1 (4 pound) whole chicken
½ cup chopped sweet pickle
1 cup mayonnaise
1 (8 ounce) package cream cheese
1 (10.75 ounce) can condensed cream of mushroom soup
2 (.25 ounce) envelopes unflavored gelatin

Steps:

  • In a large pot, boil chicken until done, drain and cool. Remove skin and bones and chop meat into small pieces. In a bowl, combine chicken, pickles and mayonnaise.
  • In a saucepan, heat soup and gelatin until gelatin dissolves. Remove from heat and add cream cheese. Stir until smooth.
  • Add chicken, pickles and mayonnaise to cream cheese mixture and mix until smooth. Pour into a greased mold and chill until firm.

3 ounces cherry gelatin
3/4 cup boiling water
16 ounces whole berry cranberry sauce
1 orange, peeled, sectioned, chopped and drained
1/2 cup finely chopped apple
1/2 cup chopped pecans
2 tablespoons sour cream
2 tablespoons mayonnaise

Steps:

  • In large bowl, combine gelatin and boiling water; stir until gelatin dissolves (about 2 minutes).
  • Add cranberry sauce, stirring until blended.
  • Chill until the consistency of unbeaten egg white.
  • Fold in orange, apple and pecans.
  • Spoon into 6 lightly oiled custard cups or mold.
  • Cover and chill until firm.
  • Unmold onto lettuce leaves.
  • Dressing:.
  • In small bowl, combine sour cream and mayonnaise. Serve along side.

2 split (1 whole) chicken breasts, bone in, skin on (1 1/2 pounds)
Good olive oil
Kosher salt and freshly ground black pepper
1/2 cup pecan halves
1/2 cup walnuts halves
1/2 cup good mayonnaise
1/2 cup sour cream
1 tablespoon chopped fresh tarragon leaves, divided
1 cup green grapes, cut in 1/2
Lettuce leaves, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts, skin side up, on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside until cool.
  • When the chicken is cool, remove meat from the bones and discard the skin and bones. Cut the chicken into a 3/4-inch dice.
  • Meanwhile, place the pecans and walnuts on a separate sheet pan and toast in the oven for 7 to 8 minutes until golden. Set aside to cool.
  • For the dressing, mix together the mayonnaise, sour cream, 2 teaspoons salt and 1/2 teaspoon pepper. Fold in half the chopped tarragon leaves.
  • Place the diced chicken in a bowl, add the pecans, walnuts and grapes. Pour the dressing over the chicken and toss well. Sprinkle the remaining chopped tarragon leaves on top, and serve on a bed of lettuce leaves.

1 small package orange flavored gelatin*
1 small package lemon flavored gelatin*
2 1/2 cups boiling water
1 small can pineapple bits with juice
1/2 cup toasted, chopped pecans
1 can whole cranberry sauce

Steps:

  • Sprinkle the gelatins in a 9 by 13 glass-baking dish and slowly stir in the boiling water. Cool to room temperature, then refrigerate approximately 30 minutes or just until gelatin begins to set. (If the gelatin sets, you won't be able to stir in the goodies.)
  • Meanwhile, in a medium size bowl, combine the canned pineapple and its juice, with the pecans and the whole cranberry sauce. Add mixture to slightly thickened gelatin and stir until thoroughly combined. Return to refrigerator until firmly set. Cover with plastic wrap until ready to serve.
  • *Don't substitute with low-sugar or sugar-free. Neither will set properly.
