Steps:
- Preheat the oven to 350 degrees F.
- In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
- In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.
- Cook's Notes: To lighten up this quiche, use turkey sausage and egg substitute.
- Garth likes this quiche with cheese tortellini. If you add tortellini, cover with egg or the pasta will burn when the quiche bakes.

From the My Great Recipes collection. If you prefer, you may use a 10 oz. pkg. frozen spinach in place of the fresh. Cook according to package directions, press out excess moisture, then procede with the recipe. Prep time does not include time needed to chill the dough.

CRUSTLESS COUNTRY QUICHE / OMELETE
I am not taking much credit for this recipe; I combined two awesome recipes Recipe #261072 and Recipe #165801 to make my favorite version. I am posting for safe keeping. I cannot get over thaT 4 eggs can stretch this far. It works as a wonderful hearthy lunch or a lighter dinner served with a salad UPDATE - the butter in this recipe is really not necessary, I have made it without and didn't miss it at all.
