16 ounces cavatappi pasta
1 cup butter
1 cup heavy cream
2 1/2 cup whole milk
Salt (to taste)
Pepper (to taste)
Garlic Powder (to taste)
3/4 cup romano cheese
1/4 cup parmesan cheese
1 cup white cheddar cheese
1/2-1 cup sharp cheddar cheese

Steps:

  • Bring a pot of water to a boil - add cavatapi and cook according to directions on package. Drain water and set aside.
  • Add butter to a large skillet and melt over low heat. Add heavy cream and milk and stir until combined.
  • Slowly mix in cheeses over medium-low heat until it thickens. If it doesn't thicken, you can add in a mixture of 1 teaspoon cornstarch and 2 teaspoons cold water.
  • Add seasonings to taste.
  • Combine the pasta with the sauce and pour into a large baking dish.
  • Top with shredded cheddar cheese
  • Bake at 400 for 25-30 minutes or until heated through. Broil to caramelize cheese.

Costco Mac and Cheese-- quick, easy and just as good (or better) than the deli version. You can go ahead and throw that membership card out. :)

8 ounces Cavatapi Pasta
15 ounces Jarred Prepared Alfredo Sauce
1 teaspoon dijon mustard
8 ounces Sharp Cheddar (shredded and divided)
4 ounces Jarlsberg Cheese (shredded)
1/2 cup parmesan cheese (shredded)

Steps:

  • Preheat oven to 400 degrees.
  • Cook pasta according to package directions to "Al Dente" doneness. Drain and place in a large bowl.
  • Pour alfredo sauce and dijon mustard over the cooked pasta and stir. Add in 3/4 of the sharp cheddar and all of the Jarlsberg and parmesan cheese. Stir until well combined.
  • Spray an 8"x 8" baking pan with non-stick cooking spray and spoon pasta into the dish.
  • Sprinkle remaining sharp cheddar over the pasta. Bake for about 20 minutes, or until the cheese is melted and the sauce is bubbly.

Copycat Costco(R) Deli Mac and Cheese image

Costco's mac and cheese that they sell in their deli section is so yummy, but they only sell it at a certain time of the year. I wanted to try to figure the recipe out so that when they don't have it, I can still make it myself. This recipe is what I came up with. It is very decadent and NOT low-cal. LOL

16 ounces dry cavatappi pasta
1 tablespoon butter
1 cup butter
3/4 pint heavy cream
pepper
garlic salt
3/4 cup grated pecorino romano cheese
1/2 cup grated parmesan cheese
4 cups shredded cheddar cheese

Steps:

  • Cook cavatappi pasta according to package directions so it is al dente, drain, add 1 Tbsp of butter while still hot, and mix through; set aside to cool mostly.
  • In a large sauce pan, melt butter into cream over low heat. Add garlic salt and pepper to taste.
  • Stir in the pecorino romano and parmesan cheese over medium heat until melted; this will thicken the sauce. Remove from heat and allow to cool mostly.
  • Once both noodles and sauce are just slightly warm, stir the sauce into the noodles. Add 3 cups of cheddar cheese and mix.
  • Smooth into a 13x9x2 baking dish. Sprinkle top with the remaining cup of cheddar cheese. Bake at 350 degrees F for 30 minutes or until top starts to brown slightly.

16 ounces elbow macaroni
1 teaspoon salt
1/4 cup salted butter
1/4 cup flour
1 cup cream
2 1/2 cups whole milk
1 3/4 cup shredded sharp cheddar
3/4 cup shredded parmesan
1 cup shredded romano cheese
Salt and Black Pepper (to taste) Extra cheddar cheese for top

Steps:

  • Preheat oven to 350 degrees F
  • Bring a large pot water to a boil with salt.
  • Boil noodles until al dente, drain and set aside (reserve about 1/2 cup of pasta water in case you need to thin up the sauce)
  • Melt butter in a large sauce pan over medium heat.
  • Whisk in flour and mix continuously for about 4-5 minutes over low heat.
  • Slowly pour in the cream and whole milk and stir the whole time until it starts to thicken over low heat.
  • Mix in the combination of cheeses until the cheese starts to melt and become creamy and season with salt and pepper to taste.
  • If it becomes too thick, thin the sauce with a little bit of the reserved water.
  • Mix in the macaroni noodles.
  • Pour mixture into a large baking dish.
  • Top with additional shredded cheddar cheese.
  • Cook for five minutes.
  • After five minutes, cook on a low broil for two minutes.
  • Remove from oven and mix together so crispy cheese on top is incorporated throughout the dish

1/2 lb farfalle pasta
1/4 cup flour
2 cups whole milk
2 cups grated sharp cheddar cheese
2 tablespoons grated parmesan cheese
1/4 lb pastrami, diced
1 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
6 -10 Ritz crackers, pulsed in the food processor (about 1/4 to 1/3 cup crumbs)

Steps:

  • Preheat oven to 350°; butter an 8x8 inch baking dish.
  • Bring a large pot of salted water to a boil over high heat; cook farfalle until al dente, about 8-10 minutes; drain.
  • In a large pan over med-low heat, melt the butter; sprinkle in the flour and stir with a wooden spoon until the flour is incorporated, about 1 minute.
  • Gradually add in the milk, stirring; increase the heat to medium.
  • Cook, stirring frequently, until almost boiling and smooth, about 5 minutes.
  • Add in the cheeses and stir until melted and incorporated, 2-3 minutes.
  • Stir in the pastrami and decrease the heat.
