3 medium ears sweet corn
1 tablespoon olive oil
1 cup crumbled goat cheese
3/4 cup mayonnaise
1 can (4 ounces) chopped green chiles
1 jar (4 ounces) diced pimientos, drained
2 green onions, chopped
2 tablespoons finely chopped chipotle peppers in adobo sauce
1 tablespoon minced fresh cilantro
1 to 2 tablespoons lime juice
1-1/2 teaspoons grated lime zest
1 teaspoon ground cumin
1 teaspoon chili powder
Tortilla chips

Steps:

  • Brush corn with oil. Grill corn, covered, over medium heat until lightly browned and tender, 10-12 minutes, turning occasionally. Cool slightly., Preheat oven to 350°. Cut corn from cobs; transfer to a large bowl. Stir in goat cheese, mayonnaise, green chiles, pimientos, green onions, chipotle pepper, cilantro, lime juice and zest, cumin and chili powder. Transfer to a greased 1-1/2-qt. baking dish. Bake until bubbly and golden brown, 35-40 minutes. Serve with tortilla chips.

1/4 cup rice wine vinegar
1/4 cup chopped fresh basil leaves
1 teaspoon sugar
Salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
8 ears corn, grilled in the husk, kernels removed
1 sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced
1 pint Sweet 100 tomatoes or cherry tomatoes, halved
8 ounces blue cheese, crumbled
Fresh basil sprigs, for garnish

Steps:

  • Combine the vinegar, basil, sugar, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and oil in a blender and blend until smooth. Can be made 2 hours in advance and refrigerated. Bring to room temperature before using.
  • Combine the corn kernels, onion and tomato in a large bowl. Add the dressing and toss to coat, season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with crumbled blue cheese and garnish with basil sprigs just before serving. Salad can be made 1 day in advance and served cold or at room temperature.

1 tablespoon chili powder
1 teaspoon cayenne pepper
Juice of 3 limes

Steps:

  • Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.

  • Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.

2 strips bacon, chopped
1/2 jalapeno, seeded and minced
2 cups canned sweet corn
Kosher salt and freshly ground black pepper
1 clove garlic, minced
2 scallions, thinly sliced
2 tablespoons condensed milk
2 tablespoons mayonnaise
1/2 cup mozzarella cheese

Steps:

  • Place a 5-inch cast-iron skillet in the oven; preheat the oven to broil.
  • Heat a wok or saute pan over high heat. Add the butter and bacon and cook until the bacon is crisp, about 20 seconds. Toss in the jalapeno and corn, season with a pinch of salt and pepper and cook until the corn kernels start to char a little bit, 20 to 30 seconds. Add the garlic and half of the scallions. Add the condensed milk, mayonnaise and 1/4 cup of the mozzarella and cook until the cheese is melted and the ingredients are well mixed, another 20 seconds. With a towel, grab your hot skillet from the broiler and carefully pour in the corn-cheese mixture. Sprinkle the remaining 1/4 cup mozzarella over the top and set under the broiler until golden brown, 30 to 45 seconds. Garnish with the remaining scallions.

Garlic butter, recipe follows
1/2 cup grated cotija cheese
4 fresh limes, quartered
2 tablespoons chopped chives, for garnish
2 sticks unsalted butter, slightly softened
8 cloves garlic, peeled and coarsely chopped
1/4 habanero pepper, seeded
1/4 bunch fresh chives
Salt and freshly ground black pepper

Steps:

  • Preheat grill to medium. Peel back the husks of the corn without removing them. Remove the silks and recover the corn with the husk. Soak in large bowl of cold water for 30 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes.
  • Unwrap corn and brush with the garlic butter. Sprinkle with the cotija cheese and squeeze with lime. Sprinkle with chopped chives, to garnish.
  • Combine butter, garlic, habanero, and chives in a food processor and process until smooth. Season with salt and pepper. Set aside until ready to use.

1 tablespoon butter
2 cloves garlic, minced
4 ⅓ cups water
1 cup stone ground cornmeal
½ teaspoon salt
1 ⅓ cups fresh corn kernels
freshly ground black pepper
2 tablespoons grated Parmesan cheese
½ bunch kale
1 tablespoon olive oil
1 tomato, sliced
3 ounces goat cheese

Steps:

