DJ'S COTTAGE CHEESE PUDDING

This an old Amish Recipe that my Mother passed down to me. She made it often and it was enjoyed by all! It has a hint of lemon and almond flavor! It is usually baked in small (4") baking dishes, however, it can also be used for pie fillings. The flavors are more prevalent after a day or so of cooling. Hope you enjoy!

Number Of Ingredients 10

2 cups small curd cottage cheese
3 eggs
3 tablespoons white flour or 3 tablespoons whole wheat flour
3/4 cup white sugar
1 teaspoon lemon juice
1/2 teaspoon salt
1 (12 ounce) can evaporated milk
1 1/2 cups low-fat milk
1 teaspoon vanilla
1/2 teaspoon almond extract

Steps:

  • Allow cottage cheese to drain well!
  • In a large bowl, combine cottage cheese, sugar, flour, lemon juice, salt, eggs, evaporated milk, regular milk, vanilla, and almond extract. Mix well!
  • Pour into 4" baking dishes. Makes 5.
  • Preheat oven to 350 deg. Bake for 1 hour. Test with knife.
  • Let cool! Then enjoy!

This is a nice and easy way to serve oatmeal. It's very moist and tasty, even my children love to eat this one. Use other dried fruits for a different taste. This recipe comes from a local Toronto paper, yeeeeears ago.

2 1/4 cups quick-cooking oatmeal, uncooked (2 3/4 cups old-fashioned)
3/4 cup firmly packed brown sugar
3/4 cup raisins or 3/4 cup dried cranberries
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 1/3 cups skim milk
1/2 cup egg substitute or 2 -3 eggs, beaten
1 tablespoon vegetable oil
1 tablespoon vanilla

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine oats, brown sugar, raisins, cinnamon and salt, mix well.
  • In another bowl, combine milk, egg substitute, oil and vanilla and mix well.
  • Add the dry and wet ingredients together and mix well.
  • Pour into an 8"x8" greased baking dish and bake for 55-60 minutes or until centre is set and firm to the touch.
  • Remove from oven and cool slightly.
  • Serve with milk or yogurt and fruit.
  • Enjoy!
