet. When the butter is foaming, add the potatoes in a single layer and sear until very golden brown and crispy, 2 to 4 minutes per side. Stir in the crispy ham, onion mixture and lemon zest. Add salt and pepper to taste. Serve immediately.

2 large baking potatoes
1/2 cup cubed deli ham
1/4 cup chopped sweet onion
1/4 cup chopped celery

1/4 teaspoon salt

Steps:

  • Grease a 1 1/2-quart baking dish.

1 1/4 lbs smoked ham
2 -3 tablespoons prepared mustard
4 medium potatoes, sliced
2 medium onions, sliced
1 tablespoon butter or 1 tablespoon margarine
1 dash salt
1 dash black pepper
1/2 cup chicken broth
1/2 cup half-and-half
4 tablespoons sharp cheddar cheese, grated
3 -4 tablespoons chopped fresh parsley

Steps:

  • Grease a 1 1/2 quart baking dish.
  • Saute' onion in butter until soft but not browned.
  • Place half of the potatoes in a thin layer in the bottom of the baking dish.
  • Cover with half the onion.
  • Place ham on top. spread with mustard.
  • Cover with remaining onion. Sprinkle with salt and pepper.
  • Cover with potatoes. Add broth.

1 country-cured ham (16 pounds)

Steps:

  • The afternoon before you plan to serve the ham, fill a very large kettle or pot or your sink with water. Soak ham 4 to 8 hours to lose some of the saltiness; change the water 2 or 3 times, if possible. Rinse well, and scrape off any mold or green rind.
  • Wrap ham well in aluminum foil. Place on a baking sheet. At 7 p.m. the night before you plan to serve the ham, preheat the oven to 500 degrees. Place the wrapped ham in a large roasting pan filled with 1 inch of water, and bake for 30 minutes. Turn off the oven, but do not open the door. At 10 P.M., turn the oven back on to 500 degrees. Bake the ham for 15 minutes more. Turn off the oven, but do not open the door. Leave the ham in the closed oven overnight.
  • Remove ham from the oven, then remove the aluminum foil. Using a very sharp knife, trim the rind and all the fat from the ham. Serve the ham warm or at room temperature; cut with a ham-slicing knife into very thin slivers.

10 ounces sugar-baked ham, thinly sliced (less than 1/4 inch thick)
1 package (10 ounces) frozen broccoli, thawed and squeezed dry with paper towels
1/2 cup grated cheddar cheese (2 ounces)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch-round cake pan (at least 2 inches deep). Line bottom of pan with a parchment-paper round.
  • In a large bowl, whisk together eggs and cream; season with salt and pepper. Thinly slice potatoes (less than 1/4 inch thick); drop into egg mixture.
  • Lifting potatoes out of egg mixture, arrange half the potatoes in pan. Layer with ham, broccoli, cheese, and remaining potatoes. Pour egg mixture over top. Press down firmly so that potatoes are fully submerged in egg mixture.

  • Cool 15 to 20 minutes in pan. Run a knife around edge, and carefully invert onto a plate. Peel off parchment. Reinvert, top side up. Slice with a serrated knife.

1 cup diced yellow onion
¼ cup all-purpose flour
2 cups heavy cream
2 cups whole milk
2 teaspoons boneless, skinless chicken breast, cut into 4 portions
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon freshly grated nutmeg
¼ teaspoon Worcestershire sauce
2 teaspoons chopped fresh thyme leaves
4 ½ pounds russet potatoes, peeled and sliced 1/4 inch thick
8 ounces grated sharp white Cheddar cheese
1 pound thinly sliced ham

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a pot over medium heat. Add onions and sauté with a pinch of salt until translucent, about 5 minutes. Add flour and cook, stirring, just to take off that starchy, raw edge, about 2 minutes. Pour in heavy cream and whisk to combine. Whisk in milk. Cook, stirring, over medium-high heat until it just starts to simmer and thicken up. Add 1 teaspoon salt, pepper, and cayenne. Grate in nutmeg.
  • Turn off heat. Stir in Worcestershire and fresh thyme leaves. Reserve until needed.
  • Cover the bottom of a deep 10x15-inch casserole dish with about 25% of the reserved sauce. Add a layer of sliced potatoes, seasoning the tops with some of the remaining salt as desired; ladle over 1/3 of the sauce and sprinkle over 1/3 of the grated Cheddar cheese. Layer in ½ of the sliced ham.
  • Place another layer of sliced potatoes on top and season with salt. Ladle over ½ of the remaining sauce; repeat layering with Cheddar cheese and ham.
  • Place last layer of potatoes on top. Ladle over remaining sauce and spread out with a spatula. Sprinkle over remaining Cheddar cheese.
  • Bake uncovered in the preheated oven until browned, bubbling, and potatoes are very tender, about 1 ½ hours. Let cool for 15 to 20 minutes before serving.

4 baking potatoes
4 large sweet potatoes

Steps:

  • Preheat oven to 350°F.
  • Wash and dry potatoes.
  • Prick each potato with a fork on front and back of potato.
  • Place ham in the middle of roasting pan (without rack), or on large baking or cookie sheet.
  • Surround ham with lightly buttered potatoes.
