¾ cup confectioners' sugar
⅔ cup butter, softened
3 tablespoons frozen apple juice concentrate, thawed, divided
1 ½ cups all-purpose flour
¼ teaspoon salt
flat toothpicks
30 individually wrapped caramels, unwrapped
2 tablespoons water
¾ cup finely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat confectioners' sugar, butter, and 1 tablespoon apple juice concentrate together in a bowl using an electric mixer until light and fluffy; stir in flour and salt until dough is just combined. Roll dough into 3/4-inch balls and arrange on ungreased baking sheets.
  • Bake in the preheated oven until edges are light golden brown, 12 to 17 minutes. Immediately insert toothpicks in the center of each cookie. Place cookies on a wire rack to cool completely.
  • Combine caramels, 2 tablespoons apple juice concentrate, and water in a saucepan over low heat; cook and stir until mixture is smooth, 5 to 10 minutes. Spoon caramel sauce over each cookie, letting excess caramel sauce drip off.
  • Pour walnuts onto a plate. Press the bottom of each caramel-coated cookie into the walnuts and transfer to a sheet of waxed paper to set.

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

10 medium Granny Smith apples
Nonstick cooking spray, for spraying the baking sheet
2 cups chocolate sandwich cookies, such as Oreos, cream filling removed
2 cups sugar
1 cup buttermilk (see Cook's Note)
1/2 cup (1 stick) salted butter
1 teaspoon baking soda
1 teaspoon vanilla extract
Heavy cream, to thin the caramel, if necessary
Sea salt, for sprinkling
One 12-ounce bag white chocolate chips

Steps:

  • Rinse and dry the apples. Spray a baking sheet with cooking spray. Push one stick into the top of each apple, then place on the baking sheet with the stick standing straight up.
  • Place the cookies in a large resealable plastic bag and roll with a rolling pin to crush. Set aside.
  • In a large saucepan over low heat, combine the sugar, buttermilk, butter, baking soda, and vanilla and bring just to a boil, stirring constantly. Attach a candy thermometer to the pan, and continue to boil and stir until the mixture reaches 238 degrees F, 15 to 17 minutes. Remove the pan from the heat.
  • Dip each apple, one at a time, immediately into the caramel, leaving a 1/4-inch ring of green by the stick, and return the apple to the baking sheet. If the caramel starts to solidify while you are dipping apples, stir in heavy cream, a few drops at a time, until the caramel reaches a spreadable consistency.
  • After all the apples have been dipped, lightly sprinkle them with sea salt. Allow the caramel to set, about 5 minutes.
  • Meanwhile, in a microwave-safe bowl, microwave the white chocolate chips on high in 30-second intervals, stirring until melted. Dip each apple into the melted white chocolate, leaving a 1/4-inch ring of caramel exposed. Immediately dip the white chocolate-covered caramel apple in a layer of crushed cookie topping, leaving 1/4 inch of the white chocolate exposed.

6 wooden pop sticks
6 small Gala apples
1 package (14 ounces) caramels
2 tablespoons 2% milk
20 Oreo cookies, coarsely crushed
1 package (10 ounces) dark chocolate chips
2 tablespoons shortening

Steps:

  • Insert pop sticks into tops of apples. Place caramels and milk in a small saucepan; heat and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Dip apples in caramel mixture, coating completely. Place on a waxed paper-lined baking sheet; let stand until set, about 10 minutes., Place crushed cookies in a shallow bowl. In top of a double boiler or a metal bowl over hot water, melt chocolate chips and shortening; stir until smooth. Dip apples in chocolate mixture, allowing excess to drip off; dip in cookies, rolling to coat. Return to baking sheet; refrigerate until set, about 15 minutes. Cut into wedges to serve.

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups old-fashioned oats

1 egg
2 tablespoons milk
3/4 teaspoon vanilla
2 baking apples, peeled, chopped
20 caramels, unwrapped
2 tablespoons water

Steps:

  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt with whisk; stir in oats. In large bowl, beat butter and brown sugar with electric mixer on medium speed until creamy. Add egg, milk and vanilla; beat 2 minutes or until light and fluffy. On low speed, beat in flour mixture until blended. Stir in apples.
  • Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 14 minutes or until golden. Remove from cookie sheets to cooling racks; cool completely.

8 medium apples, washed and well dried
1 1/2 sticks (12 tablespoons) unsalted butter
2 cups packed dark brown sugar
One 14-ounce can sweetened condensed milk
1/2 cup light corn syrup
1/4 cup honey
1/2 teaspoon ground cinnamon
Pinch salt
Suggested toppings: chopped nuts, crushed pretzels, sprinkles, mini chocolate chips, mini candy-coated chocolates, toasted coconut flakes

Steps:

  • Line a baking sheet with a silicone baking mat or wax paper. Place the ice pop sticks into the stem ends of the apples and place on the prepared baking sheet.
  • In a heavy medium pot over medium heat, melt the butter and then stir in the brown sugar until completely combined. Whisk in the sweetened condensed milk, corn syrup, honey, cinnamon and salt until smooth.
  • Bring the mixture to a simmer and cook, stirring occasionally with a rubber spatula, until the temperature registers 238 degrees F on a candy thermometer. Remove from the heat and let the caramel cool for about 2 minutes.
  • Holding an ice pop stick, carefully dip an apple in the caramel up to the stem, then roll in the desired toppings and place on the prepared baking sheet. Repeat with the remaining apples. Chill the apples until the caramel and toppings are set, at least 1 hour and up to overnight.

Steps:

  • Wash apples, then dry completely. (Note: In order for the caramel sauce to stick to the apples, the apples need to be well chilled before washing, drying and dipping in the caramel sauce.)
  • Insert wooden pop stick into stem end of each apple. Cook caramels and water in saucepan on medium-low heat until caramels are completely melted, stirring frequently.
  • Dip apples, 1 at time, in caramel, then spoon enough of the remaining caramel over apple until coated. Roll in chopped cookies, pressing cookies gently into caramel to secure. Place on waxed paper-covered baking sheet; let stand 25 min. or until caramel is firm.

Steps:
