We like to eat healthy when we can without sacrificing taste. This is our way of indulging once in while. It also works great to make ahead for company!!

1 lb cinnamon raisin bread, cubed
3/4 c dried cranberries
1 pt egg substitute
4 c skim milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 pkg al fresco country style chicken breakfast sausage, sliced into rounds
confectioners' sugar

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
  • 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
  • 3. Pour the egg mixture over the bread cubes.
  • 4. Stir and press the bread cubes into the egg mixture to coat.
  • 5. Refrigerate for 1 hour or overnight.
  • 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

BREAKFAST STRATA WITH COUNTRY SAUSAGE

1 tablespoon canola oil, plus more for the dish
1/2 pound bulk pork or turkey country sausage
1 onion, preferably Vidalia, chopped
1 red bell pepper, cored, seeded and chopped
1 yellow bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
2 baguettes, cubed
1/2 cup grated Parmigiano-Reggiano cheese (about 1 1/2 ounces)
6 large eggs
2 1/2 cups whole milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground black pepper

Steps:

  • Brush a large gratin dish with some of the oil.
  • To cook the sausage, in a large skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sausage and cook until it begins to brown, 3 to 5 minutes. Add the onion and red and yellow bell peppers and saute until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
  • To assemble the strata, place half of the bread cubes in the prepared gratin dish and top with half of the sausage mixture. Sprinkle 1/4 cup of the grated cheese over the sausage mixture and top with the remaining bread cubes and sausage.
  • Whisk together the eggs, milk, sage, and parsley in a medium bowl. Season with salt and pepper. Pour the custard over the strata. Cover with plastic wrap and refrigerate for at least 3 hours and up to 12 hours.
  • Preheat the oven to 350°F. Let the chilled strata stand at room temperature for 20 minutes.
  • Bake the strata for 30 minutes. Remove from the oven and sprinkle with the remaining 1/4 cup cheese; continue baking until the strata is puffed and golden brown, an additional 20 to 25 minutes. (If the top of the strata starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.

1 teaspoon dry mustard

Steps:

  • Mix meat and seasonings together.
  • Shape into 12 patties.
  • Spray skillet with non-stick spray.
  • Brown patties on each side.
  • Add a few tablespoons water to pan, cover to reserve moisture, and cook till done.
  • NOTE: Use this recipe in place of pork sausage for a healthier sausage stuffing for your turkey.

1 (10 ounce) package mini 8-inch baked pizza crusts (such as Boboli®)
¼ cup sage pork sausage
2 tablespoons butter, divided
1 tablespoon all-purpose flour
¼ cup half-and-half
½ teaspoon ground black pepper
¼ teaspoon salt
⅛ teaspoon onion powder
3 large eggs
3 tablespoons shredded Swiss cheese
3 tablespoons shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pizza crusts on a baking sheet.
  • Bake in the preheated oven until lightly browned, about 5 minutes. Remove from oven and leave oven on.
  • Heat a large skillet over medium-high heat. Cook and stir sausage until browned, 5 to 7 minutes. Remove sausage with a slotted spoon; drain on a paper towel-lined plate.
  • Reduce heat of skillet to medium-low. Melt 1 tablespoon butter in the skillet. Add flour; stir until dissolved to make a roux, about 1 minute. Add half-and-half; stir to remove browned bits from bottom of the skillet. Cook and stir until thick, about 2 minutes. Season gravy with pepper, salt, and onion powder.
  • Return the drained sausage to the skillet; stir to coat with the gravy. Remove from heat; divide sausage gravy evenly over the pizza crusts.

This recipe will make 1Andfrac12;-2 gallons of gravy! Feed a crowd or stock your freezer. Be sure you have a large pan and plenty of milk. This is one recipe you need to read all the way through before starting. I freeze in 1 or 2 cup portions and also freeze prebaked biscuits, for a quick meal.

1 lb ground country sausage
1 1/2 cups shortening
2 1/2 cups flour (all purpose)
1 1/2 gallons milk
1 (10 ounce) can evaporated milk
2 teaspoons salt
1 teaspoon coarse black pepper
1/2 teaspoon onion salt
1 teaspoon celery salt
1 1/2 teaspoons Kitchen Bouquet

Steps:

  • You will need a very large pot to make this gravy.
  • Put sausage into pot, add 1-2 quarts of water.
  • Stir to break meat up very fine while bringing to a boil.
  • When cooked through, strain the water off of the meat.
  • Return meat to the pan and add shortening; brown the meat till it starts to look crispy.
  • Add flour and cook until flour is browned, stir often so you don't let it burn (use low heat).
  • Add seasonings.
  • Using large whisk stir the first gallon of milk into the flour and turn up heat,while remaining to stir constantly.
  • Once it thickens, add the kitchen bouquet and the can of evaporated milk.
  • Stir to mix and bring to a boil.
  • Next you may add the other half gallon of milk as you need it, to get your gravy to the consistency that you like. (Remember, gravy must come to a boil before you know how thick it is or isn't going to be).
  • If after all your milk has been added, its still too thick, then add a bit of water and bring it back to a boil.
  • Add liquid to thin gravy a little bit at a time.
  • It is easier to thin than to rethicken properly.
  • Once it is to the consistency you like and has come to a boil again,then it's done.
  • Taste to see if it needs more salt.
  • Adjust if need be and serve over biscuits, toast, fried potatoes or mashed potatoes.
  • To freeze cool completely then package and freeze.
  • Will keep 3-6 months in freezer.

I saw those mini single serving Boboli shells in the store and for some reason this recipe just popped into my head. It's one of my husbands favorite weekend breakfasts.

1 pkg (contains 2) 8" mini boboli shells
1/4 c sage sausage roll
3 eggs, beaten
1/4 c half and half
3 Tbsp shredded swiss or guyere cheese
2 Tbsp butter, divided
2 tsp flour
1/8 tsp onion powder
1/4 tsp salt
1/2 tsp black pepper

Steps:

  • 1. Preheat oven to 400 Place pizza crusts on a baking sheet and cook for 5 minutes, remove from oven and set aside.
  • 2. Heat a medium size skillet to medium-high heat and crumble sausage and cook until browned. Remove sausage with slotted spoon and place on a plate with a paper towel to drain.
  • 3. Reduce heat on pan to medium-low Add 1tbs butter and melt Add flour and stir until melted to make a rue
  • 4. Add half and half and stir to remove browned bits from bottom of skillet, stir until thick
  • 5. Add salt and pepper and onion powder and stir
  • 6. Add drained sausage back to pan and coat the sausage with the gravy
  • 7. Remove from heat and divide evenly over pizza crusts
  • 8. Heat a small non-stick pan over low heat, and melt in 1tbs butter then scramble the eggs. Remove from heat and divide evenly over pizza crusts.
  • 9. Top with shredded cheeses. Place back in the heated oven for 3-4 minutes or until cheese is melted.
