1 (16 ounce) carton 2% fat cottage cheese
4 egg whites, beaten
1/4 cup ketchup
1 (1 ounce) envelope dry onion soup mix
1 cup walnuts, finely chopped
3 cups corn flakes
1/4 cup onion, finely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain the cottage cheese in a cloth or coffee filter lined strainer.
  • Grease a loaf pan.
  • In a large bowl, combine cottage cheese, eggs, ketchup, soup mix, walnuts, cereal and onion.
  • Spoon into prepared pan.
  • Bake for 60 to 70 minutes.
  • Let the 'roast' rest for 5 to 10 minutes; turn out onto serving platter.

1 (1 ounce) envelope dry onion soup mix
1 cup finely chopped walnuts
1 1/2-2 1/2 cups corn flakes (I use Special K Whole Grain)
1/4 cup chopped onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a loaf pan.
  • In a large bowl, combine cottage cheese, eggs, vegetable oil, soup mix, walnuts, cereal and onion.
  • Spoon into prepared pan.
