4 eggs
1 1/2 cups small curd* cottage cheese
3 tablespoons pure maple syrup, plus more for serving
1 teaspoon vanilla extract
3/4 cup all purpose flour
1/2 tablespoon baking powder
1/4 teaspoon kosher salt

Steps:

  • In a medium bowl, whisk the eggs, cottage cheese, maple syrup and vanilla (if you see very large clumps of cottage cheese, try to break them up or smash them with a fork).
  • In another bowl, whisk the flour, baking powder and salt. Add it to the bowl with the wet ingredients and mix until a smooth batter forms.
  • Heat a non-stick skillet or griddle over medium heat, then add a bit of butter to coat. Scoop out 1/4 cup portions of batter and cook the pancakes until golden brown on one side, adjusting the heat so it doesn't brown too fast. Flip and cook until cooked through and no longer gooey at the edges (the batter will ooze out a bit at the sides; just keep cooking until it is fully cooked, adjusting the heat as necessary so it doesn't brown too fast). Place the pancakes in a stack under an overturned bowl, and cook the second batch of pancakes.
  • Serve immediately, topped with pure maple syrup.

This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

1 pound shredded Cheddar cheese
1 teaspoon minced onion
2 jalapeno peppers, seeded and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8x8 inch baking pan.

2 tablespoons butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Cheddar cheese
2 (10 ounce) packages frozen chopped spinach
1 tablespoon minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
  • In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.

2 large eggs or 1/2 cup egg substitute
6 tablespoons whole wheat flour
1 (10 ounce) package frozen chopped spinach, thawed
2 cups low fat cottage cheese
2 cups low-fat cheddar cheese
1/2 teaspoon black pepper, fresh ground
1/8 teaspoon cayenne pepper
1/8 teaspoon nutmeg
3 tablespoons wheat germ

Steps:

  • In a large bowl beat the eggs with the flour until the mixture is smooth.
  • Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients will. Pour mixture into a nonstick coated 13/9/2-inch baking pan.

1 cup sugar
2 large eggs, room temperature
1/2 cup plain yogurt

2 tablespoons sugar

Steps:

1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1 can (6 oz) tomato paste
2 cups shredded mozzarella cheese (8 oz)
1/2 cup small-curd cottage cheese
1/4 cup shredded Parmesan cheese (1 oz)
2/3 cup Original Bisquick™ mix
1 cup milk
2 eggs
Cherry tomatoes, quartered, if desired
Fresh basil leaves, if desired

Steps:

  • Heat oven to 400°F. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in oregano, basil, tomato paste and 1/2 cup of the mozzarella cheese.
  • Spray 8-inch square (2-quart) glass baking dish with cooking spray. Layer cottage cheese and Parmesan cheese in baking dish. Spoon beef mixture evenly over top of cheese.
  • In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into dish.
