FRIED MOZZARELLA STICKS

One 8-ounce block pasteurized part-skim mozzarella
1/2 cup all-purpose flour
2 tablespoons milk
4 large eggs
2 cups Italian breadcrumbs
2 tablespoons finely grated Parmesan
About 1 1/2 cups vegetable oil
1 cup warm Homemade Pizza Sauce, recipe follows
2 tablespoons olive oil
1/2 teaspoon dried oregano
3 cloves garlic, minced
1 pinch crushed red pepper flakes
One 32-ounce can crushed tomatoes
1 sprig fresh basil
Kosher salt

Steps:

  • Cut the mozzarella into approximately 2-1/2-by-1/2-inch sticks (you should have about 16 sticks, depending on the shape of your mozzarella).
  • Put the flour in a small bowl. Beat the milk with the eggs in another bowl. Stir together the breadcrumbs and Parmesan in a third wide, shallow bowl.
  • Working one at a time, coat a mozzarella stick in flour and shake off the excess. Dip the stick in egg, letting the excess drip off, then add it to the breadcrumbs and roll it to coat. Dip the stick in the egg one more time, again letting the excess drip off, and roll it in a final coat of breadcrumbs. You can pat the mozzarella stick gently between your hands to smooth out the coating. Transfer the coated mozzarella stick to a platter. Repeat with the remaining mozzarella sticks. Refrigerate the mozzarella sticks until cold, about 15 minutes.
  • Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350 degrees F. Have a large brown paper bag ready for the fried sticks (they will stick to paper towels). Add half of the mozzarella sticks and fry, turning once, until golden brown on both sides, about 1 minute total. Transfer to the paper bag to drain. Return the oil to 350 degrees F (this is important, as the cheese will seep out if it is not hot enough) and fry the remaining mozzarella sticks.
  • Serve hot with Homemade Pizza Sauce on the side.
  • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

1/2 cup all-purpose flour
2 large eggs, lightly beaten
1 cup seasoned breadcrumbs
Kosher salt
6 mozzarella cheese sticks
Cooking spray
Marinara sauce, for serving

Steps:

  • Place the flour, beaten eggs and breadcrumbs in three separate shallow bowls. Season the flour and breadcrumbs with 1 teaspoon salt each.
  • Line a baking sheet with parchment paper. Cut the cheese sticks in half crosswise; dip in the flour, then egg, then breadcrumbs. Repeat to coat each again in the flour, egg and breadcrumbs. Transfer to the prepared baking sheet; freeze 2 hours.
  • Preheat a 6-quart air fryer to 400˚ F. Coat the breaded cheese with cooking spray. Add to the air fryer basket in an even layer and cook, turning halfway through, until crisp and golden, about 6 minutes. Serve with marinara sauce.

NACHO CHEESE CORN CHIP-ENCRUSTED MOZZARELLA STICKS

2 large eggs
4 ounces nacho cheese corn chips
One 8-ounce box frozen mozzarella sticks

Steps:

  • Preheat the oven to 375 degrees F.
  • Beat the eggs in a medium bowl. Crush the corn chips in a food processor or ziptop bag until there are fine crumbs and some pea-size pieces. Transfer the crumbs to a shallow dish.
  • Dip the mozzarella sticks into the egg, then let the excess drip off. Roll in the corn chip crumbs until fully coated. Transfer to a baking sheet.
  • Bake until the mozzarella sticks are completely cooked through and the crust is browned slightly, 10 to 12 minutes.

1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce, recipe follows
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

Mozzarella cheese (for pizza) 8 ½ oz
Flour 00 1 cup
Eggs medium 3
Breadcrumbs ¾ cup
Corn flakes 3 oz
Fine salt 1 tsp
Peeled tomatoes 12 oz
White onions 1
Whipping cream ½ cup
Garlic 2 cloves
Fresh chili pepper 2
Fine salt 1 tsp
Brown sugar 1 tbsp
Extra virgin olive oil ¾ tbsp
Peanut seed oil to taste

Steps:

