1/4 cup sour cream
1 1/2 tablespoons prepared horseradish (or more)
1 tablespoon chopped fresh chives
2 teaspoons fresh lemon juice
salt and pepper, to taste
1 1/2 lbs lean ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
4 garlic cloves, minced
1 tbsp.vegetable oil
1 large onion, halved, sliced thin
4 hamburger buns

Steps:

  • In a bowl, combine first 4 ingredients and season with salt and pepper.
  • Set aside.
  • In another bowl, gently knead the meat with the garlic, seasonings until well combined.
  • Shape into 4 patties.
  • Heat a medium sized pan to medium high heat.
  • Add the oil and saute the onions until browned.
  • Remove from pan and keep warm.
  • In same pan, add the patties, cook until browned on both sides and cooked to desired doneness.
  • Toast buns.
  • Place patties on bottom buns, divide oinions on burgers and top with horseradish sauce.
  • Top with remaining bun top.

I usually use cheddar cheese, and I like the sesame seeded buns. Sometimes I use a mandolin for the onions and don't have to sweat them. I make these on Saturdays, serve with a salad or fries. One pan and I'm done.

1 large onion
12 oz ground beef 80 % fat
1 pinch salt and pepper
1 Tbsp butter
1 tsp vegetable oil
4 slice american cheese
4 hamburger buns

Steps:

  • 1. Slice onion thin about 1/8 thick, combine with salt and let sit for about 30 minutes. Gather in a towel and squeeze the water out. Toss with pepper.
  • 2. Divide the onions into 4 piles on a baking sheet. Gather beef and season with salt and pepper. Form into 4 balls. Flatten each ball on top of onions and press so the onions adhere to the beef.
  • 3. Heat skillet and add butter and oil. Place burgers in onion side down. Cook for 6-8 minutes until onions are golden. Flip gently and raise heat, cook until well browned.
  • 4. Butter and toast buns, place cheese on bottom and add burger. Top with preferred condiments and pickles.

Canola or grapeseed oil
4 cups (1/4-inch) sliced red onions (2 medium)
1 teaspoon sugar
1 tablespoon good red wine vinegar
1 1/2 teaspoons dry mustard powder, such as Colman's
Kosher salt and freshly ground black pepper
1 1/4 pounds ground beef with 20% fat
1 1/4 cups grated Gruyère cheese (4 ounces)
4 sandwich potato rolls, such as Martin's
Ketchup, for serving

Steps:

  • Heat 2 tablespoons oil in a large (12-inch) sauté pan over medium heat, add the onions, and cook for 8 to 10 minutes, stirring occasionally, until the onions are tender and starting to brown. Add the sugar, reduce the heat to low, and cook for 10 to 15 minutes, stirring occasionally, until the onions are browned and caramelized. Add the vinegar and cook for 30 seconds to deglaze the pan.
  • Meanwhile, combine the dry mustard, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a small bowl. Place the ground beef in a medium bowl and sprinkle on the mustard mixture. With your fingers, lightly work the mustard into the beef and shape into four 1-inch-thick patties. Place them on a plate and freeze for exactly 15 minutes.
  • Heat a large (12-inch) cast-iron skillet over medium-high heat and add 1 1/2 tablespoons oil. From the freezer, place the burgers directly in the hot skillet. With a large metal spatula, firmly press each burger into the pan. Cook the burgers for 2 1/2 to 3 minutes, without moving them, so the bottoms get browned and crusty. Flip the burgers, then spoon on the onions and sprinkle the Gruyère on top. Place a lid on the skillet and cook the burgers for 1 1/2 to 2 minutes, until the cheese is melted and the burgers are medium-rare inside. Place one burger on each roll and serve hot with ketchup on the side.

CHEESY SAUTEED ONION BURGERS

3/4 cup very thinly sliced sweet onion
1 tablespoon margarine
1/2 teaspoon caraway seed (optional)
4 Grillers Prime® Veggie Burgers or Grillers® Vegan Veggie Burgers
1 tablespoon brown mustard or Dijon mustard
2 ounces thinly-sliced Gruyere cheese, Swiss cheese, or soy cheese

Steps:

  • 1. Cook onion in hot margarine in nonstick frypan over medium-low heat, stirring frequently, for 14 to 18 minutes or until lightly browned. Stir in caraway seed, if desired.
  • 2. Meanwhile, place patties on baking sheet. Bake at 350 degrees F for 8 minutes. Turn patties. Bake 7 minutes more. Spread mustard on top of patties. Top with cheese. Bake for 1 to 2 minutes more or until cheese melts.
  • 3. Spoon onion over top of patties.
  • ON THE GRILL:
  • Preheat grill
  • Use a food thermometer to be sure patties reach minimum internal temperature of 165 degrees F.

1 1/2 pounds ground beef sirloin
Coarse salt and ground pepper
1 tablespoon olive oil
1 pound green beans, stem ends removed
1 medium red onion, halved and thinly sliced
1/3 cup light mayonnaise
1/4 cup fresh parsley, chopped
1 tablespoon prepared white horseradish
4 thick slices tomato
4 thick slices country bread, toasted

Steps:

  • Form beef into four patties; season with salt and pepper. In a large skillet, heat oil over medium. Add patties; cook 6 to 8 minutes per side for medium. Transfer to a plate, and tent with aluminum foil; set aside.
  • To skillet, add green beans, onion, and cup water; season with salt and pepper. Cover, and cook, tossing occasionally, until beans are crisp-tender, 5 to 7 minutes. Uncover, and cook, tossing, until water has evaporated, about 2 minutes.
  • Make sauce: In a small bowl, stir together mayonnaise, parsley, and horseradish; season with salt and pepper. Place tomato slices and burgers on toast; top with horseradish sauce, and serve with green beans.
