COUNTRY BEAN SOUP W/ SAUSAGE AND CABBAGE

This hearty soup, chock full of nutritious vegetables, smoky sausage, pasta and potatoes, will bring comforting warmth on a chilly night. Or so the title states. I haven't tried this yet but it looked good and I needed a place to put it, so here it is. It came off of a lima bean package.

1 lb lima beans, cleaned and drained
2 tablespoons olive oil
4 large garlic cloves, minced
1 large onion, coarsely chopped
2 large carrots, coarsely chopped
1 1/2 teaspoons dried thyme
1 teaspoon dried rosemary, crumbled
5 cups chicken stock or 5 cups vegetable broth
4 cups water
4 cups coarsely chopped cabbage
1 lb smoked sausage, quartered lengthwise and sliced
1 baking potato, peeled and cut into 1 inch cubes
1/2 cup shell macaroni
salt and pepper

Steps:

  • In a wide 8 quart pot or dutch oven, heat 2 tbls. oil until hot.
  • Stir in garlic, onions, carrots, thyme and rosemary.
  • Saute until vegetables soften, about 10 minutes.
  • Stir in broth, 4 cups water, cabbage, lima beans, and sausage.
  • Bring to a boil, reduce heat and simmer , partially covered, for 45-55 minutes or until beans are tender.
  • Stir in potato and macaroni.
  • Simmer uncovered for 10-15 minuted or until cooked through.
  • Season to taste.

2 cups dried lima beans, soaked in water overnight
1 (16 ounce) package coleslaw mix (shredded cabbage and carrots)
1 onion, chopped
2 cloves garlic, minced,to taste
1/2 cup white wine vinegar or 1/2 cup cider vinegar
1 1/2 quarts water or 1 1/2 quarts stock
1 tablespoon chicken bouillon granule
2 teaspoons salt-free lemon pepper
2 teaspoons dried Italian herb seasoning
10 ounces cooked pasta (optional)

Steps:

  • In the morning drain beans, add new water to cover beans, and cook for 45 minutes.
  • Add all the other ingrendents, mix and and simmer for an additional 30 minutes.

I was born and raised in the south, and we eat a lot of beans. Here is a easy and basic lima bean recipe. We've been doing it this way for years. You can use ham hocks, hambones, smoked bacon or smoked sausage for the pork flavor in this dish. Also fresh, frozen or even canned beans can be used--they just won't have to cook as long.

1 (1 lb) bag regular lima beans or 1 (1 lb) bag baby lima beans
1 medium onion, chopped
2 ham hocks or 1 leftover ham bone, with some meat still on it
2 garlic cloves
1 teaspoon black pepper
salt
1 tablespoon olive oil or 1 tablespoon vegetable oil

Steps:

  • I know the bag says to soak the beans overnight, but you really don't have to.
  • Wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
  • After the beans have sat, drain the water and sit the beans to the side.
  • Add the oil to the pot and sauté the ham hocks and onions together, until onion is clear and tender, add garlic and sauté about 2 minutes more. Add the beans and cover with water.
  • Add pepper and salt--only about 1 teaspoon of salt at first.
  • Bring to a boil; stir, reduce heat and cover and simmer for about 2 hours.
  • Keep checking the water level and stirring every once in a while. Add more water if needed, but not too much.
  • Just enough to keep about 1 inch of water above the beans as they cook.
  • Cook until beans are tender, adding more salt if needed. The water will turn into a wonderful gravy. Serve over rice.

This is similar to a stuffed cabbage soup, with beans substituting for the rice. I am on the South Beach Diet and this soup can be eaten on Phase I of the plan. It's very tasty and easy to prepare. Even if you are not watching your carb/sugar intake, it's a healthy good for you soup. This recipe originated from The Good Carb Cookbook.

1 lb ground beef, lean
2 cans beef broth
1 (14 1/2 ounce) can Italian stewed tomatoes, undrained
1 cup onion, chopped
4 cups cabbage, shredded fine
1 (15 ounce) can red kidney beans, drained
1 teaspoon thyme
1/8 teaspoon black pepper
1 bay leaf

Steps:

  • Spray inside of a large size dutch oven pot with non stick cooking spray; add ground beef.
  • Cook beef over medium heat until it's crumbly and no longer pink.
  • Add beef broth, tomatoes, onion, thyme, pepper and bay leaf.
  • Bring to a boil over high heat; cover and simmer for about 15 minutes.
  • Add cabbage and beans, turn heat up to high and bring to a boil.
  • Cover and simmer on low heat for 20 minutes.
  • Remove bay leaf and serve.

2 smoked ham hocks
8 cups water
5 cups shredded cabbage
½ cup butter
1 ½ teaspoons salt
¾ teaspoon ground black pepper
¾ teaspoon garlic powder
1 (28 ounce) can diced tomatoes
1 pound smoked sausage, sliced

Steps:

  • In a large pot, combine the lima beans, ham hocks, water, cabbage and butter. Season with salt, pepper and garlic powder. Bring to a boil, then reduce heat to low and set a lid on top but leave a crack for steam. Simmer for 1 1/2 hours. Remove the lid, add the tomatoes and sausage; simmer with the lid on until beans are completely tender, 15 to 20 minutes.

3 cups shredded green cabbage
1 onion, thinly sliced
1 (28 ounce) can crushed tomatoes or 1 (28 ounce) can tomato puree
6 cups vegetable broth
1 teaspoon ground cumin

1 cup lima beans, fresh or frozen

Steps:

  • In a large Dutch oven, heat the oil over medium heat.
  • Add in the cabbage and onion; cook, stirring frequently, for 10 minutes or until golden.

MOM'S CABBAGE SOUP

On rainy days, I often want comfort food-something to warm my belly and my soul! This very easy cabbage soup recipe is something my mother would make for me on days just like this. Her version has a ham hock, but you can use kielbasa instead, or go no-meat, the way I did.

2 tablespoons olive oil
1 large onion, chopped
4 stalks celery, chopped
1 cup chopped carrots (from 4 medium carrots, peeled)
2 cloves garlic, minced
Kosher salt and freshly ground pepper
Crushed red pepper flakes
Handful fresh cherry tomatoes, halved (about 10 small cherry tomatoes)
One 28-ounce can diced tomatoes
64 ounces vegetable stock (2 quarts) (8 cups), plus more if desired
1 medium head cabbage, cored and chopped (about 1 3/4 pounds)
One 15-ounce can cannellini beans, drained and rinsed
1/2 cup chopped fresh flat-leaf parsley
1 loaf your favorite French bread, sliced on the diagonal
Olive oil, for brushing and drizzling
Minced garlic, for topping (optional)
Flaky or crystal sea salt, for sprinkling

Steps:

  • For the soup: Heat the olive oil in a stockpot over medium heat. Add the onion, celery, carrots and garlic and cook, stirring often, until the onions are translucent (not browned), about 8 minutes. Add salt, black pepper and crushed red pepper flakes to your desired preference. Then stir in the fresh tomatoes, canned tomatoes and vegetable stock and bring the entire mixture to a boil.
  • Once boiling, stir in the cabbage and beans and keep it simmering, stirring occasionally, until the cabbage is tender, 35 to 40 minutes. Add more stock or water if you prefer more liquid and taste and season with more salt and pepper, if necessary. When finished, sprinkle over and stir in the parsley for color and flavor.
  • Ladle the soup into bowls and serve with crostini or garlic bread, if desired.
  • For the crostini: Preheat your oven to 350 degrees F.
  • Place the bread slices on a baking sheet. Brush the tops with olive oil. You can also smear minced garlic over the top, if desired.
  • Bake until crunchy and golden brown, 15 to 20 minutes. Take the crostini out of the oven, drizzle the tops with olive oil and sprinkle sea salt over the top.

1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
  • Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
  • Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
  • Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

1 onion, chopped
1 tsp chopped fresh marjoram
1 garlic clove, mnced
1/2 tsp crushed red pepper
