Delicious salad that tastes like the III Forks salad (if you live in the Dallas area). It's an excellent salad that everyone will love, and it's very easy to make!

¼ cup sliced almonds
1 tablespoon white sugar
1 head red leaf lettuce, torn
3 green onions, chopped
1 Granny Smith apple, cored and chopped
1 avocado - peeled, pitted, and chopped
½ cup dried cranberries
¼ cup crumbled blue cheese
2 tablespoons red wine vinegar
2 teaspoons white sugar
salt and pepper to taste
¼ cup vegetable oil

Steps:

  • Place the almonds and 1 tablespoon of sugar in a small skillet over medium-low heat, and cook and stir until the sugar melts and the almonds brown, watching carefully to avoid burning. Remove from heat and allow to cool.
  • In a large salad bowl, mix the lettuce, green onions, apple, avocado, dried cranberries, blue cheese, and cooked almonds.
  • Whisk together the vinegar, 2 teaspoons of sugar, and salt and pepper in a bowl, and stir in the vegetable oil. Pour the dressing over the salad, and gently toss to combine.

I first enjoyed this salad at a church potluck and has since become a Thanksgiving tradition at my house. I've made some adjustments to the original recipe to please my vegetarian friends, but you can add cooked chicken. 1/2 cup sliced almonds
3 tablespoons sugar
4 cups torn leaf lettuce
4 cups torn romaine
2 celery ribs, chopped
4 green onions, chopped
1/4 cup dried cranberries
1 can (11 ounces) mandarin oranges, drained
1 medium apple, chopped
VINAIGRETTE:
1/4 cup canola oil
2 tablespoons sugar
2 tablespoons rice vinegar
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup crumbled blue cheese, optional

Steps:

  • In a small heavy skillet over medium-low heat, stir almonds and sugar until sugar is melted and almonds are coated. Cool on waxed paper. Break apart and set aside. , In a large bowl, combine the lettuce, romaine, celery, onions and cranberries. Add oranges and apple., In a small bowl, whisk the oil, sugar, vinegar, parsley, salt and pepper. Drizzle over salad; toss to coat. Sprinkle with almonds and blue cheese if desired.

1/2 teaspoon pepper
1/2 cup olive oil
1 tablespoon parsley
2 tablespoons rice vinegar
2 tablespoons sugar
1/2 head romaine lettuce, chopped
1/2 head green leaf lettuce, chopped
1 cup celery, chopped
4 green onions, chopped
11 ounces mandarin oranges, can, drained
1 avocado, chopped
1 apples or 1 pear, chopped
1/4 cup dried cranberries
1/2 cup almonds, candied
1/2 cup blue cheese, crumbled
3 ounces chicken, shredded (optional)

Steps:

  • Mix salt, pepper, olive oil, parsley, rice vinegar and sugar. Set aside.
  • Place in large bowl romaine lettuce, green leaf lettuce, celary, onions, oranges, avocado, apple or pear, cranberries, almonds, blue cheese, and if using chicken.
  • Toss dressing and salad together and enjoy.

1 head iceberg lettuce, washed,patted dry,and torn into pieces
1/2 cup diced green bell pepper
1/2 cup diced celery
1 cup frozen green pea, thawed,uncooked
2 (16 ounce) cans sliced water chestnuts
3 bananas, sliced,tossed with
1/4 cup lemon juice
3/4 cup raisins
3/4 cup walnuts or 3/4 cup salted peanuts
1 cup grated cheddar cheese
3/4 cup chopped green onion, green part only
10 -12 slices bacon, cooked until crisp,chopped
2 cups mayonnaise
1/4 cup sugar
1 tablespoon white vinegar

Steps:

  • In a large rectangular dish, layer salad ingredients in the order listed, stopping after the nuts.
  • Mix dressing ingredients and let stand for 5 minutes.
  • Spread dressing over entire top of salad, covering it completely.
  • Sprinkle cheese, green onions, and bacon over salad.
  • Refrigerate for 3 to 4 hours before serving.

1/2 half head green leaf lettuce
1/2 head romaine lettuce
1 cup chopped celery
4 green onions
11 ounces canned mandarin oranges
1 avocado
1/4 cup dried cranberries
1 apple dices with skin
1/2 cup crumbled blue cheese
3 cooked and shredded chicken breasts halves

Steps:

  • Prepared candied almonds by melting 3 tablespoons sugar in a large frying pan with the sliced almonds, stirring continuously over medium heat until almonds are coated. Don't let sugar burn. Remove immediately from pan and cool on foil - you will need to break almonds into smaller pieces. Mix all salad ingredients and candied almonds into a large bowl. Toss with dressing and server immediately. You can prepare everything for the salad in advance except apple and avocado.

4 green onions, diced
1 11 oz can mandarin oranges
1 avocado, chopped
1 apple, diced
1/4 C dried currants
1/2 C blue or feta cheese
Optional: 3 cooked chicken breasts, diced or sliced
CANDIED ALMONDS
1/2 C sliced almonds
3 T sugar
SALAD DRESSING
1/4 C oil
1 T parsley
2 T sugar
2 T white wine vinegar
1/2 t salt & pepper

  • 1. Chop all ingredients. Save the apples & avocados until right before serving to preserve color. 2. Candy the almonds by cooking for a few minutes in a skillet until toasted. 3. Mix dressing & toss right before serving. Enjoy!

1 head iceburg lettuce, torn into pieces, washed and patted dry (or use salad spinner)
1/2 c green bell pepper, diced
1/2 c celery, diced
1 c frozen peas, thawed
2 can(s) sliced water chestnuts (8oz a piece)
3 bananas, sliced, tossed with 1/4 cup lemon juice
3/4 c golden raisins
3/4 c walnuts, chopped
1 c grated chedder
3/4 c green onion, chopped (green part only)
10-12 slice bacon, cooked and chopped (or 1 pack oscar meyer bacon bits)
DRESSING INGREDIENTS
2 c mayonnaise
1/4 c sugar
1 Tbsp white vinegar

Steps:

  • 1. Layer salad ingredients in a disposable roasting pan in the order listed, stopping at nuts. NOTE: I don't advise using a cake pan, by the it's done, it would be heaping over the edges).
  • 2. Mix the dressing ingredients and let stand 5 minutes. Spread over entire salad, sprinkle with cheese, onions and bacon. Refrigerate for 3 hours before serving.
