1 whole wheat tortilla
1/2 cup cucumber
1/4 avocado
1/2 cup carrot
1 cup lettuce or 1 cup mixed greens

Steps:

  • Shred lettuce and slice avocado, cucumber and carrots.
  • Mix cottage cheese and salsa. Place cottage cheese mixture in tortilla.
  • Top with remaining ingredients. Fold contents into a wrap.

1 1/2 cups fat-free cottage cheese
1 cup tomatoes, diced
1 cup yellow bell pepper, diced
1/4 cup green onion, diced
1/2 cup carrot, shredded
1/4 cup fresh basil, chopped
1 tablespoon lemon juice
1/2 teaspoon garlic salt
black pepper
4 leaves butter lettuce or 4 leaves romaine lettuce

Steps:

  • Combine cottage cheese, tomatoe, yellow pepper, carrots, green onions and basil.
  • Add lemon juice and seasonings. Toss to blend.
  • place leaf lettuce on a tortilla and top with about 1 cup of cottage cheese and veggie blend.
