3 tablespoons butter
¼ cup heavy cream
1 teaspoon vanilla extract
3 tablespoons peanut butter, or to taste
2 cups confectioners' sugar

Steps:

  • Combine brown sugar, butter, cream, vanilla, and peanut butter in a large sauce pan. Bring to a boil over medium-high heat, stirring frequently. Remove from heat and add confectioners' sugar and mix well. Pour over a cooled cake and spread frosting quickly.

Love Oreo™ cookies and Reese's™ Peanut Butter Cups™ but can't pick your favorite? Have both in this over-the-top chocolate pudding cake layered with cookies and cream-peanut butter frosting and topped with mountains of Oreo™ cookies and Peanut Butter Cups™.

1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
Water, vegetable oil and eggs called for on cake mix box
1 box (3.4 oz) Jell-O™ chocolate-flavor instant pudding & pie filling mix
2 cups Betty Crocker™ Rich & Creamy vanilla frosting (from two 16-oz containers)
1/2 cup creamy peanut butter
8 Oreo chocolate sandwich cookies, coarsely chopped (1 cup)
Oreo chocolate sandwich cookies, Oreo mini chocolate sandwich cookies
Reese's Peanut Butter Cups™, unwrapped, and Reese's™ Peanut Butter Cups™ miniatures, unwrapped
1/3 cup chocolate fudge sauce
2 tablespoons creamy peanut butter

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of three 8-inch round cake pans with cooking spray.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour 1 2/3 cups batter in each pan.
  • Bake 20 to 24 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • In large bowl, beat vanilla frosting and 1/2 cup peanut butter with spoon until well blended. Stir in 1 cup crushed cookies until blended.
  • Place one cake layer on serving plate. Spread 3/4 cup frosting on top; top with second cake layer. Spread 3/4 cup frosting on top; top with third cake layer. Spread remaining frosting on top, mounding frosting in center. Refrigerate 30 minutes.
  • When ready to serve, top cake with Decorations, mounding in center. (See photo as guide.)
  • In small microwavable bowl, microwave chocolate fudge sauce uncovered on High 10 to 30 seconds or until thin enough to drizzle. Drizzle warmed sauce over cake. In another small microwavable bowl, microwave 2 tablespoons peanut butter uncovered on High in 10-second intervals until thin enough to drizzle. Drizzle warm peanut butter over cake. Store any remaining cake loosely covered in refrigerator.

Stuffed Peanut Butter Cupcakes with Swirled Peanut Butter Frosting image

25 soft caramel candies, such as Kraft Classic Caramels, unwrapped
1/4 cup heavy cream
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
1 1/4 cups granulated sugar
3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
1 teaspoon vanilla extract
3 eggs, at room temperature
1/2 cup creamy peanut butter
1/2 cup (1 stick) unsalted butter, at room temperature
4 cups powdered sugar
1/4 cup whole milk, at room temperature

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a 12 cup muffin tin with paper liners. Set aside.
  • For the filling: In a small, heavy saucepan, combine the caramel candies and heavy cream over low heat. Cook, stirring occasionally, until the candies have melted and the mixture is smooth, about 10 minutes. Set aside to cool slightly.
  • For the cupcakes: In a medium bowl, whisk together the flour, baking powder and salt.
  • In a stand mixer fitted with the paddle attachment, beat the granulated sugar and butter on high speed until light and fluffy, 2 to 3 minutes. Reduce the speed to medium and beat in the vanilla and eggs. With the machine running, in batches, gradually add the flour mixture to form a thick batter. Beat in the peanut butter.
  • Place 3 tablespoons of batter in the bottom of each cupcake liner. Top with 1 tablespoon of the caramel mixture. Add 1/4 cup of batter on top of the caramel mixture.
  • Bake for 23 to 25 minutes until a cake tester inserted into the center of the cupcakes comes out with moist crumbs. Cool for 5 minutes. Remove the cupcakes from the muffin tin and cool completely on a wire rack, about 1 hour (center of cupcakes will fall during cooling).
  • For the frosting: In a medium bowl, using an electric mixer, beat the butter until light and smooth. Beat in the powdered sugar and milk until smooth and creamy. Using a rubber spatula, fold in the peanut butter until swirls of peanut butter form throughout the frosting.
  • Place the frosting in a piping bag and top the cupcakes or use a small spatula to frost the cupcakes.

Adapted from a Hershey's recipe, this heavenly concoction starts on the stove-top and ends with countless rave reviews. It has made me famous amongst co-workers and friends! I usually pair it with a buttery Betty Crocker cake mix and then top it off with chocolate curls or drizzled chocolate syrup which has been cut through for a marbled effect.

1 cup granulated sugar
1/2 cup creamy peanut butter
1/2 cup margarine, soft
1 teaspoon vanilla

  • Stir flour into milk.
  • Cook on low heat in a small saucepan until boiling, stirring constantly.
  • Transfer to a small bowl.
  • Cover with plastic wrap and let cool on the counter-top for 30 minutes.

One of my all time favorite desserts is a chocolate cake with peanut butter frosting. My Mom clipped this recipe out of her local newspaper for me to try. I haven't made it yet, but I hope to soon. As written it should frost a 2 layer cake.

2 tablespoons light corn syrup
1 tablespoon margarine
1 cup peanut butter

The fudgy texture of brownies makes a perfect base for peanut butter and a fluffy chocolate topping. You can use a different chocolate frosting or glaze for the top layer, depending on what ingredients you have on hand.

1 cup/225 grams unsalted butter (2 sticks)
1/3 cup/30 grams unsweetened cocoa powder
2 cups/400 grams granulated sugar
1 1/2 cups/190 grams all-purpose flour

4 large eggs
1 teaspoon pure vanilla extract
1 (16-ounce/455 gram) jar creamy peanut butter

Steps:

  • Prepare the brownies: Heat the oven to 350 degrees. Coat a 9-by-13-inch pan lightly with cooking spray and line it with parchment paper, leaving a 2-inch overhang on the two long sides.
  • In a small saucepan, heat the butter and cocoa over low heat until the butter melts, about 5 minutes. Whisk to combine then set aside to cool, 5 minutes.
  • In a stand mixer fitted with the paddle attachment, combine the granulated sugar, flour and salt. Add the butter mixture and beat on medium speed until well blended, 1 to 2 minutes. Add the eggs one by one, incorporating each before adding the next, then add the vanilla and mix until combined.

  • Prepare the topping: Add the peanut butter to a microwave-safe bowl and microwave until softened, about 15 seconds. Stir it well to distribute heat evenly then spread it in an even layer on top of the brownies. Freeze the brownies for at least 30 minutes.
  • Prepare the frosting: In a medium saucepan, melt the butter and marshmallows over medium heat, stirring often, until both are melted and no lumps remain, about 5 minutes. Add the confectioners' sugar, milk and cocoa, and whisk until smooth, about 2 minutes.
  • Spread the frosting over the peanut butter layer and freeze for 30 minutes.
  • Remove the brownies from the pan: First, cut the brownies away from the pan edge on both short sides, then lift them out using the parchment paper handles. Cut into 24 squares. Keep refrigerated.
