A real down home recipe and so simple. i can never find green tomatoes but use less ripe ones..serve with eggs on the side.

4 -6 tablespoons butter or 4 -6 tablespoons oil, for frying
4 slices country ham, about 1/2 inch thick
2 -3 green tomatoes, cored, sliced 1 1/2 inch thick, and soaked in milk
all-purpose flour, seasoned with
salt & freshly ground black pepper
1 pinch sugar
reserved cooking fat
1/3 cup all-purpose flour
2 cups milk
salt & freshly ground black pepper, to taste

Steps:

  • Melt 4 tablespoons of the butter in a heavy skillet and sauté the ham slices about 3 minutes on each side. Remove the ham to a heated platter and keep warm.
  • Drain the tomatoes and dust them with the seasoned flour. Add more butter to the pan if necessary and fry the tomatoes 3 minutes on each side or until tender, sprinkling each side with a little sugar. Remove and drain on paper towels, then arrange on the platter with the ham.
  • While the tomatoes are cooking, make the gravy:Pour off all but 3 tablespoons of the cooking fat. Stir in the flour and cook, stirring, for 1 to 2 minutes. Slowly whisk in the milk. Stir constantly until thickened, about 4 to 5 minutes. Season with salt and pepper.
  • Pour the gravy over the ham and tomatoes and serve immediately.

2 tablespoons butter
6 ounces country ham or 6 ounces smoked ham, diced
1 small onion, diced
2 garlic cloves, minced
4 cups chicken broth
8 medium green tomatoes, peeled and chopped
2 medium tomatoes, peeled and chopped
1 jalapeno pepper, seeds and stem removed, minced
1/4 teaspoon celery salt
1 dash Tabasco sauce (optional)
salt and pepper, to taste

Steps:

  • Heat butter in a medium saucepan over medium-low heat; add ham, onion, and garlic. Sauté, stirring, until onion is tender. Add chicken broth, chopped green and red tomatoes, and minced jalapeno pepper. Bring to a boil; reduce heat and simmer for about 30 minutes.
  • Working in batches, pulse in a blender or food processor until almost smooth. Pour back into the saucepan and add celery salt. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes. Taste and add salt and pepper and Tabasco sauce, as desired.

Though fried green tomatoes are commonly thought of as a Southern staple, they were actually an invention of 19th-century Northern farmers who would pick the remaining green tomatoes from their vines before first frost.

4 large, firm green tomatoes, cut crosswise into 1/2-inch-thick slices
Coarse salt and freshly ground pepper
1 cup yellow cornmeal, preferably stone ground
1/2 teaspoon bittersweet pimenton (smoked Spanish paprika), optional
2 large eggs
1/2 cup vegetable oil, for frying

Steps:

  • Season tomatoes with salt and pepper. Mix together cornmeal and pimenton in a bowl. Lightly beat eggs in another bowl.
  • Heat oil in a skillet over medium heat. Dip tomatoes in egg, and dredge in cornmeal mixture. Working in batches, fry tomatoes in a single layer until golden brown, about 3 minutes per side. Let drain on a paper-towel-lined plate.
