- In a small saucepan, heat bouillon and water for 1 minute; stir well. Stir in the salt, garlic powder, pepper and 1 teaspoon oil., In a large nonstick skillet or wok, stir-fry the broccoli, carrots, onion and celery in remaining oil for 2-3 minutes. Add the bouillon mixture; cook and stir for 3 minutes. Add zucchini and red pepper; stir-fry for 3 minutes. Add mushrooms and cabbage; stir-fry 1-2 minutes longer or until crisp-tender.

This vegetable dish is so easy and so good. It can be made early and baked later. You can also double this recipe and bake in a 9x13 inch baking dish.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook vegetables according to package directions; drain. In a large bowl combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Transfer to a deep pie plate.
- Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and fried onions; bake 5 minutes longer.

- Cut Yukon Gold, red and purple potatoes into 1/4-in. cubes. In a large cast-iron or other heavy skillet, heat butter and oil over medium heat. Add cubed potatoes; cook and stir 5 minutes., Peel and cut sweet potato into 1/4-in. cubes; add to skillet. Add remaining ingredients; cook and stir until potatoes are tender, 10-12 minutes.

- Place Hatch chiles directly on the grates of a gas stove over medium heat. Cook, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and slice chiles.
- Slice potato using a mandoline.
- Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry undisturbed until starting to brown and soften, 8 to 12 minutes. Add onion slices and chiles. Season with seasoned salt and black pepper. Stir to combine. Cook until onions are translucent and potatoes are fully softened and browned on the second side, 5 to 8 minutes.

- 1. Wash, peel and cut up potatoes. Place in microwave-safe bowl and cover with water. Add about 1/2 to 1 teaspoon salt. Microwave on high for about 8 minutes. Drain well.
- 2. Heat oil in frying pan (I love my cast iron). Add drained potatoes to hot oil and fry for about 5 min or until golden brown. Turn and fry on other side until golden. Add salt and pepper to taste, serve hot.
- 3. These potatoes make an excellent side dish at dinner time or at breakfast time with eggs and your favorite breakfast meat or you can smother them in gravy. So much faster and easier and no matter how you serve them, these potatoes are scrumptious! You could also add onion, seasoned salt, green peppers or anything else that you like.
AIR FRYER VEGGIE CHIP MEDLEY
Sweet, earthy beets and crispy, salty potatoes come together in this easy air-fryer chip medley that's inspired by the favorite store-bought variety. It will take a couple batches to complete, but the final result is a super satisfying snack you can enjoy any time of the day.

- Thinly slice both potatoes on a mandoline, about 1/16 inch thick. Transfer to a medium bowl and run under cold water until almost all the white starch comes off and the water runs clear. Dry well between a few paper towels. Dry the bowl as well.
- Return the dry potatoes back to the bowl and toss with 1 tablespoon of the oil, 1/2 teaspoon salt and a few grinds of pepper until evenly coated.
- Preheat a 3.5-quart air fryer to 320 degrees F. Shingle the potatoes in the bottom of the basket; it's okay if there are two layers. Cook until the potatoes are golden around the edges and crisp, tossing every 5 minutes with tongs so they're evenly cooked, 20 to 25 minutes. If you notice a few slices are finished cooking and completely crisp before others, remove to a bowl and continue air frying the remaining pieces.
- Meanwhile, thinly slice both beets on the mandoline, about 1/16 inch thick. Transfer to another medium bowl and toss with the remaining 1 tablespoon oil, 1/2 teaspoon salt and a few grinds of pepper until evenly coated.
- Return the air fryer to 320 degrees F. Shingle the beets in the bottom of the basket; it's okay if there are two layers. Cook until the beets are darkened around the edges and crisp, tossing every 5 minutes so they're evenly cooked, about 30 minutes. If you notice a few slices are finished cooking and completely crisp before others, remove to a bowl and continue air frying the remaining pieces.
- Combine the beet chips and potato chips in a large bowl, season with a pinch of salt and toss to combine. Serve immediately or let cool and store in an airtight container for up to 2 days.
COUNTRY STYLE FRIED POTATOES
These fried potatoes are the perfect companion for bacon and eggs. You may use oil instead of shortening if you wish.

Ok every now and then We want some home cooked Comfort Foods and this is one of my favorites It's Pan Fried Country style potatoes blended with Veggies and smothered in a White Gravy. mmm it's what the soul needs every now and then and it's so good with sausages or country style meats Enjoy Good Food!!

- Get out a large skillet with a lid for this recipe.
- First wash your veggies. We like to leave the skin on most of the veggies, you can peel if you like or not. Some of ours are slightly peeled in this recipe today, and dice up everything.
- Heat your skillet up with your olive oil and get it nice and hot.
- Once oil is hot, throw in all your veggies, in the skillet and brown nicely about 10 minutes or so, add seasonings now.
- Once everything has a nice browned look put the lid on the skillet and let it cook about 20 minutes, this all depends on how small your veggies are diced, larger cooks a little longer, also your stove temperatures can vary on heat quality so it's hard to say exactly. We like ours a little nice brown and tasty.
- This is so good served with white country style gravy over it.