  • In a medium saucepan, heat the butter over medium heat. Add the garlic and stir constantly for 1 minute; don't let the garlic brown. Add 3 cups of the water, and bring it to a boil.
  • While the water heats, whisk together in a bowl the cornmeal, salt, and 1 cup water to make a smooth mixture.
  • When the water in the saucepan comes to a boil, pour the mixture into it. Whisk constantly for 3 minutes to prevent lumps from forming. Turn the heat to low. Cook for 40 minutes, stirring with a wooden spoon every 10 minutes. Stir in the corn kernels and cook the polenta 5 minutes more. Stir in the pepper and Parmesan cheese. Pour the polenta into a lightly oiled 8x8 inch pan and smooth the top with a spatula. Chill the polenta in a refrigerator for 1 hour.
  • While the polenta is cooling, cut away the stems and center stalks of the kale. Cut the leaves into 3-inch pieces.
  • Cut the chilled polenta into 4 large triangles. Heat the olive oil in a large non-stick skillet over medium-high heat. When the oil begins to smoke, carefully add the polenta triangles. Fry the polenta until it is golden brown on the underside, then turn the polenta over and cook it until it is golden brown on the other side. Arrange the polenta on a baking sheet.
  • Preheat the broiler on your oven.
  • Place the kale and 1/3 cup water into the skillet that was just used to fry the polenta. Cover the skillet and cook the kale over a medium-high heat for 4 minutes.
  • Place the tomato slices on top of the polenta triangles. Sprinkle the goat cheese on top of the tomato slices. Broil the polenta until the cheese melts and the tomatoes begin to cook.
  • Arrange the kale on a serving platter. Place the hot polenta triangles on top of the kale and serve immediately.

2 tablespoons water
1 (24 ounce) carton cottage cheese
4 eggs
1/4 cup melted butter
1/3 cup all-purpose flour

1/4 cup chopped green onion
1/2 teaspoon salt

1 teaspoon salt(for the water)
1 cup or box frozen corn
1/2 chopped onion
1 tablespoon olive oil
1 tablespoon salted butter
1 tablespoon regular flour
1 1/2 cups warm whole milk
6 ounces shredded cheese
4 ounces diced ham
salt and pepper to taste

Steps:

  • Boil 8 ounces of macaroni in water to which you have added 1 teaspoon salt. When the mac is al dente add 1 cup (box) of frozen corn. Let it sit. Fry 1/2 chopped onion in the oil and butter and when the onions are cooked add salt and pepper to taste and 1 rounded tablespoon flour and stir a couple of minutes then slowly stir in 1 1/2 cups warm milk and cook over low heat until it is saucey. Then add 4 ounces diced ham, and 6 ounces shredded cheddar cheese (any cheese works). (fyi-You can buy the ham and cheese already diced and already shredded) Drain the mac and corn and put it into a 2 quart heavy duty throw away aluminum baking pan. Pour the cheese mixture over the macaroni and corn mixture and stir in thoroughly. If you like sprinkle the top with red pepper. Bake for 15 minutes in a 350 degree oven. Then just warm up again at the tailgate.

  • Heat the oil in a heavy small skillet over medium heat. Add the garlic and saute until tender and fragrant, about 1 minute. Remove the skillet from the heat and cool. Set aside 2 tablespoons of the Parmesan cheese and stir the rest into the garlic mixture, along with the parsley and salt.

4 medium heirloom tomatoes, cut into wedges

Steps:

  • Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
  • Pulse the corn nuts in a food processor until finely chopped.
  • Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.

Ba'corn Cheese Corn image

This bacon-studded 'cheese corn' is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe uses a combination of mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've 'lightened up' a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!

1 (8 ounce) package bacon, chopped
2 (16 ounce) packages frozen sweet corn, thawed
4 cloves garlic, minced
1 bunch green onions, sliced
2 jalapeno peppers, diced, or more to taste
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 cup heavy cream
2 ounces shredded mozzarella cheese
4 ounces shredded Monterey Jack cheese

Steps:

  • Cook bacon in a 10-inch cast iron skillet over medium-high heat, stirring occasionally, until almost crisp and fat is rendered, 7 to 8 minutes.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Drain frozen corn thoroughly in a colander. Add 1/2 of the corn to the skillet with the bacon. Cook and stir until kernels just start to turn golden brown, 3 to 5 minutes. Add garlic, green onions, and jalapenos; cook until vegetables start to soften and sweeten up, 3 to 4 minutes. Tilt pan to drain off some of the fat, using a paper towel to soak it up.
  • Season with salt, pepper, and cayenne. Pour in cream; stir and bring to a boil. Stir in the remaining corn until heated through. Turn off the heat and add about 2/3 of the mozzarella and Monterey Jack cheese. Stir to combine. Top corn with remaining cheese and a sprinkle of cayenne.
  • Broil until heated through and top is browned, 5 to 10 minutes. Serve immediately.

4 to 6 tablespoons whole milk
3 tablespoons butter, softened
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup frozen corn, thawed and warmed
1-1/2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 12-14 minutes or until tender; drain. , Place potatoes in a bowl; mash with milk, butter, salt and pepper. Stir in corn and cheese.