  • To prepare your mozzarella sticks , start with the spicy sauce: Peel and chop the onion 1 , then peel and chop the garlic and fresh chili pepper 2 . Add to a saucepan in which you have just heated a little oil 3 .
  • Add the sugar 4 and canned tomatoes 5 . Season with salt 6 .
  • Cover with a lid 7 and cook for about 15 minutes. Once it's cooked for long enough, the sauce will thicken. Pour in the cream 8 and cook for a few moments, stirring from time to time. Then turn off the heat and blitz everything with an immersion blender 9 .
  • Leave to cool 10 . In the meantime, cut the mozzarella into rectangular sticks weighing 1 oz (20 g) each 11 ; you should end up with 12 with the quantities in the recipe. Prepare 3 small bowls: Place the flour in one bowl, the lightly beaten eggs in another, and the breadcrumbs and cornflakes 12 in the last one.
  • Lightly salt the eggs 13 . Dip each stick in the flour 14 , then coat completely in the egg 15 .
  • Lastly, coat the sticks with the breadcrumb and cornflake mixture (16-17). Repeat these steps, dipping the mozzarella first into the egg and then into the breadcrumbs and cornflakes 18 to get a double coating.
  • Now you're ready to fry in hot oil at 340°F (170°C) for a couple of minutes. Fry one or two sticks at a time so the oil temperature doesn't go down too much 19 . Once the sticks are golden brown, drain with a slotted spoon 20 and place on a sheet of absorbent paper to get rid of any excess oil. Serve the mozzarella sticks with the spicy sauce 21 .

3/4 cup matzo meal, plus more if needed
1/4 cup grated Parmesan
1/2 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
Salt and freshly ground black pepper
1/2 cup matzo meal
1/4 cup grated Parmesan
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley

1/4 cup potato starch
6 or 7 string cheese sticks (or one 8-ounce block of low-moisture mozzarella, cut into 4-by-1/2-inch sticks), unwrapped and refrigerated until ready to use
Oil for frying, such as canola

1 cup homemade or store-bought Marinara Sauce, recipe follows
1 tablespoon extra-virgin olive oil
1/4 cup diced white onion
2 cloves garlic, minced
1 tablespoon tomato paste
One 14.5-ounce can (no salt added) diced tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried red pepper flakes, optional

Steps:

  • For the matzo ball batter: Whisk together the eggs, oil and seltzer in a medium bowl. Add the matzo meal, Parmesan, baking powder, garlic powder, oregano, parsley, 1/2 teaspoon salt and 1/8 teaspoon pepper and mix just until combined; do not overmix. The batter will be wet and sticky. Cover and refrigerate for 30 minutes or up to 4 hours so the matzo meal can absorb the liquid.
  • For the matzo coating: When the batter is almost ready, mix together the matzo meal, Parmesan, garlic powder, oregano, parsley and 1/2 teaspoon salt in a shallow bowl or on a plate.
  • For the assembly: Place the potato starch in a shallow bowl or on a plate. Put some water in a small bowl. Coat 1 cheese stick in the potato starch. Wet your fingers with some water to prevent the matzo ball batter from sticking to your skin, then coat the cheese stick with 1/8 to 1/4 inch of the batter. Make sure the cheese is completely covered so it doesn't leak out during frying. The batter should stick to the cheese easily and form a smooth matzo ball log. If it's not sticking well, stir in a little more seltzer. If it's too sticky, add a little more matzo meal.
  • Roll the stick in the matzo coating while shaping it into a cylinder, then set on a plate. Repeat with the other cheese sticks. You should have enough batter for 6 or 7 cheese sticks. Refrigerate the coated sticks.
  • Meanwhile, heat 2 inches of oil in a heavy-bottomed medium pot to 350 degrees F. Fry 2 or 3 coated sticks at a time, leaving the rest in the refrigerator, until golden brown, about 5 minutes. (Don't overcrowd the pot or the oil temperature will lower too much.) You can test one to make sure the fry time is perfect; Stick a toothpick into one end of the stick. If there is no resistance from the cheese, then it is melted. And if you cut the stick, the cheese should be stringy, but not completely melted. Sprinkle with a little salt, then repeat with the remaining coated sticks. Serve hot with the Marinara Sauce.
  • Heat the olive oil over medium heat in a medium saucepan. Add the onions and cook, stirring occasionally, until translucent, 4 to 5 minutes. Making sure they do not burn. Add the garlic, reduce the heat to low and cook until fragrant, about 1 minute more.
  • Add the tomato paste and cook, stirring often, until it darkens slightly, 1 to 2 minutes. Add the diced tomatoes, basil, oregano, pepper flakes, 1/2 teaspoon salt and 1/4 cup water and mix to combine. Bring to a simmer, cover, then reduce the heat to medium low and cook, stirring occasionally, until the tomatoes are soft, 30 to 40 minutes.
  • Serve the sauce as is or, for a smoother texture, blend with an immersion blender. The sauce will keep, covered in the refrigerator, for up to 5 days.
