This recipe has become such a reliable standby for me that it's expected and welcomes by my friends. This dish can be served chilled for a salad or warm for a side dish. Either way it's always a hit. This can be made ahead and kept in the refrigerator for a few days.-Agnes Circello, Belle Rose, Louisiana

Number Of Ingredients 11

2 pounds carrots, cut into 1/4-inch slices
1/2 cup vegetable oil
1 cups sugar
1 large onion, diced
1 large green pepper, diced
1 can (5-1/2 ounces) tomato juice
3/4 cup red wine vinegar
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the carrots just until crisp-tender; drain. Combine all remaining ingredients in a large bowl. Add carrots and stir until well mixed. Cover and refrigerate at least 3-4 hours. , Serve cold as a salad, or warm it and use as a side dish. Store in the refrigerator for up to 2 weeks.

I know, there are Copper Pennies all over the place. This is a tad different than the others, but very similar. They must be good to have so many recipes. Really, they are good; they make a great side dish at a picnic or cookout. They are served cold and go with anything. When I make them, I share them with my daughter as she loves them, too. It is a great way to get your carotene.

2 lbs carrots (peeled and sliced)
1 green pepper (thinly sliced)
1 medium onion (thinly sliced)
1 (10 3/4 ounce) can tomato soup
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup cooking oil
3/4 cup vinegar
1 cup sugar
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce

Steps:

  • Cook carrots till done; drain and rinse.
  • Put the carrots, green pepper, and onion in a bowl.
  • In a saucepan mix together the tomato soup, salt, pepper, oil, vinegar, sugar, mustard, and Worcestershire sauce.
  • Bring to a boil, stirring until thoroughly blended.
  • Pour over veggies and refrigerate for at least 1 hour and better for a few hours.

SWEET AND SOUR CARROTS OR COPPER PENNIES

2 pounds carrots
1 can tomato soup
1 cup vegetable oil
1 cup sugar
2 cups vinegar
1 teaspoon dry dill
1 teaspoon salt
1 large green pepper, diced
1 large onion, diced

Steps:

  • Dice carrots then cook in boiling water until tender yet crisp. Drain and allow to cool. Combine tomato soup, vegetable oil, sugar, vinegar, dry dill and salt and bring to a simmer. Let cool to room temperature. Pour mixture over carrots. Add green pepper and onion along with the mix and carrots.

1 medium onion, thinly sliced
10 1/2 ounces tomato soup, undiluted
1/2 cup salad oil
1 cup sugar
3/4 cup vinegar

1 teaspoon Worcestershire sauce

Steps:

  • Slice & boil carrots in salted water until tender.
  • Rinse in ice water.
  • Alternate layers of carrots, pepper, & onion.

5 c carrots, sliced
1 medium onion, sliced in rings
1 small bell pepper,sliced in rings
1 can(s) tomato soup
1/2 c salad oil
1 c sugar
3/4 c white vinegar
1 tsp prepared mustard
1 tsp worcestershire sauce
1 tsp salt
1 tsp pepper

Steps:

  • 1. in a large pan, cover carrots with water and bring to a boil. boil until fork tender. drain and cool. when carrots have cooled, cut onions and peppers into rounds and mix well with the cooled carrots.mix the other ingredients well and pour over the carrots. cover and let stand in the refrigerator for at least 12 hours before draining and serving. will keep in the fridge up to two weeks!

12 c carrots, cut in circles, cooked, tender, but crunchy
1 c chopped or sliced onion, uncooked
1 c chopped bell green pepper, uncooked
1 c granulated sugar
1/2 c vegetable oil, this is the correct amount
1 can(s) 10 oz.,tomato soup, undiluted( sometimes i add 2 cans)
1/2 c vinegar
salt & pepper , to taste
ALTERNATE RECIPE- 8 SERVINGS
2 can(s) 14.5 oz. each sliced carrots,drained
1/2 c chopped onion
1/2 c granulated sugar
1/4 c vegetable oil
1 can(s) 10 oz. tomato soup, undiluted
1/3 c apple cider vinegar
2 tsp worcestershire sauce
to taste salt and pepper
follow same directions as below.

Steps:

  • 1. Place al-dente cooked carrots, uncooked pepper and onion in a large bowl. Set aside. In a saucepan combine remaining ingredients, and heat until blended well and sugar has dissolved. Pour hot over vegetables in bowl. Stir well to coat. Refrigerate about 2 hours, if you can wait. I love these things. Serve chilled.

It's a good marinated carrot salad that holds well and is cheap and easy to make. I don't know which cookbook I got this from. It is in a lot of them for good reason. You need to leave in fridge 24 hours to get flavor.

What a colorful dish to add to any table. My grandmother would love it because it has tomato soup in it and I love it because it is another way to get kids to eat their vegetables. This salad is very popular at pot luck dinners and I make if for Easter every year. It is refreshing.

2 lb carrots, sliced
1 medium onion, purple makes it pretty
1 small green bell pepper, cut in slices
2 c water
DRESSING
1 can(s) tomato soup
1/2 c canola oil
1 c sugar
3/4 c apple cider vinegar
1 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp worcestershire sauce
1 tsp coleman's dry mustard

Steps:

  • 1. Wash and scrape carrots and cut into 1/4 inch slices. Add water to carrots and cook over high heat for 10 minutes or until carrots are tender.
  • 2. While carrots are cooking slice onion and bell pepper, set aside.
  • 3. DRESSING: Blend tomato soup, oil, sugar, vinegar, salt, pepper, Worcestershire sauce and dry mustard.
  • 4. When carrots are done, drain water. Add onion and bell pepper and mix. Pour dressing over mixture. Cover and marinate in refrigerate overnight. Will keep for 2 weeks or more in the refrigerator.

COPPER PENNIES CARROT (Marinated Carrot Salad) Recipe - (4/5) image

10 medium, peeled carrots into paper thin circles
Equal parts bottled Italian Dressing and Catalina Dressing
4 green onions
A few tablespoons of bottled Open Pit BBQ Sauce
A dash or two of Tabasco Sauce

Steps:

  • Slice carrots into paper thin circles. Dump into enough lightly salted boiling water so that the carrots are completely submerged in it. Bring to boil, boiling briskly for 5 minutes. Dump into a colander to drain well. Place carrot slices in an accommodating refrigerator container and submerge them in equal parts bottled Italian Dressing and Catalina Dressing. Scissor-snip about green onions into bits and toss them in with the carrot mixture. If you don't like the mildness of the dressing, you can always pour in bottled Open Pit BBQ Sauce according to taste and spike it up even more so, with Tabasco Sauce. Cover and refrigerate this mixture for 24 hours before serving. Serves 6 to 8. Refrigerate leftover salad covered tightly, to serve within 4 or 5 days. or 5 days.

1 cup tomato soup, undiluted

3/4 cup apple cider vinegar
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce
lettuce

Steps:

  • Cook sliced carrots in salted water until fork-tender. Add chopped onion, bell pepper, and celery to the drained carrots. Set aside. Mix and bring to a boil soup, sugar, oil, vinegar, mustard, and Worcestershire. Pour this hot mixture over above vegetables. Refrigerate overnight. Serve on lettuce.
