Chef Christina Tosi uses this snackable cornflake mixture in her Cornflake-Chocolate-Chip-Marshmallow Cookies from the "Momofuku Milk Bar" cookbook.

Yield Makes 4 cups

Number Of Ingredients 5

1/2 (12-ounce) box cornflakes (about 5 cups)
1/2 cup milk powder
3 tablespoons sugar
1 teaspoon coarse salt
9 tablespoons melted butter

Steps:

  • Preheat oven to 275 degrees. Line a baking sheet with parchment paper or a nonstick baking mat; set aside.
  • Place cornflakes in a medium bowl. Using your hands, crush to one-quarter of their original size. Add milk powder, sugar, and salt; toss to combine. Add butter and toss to form small clusters.
  • Spread cornflake mixture in an even layer on prepared baking sheet. Transfer to oven and bake until clusters are toasted and smell buttery, about 20 minutes. Remove from oven and let cool completely.

1 cup cornmeal
1 tablespoon oil
1/2 teaspoon salt
3/4 cup boiling water

Steps:

  • Preheat oven to 400 degrees.
  • Mix all ingredients in a bowl.
  • Turn dough out onto a baking sheet lined with parchment paper or a well oiled baking sheet.
  • Spread dough out evenly and thinly across pan.
  • You may scored the dough into chip shapes or leave it whole and break it up later.
  • Bake for 10 minutes at 400 degrees.
  • Allow to cool on pan and break apart.

1 pound ground beef
¾ cup water
1 envelope taco seasoning mix
5 taco shells
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
2 cups shredded Mexican cheese blend
1 dash hot pepper sauce (such as Frank's RedHot®), or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brown the ground beef in a large skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain excess grease; stir in water and taco seasoning mix. Reduce heat to low and simmer the meat mixture until thickened, 4 to 6 minutes.
  • Bake taco shells on a baking sheet in the preheated oven until crisp, 3 to 4 minutes. Let cool for about 5 minutes and break apart into bite-size pieces.
  • Transfer seasoned ground beef to a large serving bowl and mix in the nacho cheese corn chips, taco shell pieces, Mexican cheese blend, and hot pepper sauce.

Number Of Ingredients 12

1 cup (2 sticks) unsalted butter, room temperature
1 1/4 cups granulated sugar
2/3 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 1/4 teaspoons coarse salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3 cups Cornflake Crunch
2/3 cup mini chocolate chips
1 1/4 cups mini marshmallows

Steps:

  • Cream together butter and both sugars in the bowl of an electric mixer fitted with the paddle attachment on medium-high, 2 to 3 minutes. Scrape down sides of bowl and add egg and vanilla; beat for 7 to 8 minutes.
  • Reduce speed to low and add flour, salt, baking powder, and baking soda. Mix just until dough comes together, no longer than 1 minute. Scrape down sides of bowl with a spatula.
  • With the mixer on low, add cornflake crunch and chocolate chips; mix until just combined, 30 to 45 seconds. Add mini marshmallows and mix until just incorporated.
  • Line a baking sheet with parchment paper. Using a 2 3/4-ounce ice-cream scoop or 1/3-cup measuring cup, portion dough out onto prepared baking sheet. Pat tops of cookie domes flat. Wrap baking sheet tightly with plastic wrap and refrigerate for at least 1 hour and up to 1 week. Do not bake cookies from room temperature or they will not hold their shape.
  • Preheat oven to 375 degrees. Line additional baking sheets with parchment paper or nonstick baking mats.
  • Arrange chilled dough at least 4 inches apart on prepared baking sheets. Transfer to oven and bake until puffed, cracked, spread, and browned on the edges, about 18 minutes. Let cool completely on baking sheets.

6 chicken breasts, boneless and skinless
1 (10 3/4 ounce) can condensed cream of chicken soup
2 cups shredded cheddar cheese, divided
1 (1 1/4 ounce) package taco seasoning mix
2 cups barbecue corn chips, crushed

Steps:

  • Preheat oven to 450 degrees F. Arrange chicken breasts in an ungreased 9x13-inch baking dish; set aside.
  • In bowl, combine soup, 1 cup of the cheese and taco seasoning; spread over chicken. Bake for 45 minutes. Sprinkle with corn chips and remaining cheese. return to oven and bake until cheese melts, about 5 minutes.
  • Variations:
  • 1. You can use other chips crackers or even cornflakes. This is a great way to use up stale chips.
  • 2. Use a different flavor of creamy soup. Cream of mushroom would be great. So would a can of creamed corn.
  • 3. Toss some frozen peas, green beans or broccoli into the soup mixture for a veggie boost.
  • 4. For a spicy kick, add a can of canned chili peppers.
  • 5. Instead of chips, top the chicken with some chopped walnuts or almonds for a protein boost.
