2 tablespoons olive oil
1/2 cup chopped red onion
1 small orange bell pepper, 1/2-inch diced
2 tablespoons unsalted butter
4 cups corn (Fresh kernels cut from 5 ears yellow or white corn)
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 tablespoons minced fresh chives (or all 3) or 2 tablespoons minced fresh parsley leaves (or all 3)

Steps:

  • Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
  • Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.

2 cups sweet kernel corn
¾ cup diced tomato
½ cup diced orange bell pepper
½ cup chopped celery
¼ cup diced red onion
1 clove garlic, minced
½ cup prepared ranch salad dressing
½ cup chopped fresh cilantro, divided

Steps:

  • Mix corn, tomato, bell pepper, celery, red onion, and garlic in a bowl. Pour ranch dressing over the corn mixture; stir. Fold all but 1 tablespoon cilantro into the corn mixture. Sprinkle reserved cilantro over the salad to serve.

16 ounces quick couscous or 12 ounces israeli couscous
3 lbs frozen corn, thawed and cooked,let cool.
2 (12 ounce) cans black beans, drained and rinsed in cold water
8 ounces chopped red onions
3 ounces chopped green peppers
3 ounces chopped yellow peppers
3 ounces chopped orange bell peppers
3 ounces chopped red peppers
3 small zucchini, halved and thinly sliced- use a mandoline
1 cup kalamata olive, pitted and sliced
1 1/2 cups olive oil
1/4 cup white wine vinegar
1/4 cup white balsamic vinegar
2 1/2 teaspoons cumin
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme
1 tablespoon chopped fresh marjoram

Steps:

  • if using quick cook couscous, cook 2 boxes according to package directions (boil water, add couscous, remove from heat cover for 5 minutes).
  • if using israeli couscous, steam or boil for 13 minutes, remove from heat.
  • if boiling, drain.
  • in a huge bowl add couscous, corn, and the rest of the salad ingredients.
  • mix dressing ingredients together, add to salad, toss, cover, and refrigerate 1 hour or more.
  • serve at room temperature.

4 cups corn (frozen or canned drained)
2 cups cucumbers (diced)
1 celery rib
1 onion (medium diced)
1/2 green pepper (or red diced)
1 tomatoes (skinned, seeded, diced, and dried on paper towel)
1 cup low fat Greek yogurt
3/4 cup light mayonnaise
1 teaspoon mustard powder
1 -2 tablespoon sugar
1/4 cup vinegar (I use apple cider vinegar)
1 teaspoon season salt
1 teaspoon garlic powder

Steps:

  • Chop all veggies to the size of the corn kernels.
  • Or as small as you desire.
  • Put in bowl.
  • Refrigerate.
  • Mix dressing in separate bowl.
  • Refrigerate.
  • Before serving, drain veggie bowl of "veggie" water.
  • Add dressing.
  • Serve.

This is my rendition of another Corn Salad recipe. I made a error in the original recipe, but fixed it by using an additional ingredient. It was a hit!

5 c corn kernels, frozen
1 red bell pepper-chopped
1 green bell pepper-chopped
1 pt cherry tomatoes-cut in half
1 medium sized canned olives-chopped
DRESSING
1/4 c red wine vinegar
1 Tbsp brown sugar
2 Tbsp vegetable oil
1/2 tsp dried oregano
1/4 tsp salt and pepper

  • 1. In a large reseable container, Combined first 5 ingrediets.
  • 2. In a seperate small bowl, wisk together all Dressing ingriedients. Pour Dressing over Corn Mixture. Serve at room temperure or chilled. Chilled ovenight is best,that way it can marinate! Leftovers need to be Refridgerated.

8 ears fresh corn or one 16-ounce package frozen whole kernel corn
1/2 cup chopped green pepper
2 tablespoons chopped red onion
1 tablespoon snipped parsley
1/3 cup mayonnaise
2 tablespoons dairy sour cream
1/2 teaspoon instant beef bouillon granules
1 tablespoon red wine vinegar
1/4 teaspoon salt
dash pepper
4 slices bacon
Bibb lettuce leaves (optional)

Steps:

  • If using fresh corn, with sharp knife, cut corn from cob. Measure 3 cups. In saucepan cook kernels, covered, in small amount of boiling, salted water for 6 to 8 minutes or till just tender. (Or cook the frozen corn according to package directions.) Drain; cool. In a large bowl combine cooled corn, green pepper, onion and parsley. In small bowl combine mayonnaise and sour cream. Dissolve the beef bouillon granules in red wine vinegar; stir into the mayonnaise mixture along with salt and pepper. Toss gently with corn mixture to coat. Cover and chill thoroughly. Just before serving, cook bacon till crisp; drain and crumble. Add bacon to corn mixture and toss. If desired, serve individual portions atop lettuce.

One small bag of frozen sweet corn
1/2 lb. fresh green beans
1/2 fresh sweet red pepper, chopped
1/2 fresh sweet yellow pepper, chopped
1/2 fresh sweet orange pepper, chopped
1/2 small red onion, chopped
1/4-1/2 c. extra virgin olive oil
1/4-1/2 c. Seasoned rice wine vinegar
Salt and pepper to taste

Steps:

  • Rinse and thaw corn in small colander, set aside until drained thoroughly. Snap ends off green beans and snap into bite size pieces. Put all vegetables into salad bowl, drizzle with olive oil and rice wine vinegar, add salt and pepper to taste, and serve immediately. This can also be made a day ahead, refrigerated, then stirred and served.

1/4 cup white vinegar
2 teaspoons salt
1 teaspoon pepper
1 teaspoon celery seed
1 teaspoon dry mustard

Steps:

  • Toss together vegetables in a large bowl; set aside. Combine remaining ingredients in a separate bowl; pour over vegetables, stirring to coat. Cover and refrigerate overnight; stir just before serving. Tip: Make a ho-hum salad special with the right garnish. Add a sprinkle of fresh chives or basil for flavor and sunflower kernels or homemade croutons for extra texture.
