1 can (8-3/4 ounces) whole kernel corn, drained
3/4 cup shredded carrots
2 tablespoons diced red onion
3 tablespoons diced pimientos, drained
2 tablespoons sour cream
2 tablespoons mayonnaise
1-1/2 teaspoons prepared mustard
1 teaspoon white vinegar
1/2 teaspoon sugar
1/8 teaspoon salt
Dash pepper

Steps:

  • In a salad bowl, combine the corn, carrots, onion and pimientos. Combine the remaining ingredients; pour over vegetables and toss to coat. Cover and refrigerate for 1 hour before serving.

I made this up one summer day. I love that everything is fresh. I used what was in my fridge. Feel free to use what you like.

Number Of Ingredients 14

2 ears corn, kernels cut off (about 1 1/2 cups)
3/4-1 cup shaved fennel (I used a mandoline)
1/4 cup red onion, minced
1/4-1/3 cup red bell pepper, minced
1/2 cucumber, diced small
1/4-1/2 cup celery, diced
1/2 lime, juice of
1 tablespoon olive oil
salt
pepper
1 dash garlic powder
1 -2 tablespoon Italian dressing (or dressing of choice-sweet garlic is good)
2 sprigs fresh thyme, leaves stripped off
1 -2 teaspoon fresh basil, chopped (about 6 leaves)

Steps:

  • Place vegetables in a bowl.
  • Squeeze lime juice and pour over salad. Drizzle in oil and toss. Salt and pepper to taste. Add garlic powder, dressing and herbs. Toss again. Adjust seasonings.
  • Serve.

3 cans kernel corn
1 units cucumber
1 units bell pepper
1.5 cups mayonnaise
0.5 teaspoons black pepper

Steps:

  • Drain corn, and set aside in a bowl. Peel cucumber, and cut into desired size. Dice red or green bell pepper (optional).
  • Add Kraft mayonnaise. Add ground black pepper. Chill for at least 1/2 hour. Enjoy!!!

Number Of Ingredients 4

1 16 oz cans sweet corn
1 pint cherry tomatoes
6 medium sour pickles or 12 gherkin pickles
1/2 cup light mayonnaise

Steps:

  • Empty can of corn into medium size bowl. Cut cherry tomatoes in half. If they're particularly large, cut them in quarters. Add to bowl. Chop the pickles into small cubes. Add to bowl. Add the mayonnaise to the rest of the ingredients and mix well. Marinate for at least an hour. Best served cold.

1 can(s) mexicorn drained
1 can(s) white shoepeg corn drained
1/2 c white vinegar
1 c wesson oil
several green onions chopped
several stalks celery chopped
1 jar(s) medium chopped pomientos
1/2 c chopped bell pepper
1/2 c white sugar
1 tsp salt

Steps:

  • 1. Mix all ingredients together. let stand over night. Pour off excess liquid and serve cold.
