1 1/2 cups small shell pasta (or other small pasta shapes)
8 ounces cooked shrimp
2 stalks celery, finely chopped
1/2 red pepper, diced
1/2 cup frozen green pea, thawed
1/4 cup chopped onion
1/2 cup nonfat plain yogurt
2 tablespoons fat-free mayonnaise
1 tablespoon lemon juice
1 tablespoon red wine vinegar
salt and pepper, to taste
2 tablespoons chopped fresh dill or 2 teaspoons dried dill

Steps:

  • Cook pasta until al dente.
  • Drain and allow to cool.
  • Toss pasta with shrimp, celery, red pepper, peas and onions.
  • In a separate bowl, combine remaining ingredients.
  • Add to pasta mixture.
  • Stir well.
  • Chill in refrigerator for at least 2 hours.
  • If desired, serve on a bed of lettuce, accompanied with a slice or two of fresh crusty bread.

16 ounces shell pasta
16 ounces baby shrimp, precooked, frozen
1 cup peas, frozen
1 large tomatoes, diced
1 cup cucumber, diced
1/2 cup onion, chopped
1 cup plain nonfat yogurt
1/4 cup mayonnaise, can use light
2 tablespoons lemon juice
1 tablespoon Old Bay Seasoning
1/2 teaspoon garlic powder
salt and pepper

Steps:

  • Cook pasta according to directions on box. During the last two (2) minutes of cook time add shrimp and peas to pasta. Drain and rinse with cold water.
  • Set aside.
  • In small bowl combine yogurt, mayo, lemon juice, Old Bay, and garlic powder. Set aside.
  • Pour pasta into a serving bowl, add vegetables and dressing and chill for at least an hour. Salt and pepper to taste and serve.

Toss romaine and tomatoes into this shrimp pasta salad with a creamy Caesar dressing.

1/4 cup mayonnaise
1/4 cup grated Parmesan
1/4 cup sour cream
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces dried penne
1 tablespoon olive oil
8 ounces peeled, deveined medium shrimp
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripened tomatoes, chopped
Bring a large pot of salted water to a boil.

Steps:

  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Transfer to a large bowl along with the dressing.
  • Heat the oil in a medium skillet over medium-high heat until it shimmers. Add the shrimp, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the shrimp is pink and just cooked through, about 3 minutes. Transfer to a plate and set aside to cool.
  • Add the cooked shrimp, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Steps:

1/2 cup olive oil
3/4 cup drained sun-dried tomato packed in oil
1/4 cup balsamic vinegar
2 tablespoons drained capers
4 cloves garlic, minced
1 lb fusilli, cooked al dente
1 lb peeled boiled shrimp, cut in halves
12 ounces cherry tomatoes, quartered
8 ounces feta cheese, in cubes (marinated in oil, if available)
1 cup fresh basil leaf, thinly sliced

2 tablespoons white wine vinegar
1 small shallot, minced
1/3 cup plus 1 tablespoon olive oil
1/2 pound peeled, deveined medium shrimp
1 cup trimmed, chopped green beans
8 ounces dried campanelle or other tube-shaped pasta
1/4 cup sliced fresh chives
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the vinegar, shallot, 1/3 cup of the oil, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat the remaining 1 tablespoon oil in a medium skillet over medium-high heat until it shimmers. Add the shrimp, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer to a plate and set aside.
  • Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the shrimp, chives and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1 pound campanelle pasta
1/2 cup extra-virgin olive oil
1/3 cup champagne vinegar
1/4 cup mascarpone, at room temperature
2 tablespoons Dijon mustard
1 pound jumbo (21/25 count) peeled and cooked shrimp, cut in half
1 cup grated Parmesan
1 cup frozen peas, thawed
1 cup sweet peppadew peppers, thinly sliced
1 bulb fennel, thinly sliced
1/2 cup chopped fresh basil
1/2 cup chopped fresh dill

Steps:

  • Bring a large pot of water to a boil and salt generously. Add the pasta and cook until al dente. Strain and allow to cool slightly.

1 tablespoon oil
2 tablespoons lemon juice
1 cup sliced celery
1/4 cup chopped green pepper
4 green onions, sliced
1 cup plain yogurt
2 tablespoons mayonnaise
3 tablespoons prepared mustard
3/4 teaspoon salt
1/2 teaspoon hot pepper sauce
2 teaspoons parsley
1 (10 ounce) package frozen broccoli florets
1 lb cooked shrimp
3 tablespoons French dressing

Steps:

  • Cook the macaroni according to package directions; drain, rinse with cold water, and drain well.
  • Toss macaroni with oil and lemon juice. Add celery, green pepper, and onions.
  • Make dressing by combining yogurt, mayonnaise, mustard, salt, hot pepper sauce, and parsley. Toss with chilled macaroni. Cover and refrigerate at least 2 hours or overnight.
  • Cook broccoli until tender-crisp; drain and cool.
