Categories     dessert

Time 37m

Yield 8 servings

Number Of Ingredients 21

Nonstick cooking spray
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon lemon zest
Pinch salt
2 tablespoons orange marmalade
1/2 teaspoon herbs de Provence
1 cup blueberries
1 cup sliced kiwi
1 cup sliced nectarines
1 cup raspberries
1 cup strawberries, sliced

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
  • For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
  • For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
  • To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

CHOCOLATE-CHIP COOKIE PIZZA

Chocolate-Chip Cookie Pizza image

You like chocolate chip cookies. You like pizza. What could be better than a giant chocolate chip pizza cookie? If your answer is, "pretty much nothing," we'd say you're 100% right. This Instagram-worthy treat starts with a batch of our famous chocolate chip cookie dough (with a smidge of cornstarch to keep the cookie soft and gooey in the center), but from there, it's all yours. When we took it out of the oven, we spread on cherry jam "pizza sauce," drizzled on melted white chocolate "mozzarella," and added rounds of raspberry fruit leather "pepperoni." But warmed Nutella and blobs of marshmallow fluff are a pretty awesome combination, too. We developed this recipe for a special print-only edition of The New York Times for Kids, but our sources tell us grown-up sweet tooths can't resist this oversized treat either. For a more sophisticated dinner party-worthy variation, leave off the toppings and serve generous wedges with scoops of vanilla ice cream and salted caramel sauce.

Time 1h

Yield 2 10-inch cookies or 1 sheet-pan pizza cookie

Number Of Ingredients 10

3 2/3 cups minus 2 tablespoons all-purpose flour
3 1/2 teaspoons cornstarch
1 1/4 teaspoons baking soda
1 1/2 teaspoons coarse salt
2 1/2 sticks (1 1/4 cups) unsalted butter, softened
1 1/4 cups (10 ounces) light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 pound bittersweet or semisweet chocolate chips

Steps:

  • Heat the oven to 350 degrees. Sift flour, cornstarch, baking soda and salt into a large bowl. Set aside.
  • Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes, on medium-high. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until the white streaks of flour just disappear, 5 to 10 seconds. Stir in chocolate chips.
  • For one large rectangular pizza, transfer the dough to a sheet pan lined with parchment paper and flatten out with your fingers or a rubber spatula. For two cookies, divide the dough into two equal pieces on two separate sheet pans lined with parchment paper and flatten into the shape of a circle. Be sure to leave a border of at least 1 1/2 inches as cookie will spread.
  • Bake until golden brown but still soft, 18 to 25 minutes. Transfer sheet to a wire rack for 10 minutes. Top as desired (see note). Cut in wedges and serve.

OATMEAL CHOCOLATE CHIP PIZZA COOKIE

Oatmeal Chocolate Chip Pizza Cookie image

From the moment in 1930 that restaurateur Ruth Wakefield invented the chocolate chip cookie - that's her iconic recipe on the back of the Nestle Toll House package - bakers have played with the proportions and fiddled with the formula. Including us - our 1957 riff on Wakefield's recipe calls for cornflakes, and the cookie here replaces a cup of the flour with oats to make the edge crisp yet keep the center chewy. Supersizing the cookie to pizza proportions is faster - and more fun - than dropping the dough by the spoonful. From Good Housekeeping.

I finally found this recipe after looking for it for years! I used to make this for my boys on their birthdays but switched to cinnamon rolls after I misplaced the recipe. • Form the cookie dough into a flat disk, wrap in plastic, and refrigerate for 30 minutes.
  • Roll the dough out between 2 sheets of waxed paper into a 12 to 13-inch circle. Carefully transfer to a greased baking sheet and bake until lightly browned, about 12 to 15 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • Meanwhile, put frosting in a mixing bowl and gradually stir in red food coloring until it resembles tomato sauce. Put coconut in a bowl and add green food coloring until it's the color of basil.
  • Lay the fruit roll-up out flat and use a 1 1/2-inch round cookie cutter to cut out "pepperoni" slices. Use the large holes of a grater to shred the marzipan into "mozzarella." Set toppings aside.
  • Spread the frosting over the cookie, leaving a 1/2-inch border around the rim. Add a layer of fruit "pepperoni," then sprinkle with marzipan "mozzarella" and coconut "basil." Spread jelly rings around pizza. Slice into wedges with a pizza cutter and serve.
