1 3/4 cups all purpose flour
1 teaspoon ground cinnamon
1/4 tablespoon ground cloves
2 teaspoon ground ginger
1/2 tablespoon fresh ginger, finely grated
1/4 teaspoon nutmeg
1 teaspoon salt
1 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter, softened
2 eggs
1/2 cup apple sauce
1/2 cup sour cream
Frosting
1 (8-ounce) package cream cheese, softened
1 teaspoon vanilla
3 cups icing sugar
Candied ginger, chopped in small squares

Steps:

  • 1.Preheat oven to 350 degrees F. Grease four mini loaf pans 6x3x2" with cooking spray. 2.In a medium bowl whisk together the dry ingredients. Set aside. In the bowl of a standup mixer with a paddle attachment cream butter and sugars together. Add eggs one at a time and mix well. Add the apple sauce and sour cream. Add the flour mixture slowly mixing well. 3.Pour batter into prepared pans and bake for 30 min. or until a cake tester comes out clean. 4.Cool for 5 minutes and then remove from pan, cool completely on racks. 5.For the frosting, beat the cream cheese with a hand mixer until soft and light. Add the vanilla and slowly add 1/2 cup of icing sugar at a time and blend in. Spread the icing on top of the cakes and decorate with the candied ginger.

1 cup applesauce
1 teaspoon baking soda
FROSTING
1 (8 oz.) pkg. cream cheese, softened
1 teaspoon vanilla extract
1/2 teaspoon orange extract
2 1/2 cups confectioner's sugar

Steps:

  • Preheat your oven to 350 degrees F. Grease and flour a 9 inch square pan.
  • In a medium bowl, mix together flour, cinnamon, cloves, ginger, and salt.
  • Then set aside.
  • In a large bowl, cream butter and sugar until fluffy. Stir in orange extract.
  • Mix baking soda into applesauce and stir into creamed butter mixture.
  • Add flour mixture. Mix until smooth.
  • Pour batter into prepared loaf pan.
  • Bake at 350 degrees F for 40 to 50 minutes or until a
  • toothpick inserted into center of cake comes out clean.
  • FROSTING:
  • Beat cream cheese until fluffy. Beat in vanilla and orange extract. Slowly beat in confectioner's sugar.
  • Once the cake has cooled, evenly spread the frosting on top. Decorate with chopped candied orange peel or candied ginger .

½ cup butter softened
1 cup sugar
½ tsp vanilla
1 large egg
1 cup applesauce
1½ cups flour
1 tsp baking soda
1 tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
1 tsp ground clove
½ tsp ground nutmeg
4 oz cream cheese softened
1 tsp vanilla
2 cups powdered sugar
1 tsp freshly grated orange zest

Steps:

  • Preheat oven to 350°.
  • Spray a 9×5 loaf pan lightly with cooking spray.
  • Cream the butter and the sugar until fluffy. Beat in the vanilla and the egg.
  • Mix in the applesauce.
  • Sift together the flour, baking soda, salt, and spices and then add it to the bowl slowly.
  • When flour is incorporated, turn the batter into loaf pan, and spread evenly.
  • Bake for about 45 minutes, or until it is risen and a toothpick comes out clean. Check frequently, and be careful not to overbake. You want the loaf to be moist. It will dry out quickly if overbaked.
  • Let cool completely on a rack before frosting.
  • Beat the cream cheese with the vanilla and then add 2 cups sugar and the orange zest and beat until smooth and creamy.
  • Spread a thick layer of the frosting over the gingerbread loaf.
  • Store in an airtight container in the fridge for several days. I like to warm a slice just slightly in the microwave (about 15 seconds) before enjoying with my coffee.
