Easy Chicken Cordon Bleu Melts with Fried Onions image

Make some easy chicken cordon bleu melts for dinner. These are open-faced sandwiches that taste like takeout.

1 can of chunked chicken breast (12.5 oz can or 1 1/2 cups of shredded chicken)
1/2 cup Miracle Whip or mayonnaise
1 1/2 teaspoon mustard
1 teaspoon Salad Supreme
1/8 teaspoon Celery Salt
1/4 teaspoon Pepper
1/8 teaspoon Garlic Powder
1/8 teaspoon Salt
1 medium sized onion
12 slices thinly sliced deli ham
4 slices provolone cheese
4 slices of bread

Steps:

  • Prepare the chicken salad: If using canned chicken, drain then shred with a fork in a medium sized bowl. Add Miracle Whip/mayonnaise and mustard. Season with Salad Supreme, celery salt, garlic powder, pepper and salt to taste. Mix well and set aside.
  • Preheat the oven to 375 degrees.
  • Slice the onion and place in a frying pan with a thin layer of water, just enough to cover the bottom of the pan. Fry the onion over medium heat stirring regularly until the water steams off. Continue to cook for a few minute until the onions turn golden in color, but are still soft.
  • Lightly grease a cookie sheet. Place slices of bread in a single layer on the cookie sheet. Spread chicken salad across each slice of bread until it's evenly distributed.
  • Layer 3 slices of ham on top of slice of bread, followed by 1 slice of provolone. Top each one with fried onions.
  • Bake for 10 minutes or until cheese is melted.

8 frozen fully cooked breaded chicken breast strips
1 tablespoon margarine or butter, softened
4 (1/2-inch-thick) diagonal slices French bread (not baguette)
1/4 cup purchased honey mustard salad dressing
4 thin slices cooked ham
4 (1-oz.) slices Swiss cheese, halved

Steps:

  • Heat oven to 400°F. Place chicken strips on ungreased cookie sheet. Bake at 400°F. for 18 minutes or until chicken is thoroughly heated.
  • Meanwhile, spread margarine on bread slices. Add bread to cookie sheet with chicken during last 10 minutes of cooking time.
  • Spread dressing on each toasted bread slice. Top with chicken, half cheese slice, ham and another half cheese slice. Bake an additional 2 to 3 minutes or until cheese is melted.

Choose your method for crumbing the chicken - Super Easy or Quick Dredge (see photos for difference). Super Easy coats the top and sides of the chicken, but is faster than the Dredging Method. Served with a gorgeous traditional Dijon Cream Sauce!

Panko breadcrumbs - 1/2 cup for Super Easy or 1 cup for Quick Dredge
Oil spray
2 small chicken breasts, (around 6-7oz/180-210g each)
Salt and pepper
4 slices swiss cheese ((Note 1))
4 to 6 slices of ham, (about 2.5oz/75g (Note 2))
3 tbsp mayonnaise
1 1/2 tbsp Dijon mustard
1 egg
2 tsp plain flour
1 1/2 tbsp butter
1 1/2 tbsp flour
1 1/4 cups milk ((Note 3))
2 tbsp Dijon mustard
3 tbsp parmesan cheese, finely grated

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan).
  • Spread panko breadcrumbs on a baking tray and spray with oil. Bake for 3 minutes or until light golden. Remove and scrape into bowl straight away.
  • Cut a pocket into each chicken breast, as per the photo below.
  • Fold the cheese in half and place 2 pieces inside each pocket. Do the same with the ham. Close the pocket, seal with 2 toothpicks. Sprinkle with salt and pepper.

Well, our easy chicken Cordon Bleu is the best of both worlds: sounds fancy but really? It's just some really, really good fried chicken. That, we can promise.

4 boneless, skinless chicken breasts
salt, to taste
pepper, to taste
1 tablespoon garlic powder
1 tablespoon onion powder
16 slices swiss cheese
½ lb ham, thinly sliced
peanut oil, or vegetable oil, for frying
1 cup all-purpose flour
4 eggs, beaten
2 cups panko bread crumbs
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups milk
¼ cup dijon mustard
1 cup shredded parmesan cheese
salt, to taste
pepper, to taste

Steps:

  • Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
  • On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  • Remove the plastic wrap and place 2 slices of Swiss cheese, then 2 slices of ham, then another layer of Swiss cheese, and another layer of ham. Evenly roll the chicken and place onto a new sheet of plastic wrap.
  • Wrap the chicken in the plastic wrap tightly and use the excess plastic on the sides to twist, firming up the roll of chicken cordon bleu as you work. Tie the excess plastic. Repeat with the remaining ingredients, then chill the rolls in the fridge to set for 30 minutes.
  • Meanwhile, preheat a tall-sided pan with 2 inches (5 cm) of oil to 325°F (170°C).
  • After the rolls are set, prepare 2 separate large, wide dishes with the flour, beaten egg, and bread crumbs. Dredge the chicken first in the flour, then the egg, and then bread crumbs.
  • Place the breaded chicken cordon bleu in the oil and cook for about 5 minutes per side, or until the outside is an even golden brown. If a good color is achieved and the chicken's center is still not 165°F (75°C), place the chicken cordon bleu on a wire rack set over a baking sheet and finish the chicken in the oven at 325°F (170°C) until that temperature is reached.
  • Meanwhile, prepare the sauce. In a 1 ½-quart saucepan over medium heat, melt the butter and cook the garlic until soft. Add the flour and whisk for 1 minute.
  • Add the milk and whisk until fully combined with the roux and no lumps remain. Continue whisking until the mixture comes to a simmer and has thickened.
  • Add the mustard, Parmesan cheese, salt, and pepper and whisk to combine. Remove the pan from the heat.
  • Slice the chicken and serve drizzled with Dijon sauce.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

1 green onion, thinly sliced
8 ounces cream cheese, softened
1 teaspoon Dijon mustard
1 cup swiss cheese, shredded (divided)

Steps:

  • Preheat oven to 350 degrees.
  • Combine ham, green onion, cream cheese and mustard. Stir in 3/4 cup of the swiss cheese.
  • Place 1-2 T of ham mixture on each of the bread slices, spreading mixture to the edges of the bread.
  • Sprinkle remaining cheese over each slice.
  • Bake 15-18 minutes.

1 teaspoon paprika
6 tablespoons butter
½ cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream

Steps:

  • Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
  • Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
  • Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.
